2 WELCOME The aroma of freshly baked bread, the sensation of tearing through a hearty crust to reach the soft fluffy texture inside, smothered in butter, filled with fresh meats or simply dunked to mop up a rich sauce or soup these are all the things which make bread sensational! We believe that this bread and butter product has so much more to offer and that s why we ve made it our mission to develop one of the most comprehensive foodservice ranges of breads available. With over 100 varieties of Artisan breads from around the world Cumbria, Yorkshire, France, Spain, Italy, Lebanon Whether it s restaurant bread, a sharing bread, a sandwich carrier or a breakfast product you want, somewhere in our range you ll find just what you want. Freshly frozen convenience All of our breads have been carefully selected not just for taste and appearance but also because they benefit from the convenience of a frozen product whilst defrosting to keep their crust, density and texture. Blast frozen as soon as they are cooled from the oven, all these breads are as fresh as the day they were baked. Some like it hot With a mixture of fully baked and par-baked products you have even more choice to suit your needs. The convenience of a ready to bake product without the need for rising means you can entice your customers with the smells and warmth of freshly baked bread without the hassle. MORNING GOODS The perfect breakfast or elevenses range of products, frozen for convenience to reduce wastage and part baked to allow you to serve fresh, warm product daily or ready baked thaw and serve products. Butter Brioche Loaf A genuine French brioche made with butter, eggs, sugar and crème fraiche. Delicious sliced and toasted as a Breakfast item or used as a recipe ingredient. Shown below as a Bread & Butter Pudding made with free range eggs, cream, cinnamon, currants and sugar poured over sliced Brioche and baked in a Cazuela. Butter Croissant Available both fully baked or par-baked made with a high quantity of butter to deliver a really rich buttery taste. Mini Viennois Selection A selection of mini favourites including Croissant, Pain au Chocolat and Pain aux Raisin. Simply thaw and serve Pain au Chocolat Pre-proved chocolate roll, laminated yeast dough with butter and two chocolate bars ready to melt when baked. Butter Brioche Loaf

3 Artisan Breads RESTAURANT BREADS Perfect for a sharing table centre piece, baked in Cumbria using locally milled flour. The range includes an Omega Wholemeal, Deli Rye, Fruit & Nut Loaf, Large Rustica and a sourdough Pain Artisan. Cobblestone Bread Rolls Another versatile and delicious bread selection. Four varieties of petit cobbles in one box in sheets of 56. Simply break off the number required whilst frozen. They are perfect for both hot and cold serving on buffets. Shown here with our hand formed 2oz beef patties. Pave Garde Forestiere An extremely large [1900gm] and long cutting loaf. Made from wheat, rye and toasted malt flour; enriched with soy, sunflower and sesame seed; baked on a stone and flour dusted to finish. A bread of substance and flavour, impressive on display for buffets, with a cheeseboard or on servery counters. Serve as a basket assortment for dinner accompaniment. Serve two as an accompaniment to soups and starters. Shown with various cold fillings. Artesano Tallo A superbly versatile stone baked Spanish Baguette of the chapatti style bread which has an open crumb and Ciabatta type crust. It lends itself to most filling combinations, both hot and cold. Shown served with our fully cooked meatballs, tomato salsa and grated mozzarella melted in the oven for 5 mins. Split lengthwise, buttered and filled then cut in half on the diagonal with the two halves served side by side with a salad garnish you have a perfect, delicate and light Ladies Lunch! Cut in half diagonally and serve with a cheese or pâté ploughman s or alternatively serve half a Tallo with a starter. Split horizontally and either fill as a dainty sandwich or top for an open version. Split and top with cooked chicken, chorizo or prawns, add grated cheese or a thick Mornay sauce and bake in an oven for 5 mins for a perfect hot buffet item. Shown split and topped as petit open sandwiches for a buffet or conference. Cut half inch slices on the diagonal and toast in the oven for Bruschetta or spread with toppings and decorate for delicious but economical canapés. Top half inch slices with grated cheese and oven bake to float on top of French Onion or other soups. Cut in long thin diagonal slices for use as a Crostini or to accompany pâté, humus and other starters. Shown as a bread basket selection for the dinner table or buffet.

4 RESTAURANT BREADS Mini Tin Loaves Attractive single portion rolls baked in miniature loaf tins available in white, malted wheat and cornbread. Fully baked to just defrost and serve as a dinner roll, with soup, a cheeseboard or ploughman s. Mediterranean Medley This attractive selection of Continental style bread is a wonderful compliment to many meals. Fully baked defrost and serve, the medley consists of twelve of each (48 in total) of the following: Tomato knot with sesame seed topping, Green Olive & Pesto triangles with pesto topping, Cheese & Herb Urchins with herb topping, Pumpkin bread mini loaf rolled in pumpkin seeds. Traditional Bakers Basket An excellent dinner roll. An assorted case including Urchin roll with semolina topped, malted Brioche with mixed seed top, white Knot with poppy seed top and mini Wholemeal loaf with cracked wheat top. Batonnet aux Raisin et Noisettes A perfect accompaniment for cheese. Very healthy and nutritious. 10% raisins and hazelnuts, perfumed with cinnamon. Artisanal stone oven baked and flour dusted. Organic Bloomers An excellent Deli loaf or cut into chunks or slices for a bread basket. Made with organic flour and lightly flour dusted. Petit Pain and Baguettes The outstanding quality of our large range of Vive le Pain part baked French bread has made it a firm favourite with our customers. Experience the light crust and delicious crumb texture only achieved by using French flour and technique. Rustic Rolls Our brown or white square rustic rolls are par-baked ready for baking off. Perfect for sandwiches, with soup or a ploughman s. We also have a mini rustic selection. Burger Buns and Baps Our Fairway branded burger buns and baps have regularly satisfied literally millions of consumers over the last twenty five years. 5 SANDWICH BREADS Piegata A delicious and visually appealing Italian folded bread made with olive oil and having a soft texture. Ideal for both hot and cold sandwiches it gives good plate coverage and eye appeal. It works well with traditional, continental or contemporary fillings. Shown with a variety of hot a cold fillings it can be filled and heated through an oven or a Panini grill. Ciabatta A selection of Ciabattas all with a delicious open textured crumb. Our Ciabatta rolls are perfect for hot or cold Mediterranean style sandwiches while the large ciabatta loaves with or without olives are perfect to bake off and cut into two/three for sandwiches or even smaller for a bread basket. Continental A few slices of Parma or Serrano ham, topped with sliced Emmental and Sunblush tomatoes. (serve hot or cold). Traditional Sliced Chicken breast, cooked bacon, sliced beef tomato and mayonnaise. Contemporary Sliced avocado, grated carrot, sliced tomato and mayo blended with red pesto. Focaccia Plain or with Sun Dried Tomatoes our Focaccias are made with olive oil and the highest quality herbs, baked in a tray and cut into sizeable sandwich squares. A rich flavour and soft texture particularly lending itself to Mediterranean style fillings such as salami, grilled peppers, mozzarella, basil and pesto. Barra Gallega Media A Spanish half baguette with a thin, crispy crust and a light open crumb which has been baked on stone and finished with a flour dusting. Makes a delicious upmarket sandwich and particularly lends itself to cold Mediterranean style fillings. Swedish Breads Low fat flatbreads with a delicious, distinctive flavour and soft texture. Serve topped and grilled or use two to create a healthy sandwich with a difference. Round or square varieties available. Slice through then quarter as a base for hot or cold canapés. Serve as an accompaniment to any continental style starter or main course, cut into strips, squares or triangles it will compliment with its rich flavour, colour and texture. Split and fill with Salami Milano, sliced Mozzarella and sliced beef tomatoes, then serve either hot through an oven or Panini grill, or cold with a glass of Montepulciano or a nicely chilled Frascati Italian Heaven! For buffets, split in half and cover each with slices of Mozzarella or Provolone cheese, cut into four or eight and decorate with sliced olives, anchovies and capers and melt through the oven.

6 Sandwich BREADS Panini Our plain and herb Paninis are available both par-baked and ready baked for your convenience. Designed for filling and toasting they make a light carrier for a host of fillings with a melting eggshell crust. Pave Bread These square, pre-sliced Pave rolls are the ultimate in convenience and versatility. The extra triangles cross cut across the top makes it easy to cut into triangles for attractive presentation or smaller portions. Filled with sliced chicken breast, crispy bacon, beefsteak tomatoes and rocket leaves for an contemporary take on a club sandwich. Flaguette A delicious stone baked round flat French bap with an open texture, crisp but tender crust, distinctive dimples and a flour dusting. Full of flavour and can turn the simple into a culinary delight! Ideal for all hot and cold sandwiches and very popular as a quality 'Burger' presentation. Shown served deep filled. Torpedo Rolls Large (approx. 22cm) sandwich rolls of soft bread which produce very substantial and satisfying sandwiches. Hot Filled with our 100% hand formed beef burgers and topped with Blue Cheese and Red onion. Sliced chicken breast, crispy bacon, sliced Mozzarella and spicy salsa. Chili and Ginger chicken fillet goujons on sliced beefsteak tomatoes, leaves and topped with garlic mayo. Bagels Our vast range of authentic Bagels is probably the best you will have tasted. They remain moist in the centre and are softer than the supermarket versions and can be warmed through the oven for a crispier finish. A number of convenient mixed boxes are available as well as numerous single variety packs. Cold Humus, grated carrot, sliced black or green olives and rocket leaves. Sliced Pastrami, sliced dill cucumber topped with horseradish crème fraiche. 7 EVERY DAY BREADS English Breakfast Muffin The English Breakfast Muffin became a popular and fashionable bread during the 18th Century. It is generally either used as part of an English breakfast or split and toasted for Afternoon Teas with generous application of fine English Butter! Toast our pre-sliced Muffin and top with scrambled egg and rashers of our crispy streaky bacon for an all-day breakfast snack. Perfect for Eggs Benedict using our chilled or frozen smoked salmon, free range eggs and delicious ready-made Hollandaise sauce. Eggs Florentine Split, toast & butter our English Muffin and top with wilted spinach, poached free range eggs and finish with a nap of Mornay Sauce. Naan & PiTTa Products Authentic ethnic breads such as our various sizes and shapes of Naan or Garlic bread are an essential accompaniment to modern eating styles and can add that extra profit and turnover which you are looking for. Mini Pittas A delightful mini Pitta cocktail bite ideal for buffets to be split and filled with hot or cold fillings for something really different. Sliced Sandwich Loaves Fletchers sliced sandwich loaves are blast frozen as soon as they are cooled from the oven and have been sliced and wrapped. Complete convenience and assured freshness every time. Bloomers A Bloomer loaf used to have two sloping wasteful ends but not these. Baked in special tins, the Bloomers are the same profile the whole length of the loaf giving it full slices and two crusts. How s that for portion control?

8 Introducing Panesco One of our Bread Heroes Panesco was formed in Belgium on February 14th 1990 as a private venture to source Europe's highest quality bakery products for supply to small in-store retail bake-off operations and high street bakeries. The founder Marc Messelis had recognised a growing need for more convenience within this sector and very appropriately, considering his "love" for quality bread, chose Valentines Day to launch his new company. 21 years later Panesco is proud to be a member of La Lorraine, the largest family owned bakery group in Belgium. The total group turnover is now in excess of 400M with interests including flour milling, as well as fresh and frozen bakery production. Roughly half of the Panesco range of 270 frozen items is now produced in-house, whilst half is still sourced throughout Europe. The emphasis as always is on quality and authenticity, whether we are talking about breads, viennoiserie, savouries, sweets, buffet items or ice cream. Over 20 European countries are supplied, with the UK being in the top three on turnover. The main market here is food service, for which an exciting range has been developed over the years to meet the growing demand for unusual speciality breads.
