18 NATURAL PARK OF LESSINIA Located on the north east of Verona, in Veneto, it is a very important area from environmental, social and economical point of view. PRODUCTS The main activities conduced in the area are: Pasture: cows for the production of milk and cheese (Monte Veronese); Agriculture: chestnut are a very important culture, for the production of fruit and second handled products; 18

21 GARDA OLIVE OIL (PDO) the cultivation of olive tree in the region of Garda lake started during the roman empire Garda olive oil is the oil produced most northerly in the world in this region the olive trees are not damaged by typical enemies (insects) that live in the olive groves ORGANOLEPTIC CHARACTERISTICS Colour: green-gold intense for the high content of clorophyll Parfume: delicate, fruity with the sensation of sweet almond Flavor: fruity (artichoke, almond, aromatic herbs) and some notes of bitter and spicy 21
