1 Green Actin Fund Prject Prpsal Mushrm Prductin frm Used Cffee Grunds n Campus Prject Prpser: Matt DeCap, Jseph Hng, Anastasia Slugh Advisr: Dr. Rhnda Janke, Farm Manager: Claytn Hlthuse Intrductin Fr Sustainable Water and Sanitatin Systems class in Fall 2012, we created a prpsal t grw mushrms in cffee grunds frm Radina s n campus at the Leadership Studies building. We have tested varius strains f mushrms t see what strains grw best in what substrates. We wuld like t bring the mushrm prductin t the KSU Student Farm s that they are able t grw mushrms and sell them at the Farmer s Market. The picture t the right shws Jseph Hng with varius different types f mushrms grwing in cffee grunds cmbined with ther substrates. We have determined gd mushrm types and substrates fr mushrm prductin and nw we are ready t get this institutinalized at KSU thrugh the Student Farm. Prject Descriptin We will grw mushrms frm cffee grunds gathered frm ur cmmunity and be able t shw the prcess t Student Farm Club, SEA, and any ther interested grups. The Student Farm Club can sell mushrms at the Farmer s Market. We will prduce fd and fertilizer frm cffee grunds that are currently getting shipped t the landfill. Dr. Janke s students will have mre pprtunities t learn different types f fd prductin. Grwing mushrms frm cffee grunds and ther plant materials is especially beneficial fr urban areas that need lcal fd prductin. Sustainability and Envirnmental Benefits t Kansas State University We will prduce fd frm what is cnsidered a waste prduct, then we will cmpst what is left and prduce fertilizer. Instead f paying t send these materials t the landfill,

2 we will get nutritius fd and valuable fertilizer. We must restre the nutrient cycles that we have destryed by landfilling fd and rganic waste. We will decrease waste sent t landfill, cnserving space in the landfill. Energy will be saved by dealing with the rganic materials lcally. Students will be empwered with skills that will help them t save resurces and reduce waste in the future. The lcally prduced, nutritius fd will help feed the cmmunity thrugh partnerships with Ecumenical Campus Ministries Real Fd Lunch Prgram and sale at Farmer s Markets. Student Invlvement in Prject Implementatin Students in hrticulture will learn many techniques f hw t grw mushrms. KSU students will see hw what we ften cnsider waste can still be used fr many, many things. Students wh visit cffee shps will learn mre abut prject thrugh ur educatinal materials. Radina s in Leadership Studies still separates cffee grunds, but we d nt have the funds t keep mushrm prductin ging full time. This grant will help us prduce mre mushrms s that all f the wrkers at cffee shps participating in this prgram will knw that their used cffee grunds are ging t prduce fd. This knwledge will spread thrugh ur student bdy as lng as we keep up the mushrm prductin. Many students wrk at cffee shps in the cmmunity as well, and there has been an interest frm student emplyees at Arrw Cffee C. t start prducing mushrms frm their spent cffee grunds as well. We will wrk with many different peple t spread awareness abut the savings incurred frm reducing landfill waste and abut the benefits f mushrm prductin and cmpsting. Our cllabratin with all interested cffee shps in Manhattan will frm pwerful sustainability netwrks needed t slve waste issues in ur cmmunity. There will be students picking up the cffee grunds at a regular interval (3x/week). They will als learn abut all f the different aspects f mushrm prductin frm Jseph Hng, wh has years experience with cultivating mushrms and ther crps n the Student Farm. Benefits t Kansas State Student Bdy Mre lcally prduced fd will reduce energy cnsumptin f fd system. Students will learn very valuable skills in mushrm and cmpst prductin. Csts with dealing with waste in ur cmmunity will decrease thrugh lcal, nvel rganic waste management. The Student Farm can sell mushrms and fertilizer t cmmunity. The Student Farm will have

3 mre incme surces s that it will be able t cntinue prviding great educatinal experiences t future students. The nutrients and rganic matter in the cffee grunds will eventually be cmpsted and used t return vitality and health t the sil in ur cmmunity. This will help the sil supprt mre plants and absrb mre rain water, reducing vulnerability t flding in ur cmmunity. Prject Administratin and Budget Dr. Rhnda Janke will be the prject administratr and will ensure the distributin f funds t the students perfrming the wrk f prject. There will be a farm manager (Claytn), tw student prject verseers (Matt and Jseph), and Student Farm wrkers led by Anastasia Slugh. There is an expected 15 weeks f wrk time (beginning f February t end f May). After this, it is hped that prfit frm the mushrm sales can further finance mushrm prductin fr the rest f the year. Matt and Je will vlunteer additinal hurs training students s that they will be able t take ver the mushrm prductin in fllwing semesters. 4 Dr. Rhnda Janke will ensure that all tasks are being accmplished. Matt will be in charge f wrking with Bill Spiegel, manager f the Recycling Center, t cllabrate with the staff s existing prgrams t pick up rganic waste frm dining centers n campus. Matt and Anastasia will wrk with ther cffee shps in the cmmunity t expand cllectin t as many lcatins as pssible. Matt and Anastasia will get many diverse students invlved thrugh the clubs Students fr Envirnmental Actin (SEA), Student Farm Club, Rtaract Club, Engineers Withut Brders, and Ecumenical Campus Ministries. Matt and Je will take charge f teaching the basics f mushrm prductin t all invlved. Je will be in charge f training Anastasia and crew t prduce mushrm spawn and learn prper sterilizatin techniques. Anastasia and the Farm Manager, Claytn, will transfer the mushrm spawns t the Student Farm Mushrm Prductin Area. Matt and Dr. Janke will cmpile all the infrmatin abut mushrm prductin and insights gained frm this prject int a fact sheet. Anastasia and Matt will wrk with SEA t create an educatinal vide abut the prject t share with the Manhattan cmmunity. We hpe t invlve interested students and cmmunity members at every step in the prcess s eventually Manhattan will have a knwledgable grup f peple cmmitted t making sure cffee grunds are nt sent t the landfill and instead used t their fullest. We hpe t prvide enugh training and educatinal materials t the KSU cmmunity s that the prject will cntinue fr many years int the future. 5 Additinal Infrmatin: Real Fd Lunch is an excellent prgram put n by Ecumenical Campus Ministries pen t anyne. Mstly students are invlved. Whever is interested picks up ingredients and cks a delicius healthy meal fr the cmmunity. Free will dnatins are accepted t help supprt future meals. The mushrms we prduce will help supprt future meals. The cmpst we prduce will fertilize the ECM s garden, making mre lcal fresh vegetables, fruits, and herbs available t the cmmunity. ECM and all wh patrnize the great Real Fd Lunch prgram will help t spread publicity abut hw we can grw mushrms frm used cffee grunds. This prject will have enrmus benefits fr the cmmunity and future KSU students wh want t eat mre lcal healthy fd and learn hw t prduce it in their cmmunity. Future Prject Expansin: We will cntinue t wrk t expand the number f cffee shps included in ur prject and the different types f mushrms we prduce. We will wrk with the Unin Renvatin team t demand cmpsting f all pst cnsumer rganic waste frm the Unin Fd Curt. We will wrk t sell mushrms and ther student farm prducts back t the campus cmmunity. The architects wrking n the Unin Renvatin prject said that students demanded lcal fd as ne f their tp pririties fr the new Student Unin Fd Curt. We aim t help students be able t meet this demand lng int the future.
