Teams UBC BBQ Championships and Open Polish BBQ Championships are held in 2 categories: the Professionals and the Amateurs. Amateur teams including underage members should be supervised by at least on adult person (supervisor). Each team competing in UBC BBQ Championships should include no more than 6 persons (counting the supervisor in case of teams of underage competitors). Amateur teams take part only in the national dish category where there are three winner teams chosen (first, second and third place). 3. Submission of applications and accommodation 2.1. Each team is required to give their name, contact address and email address.

2.2. Each team is obliged to send the application form to the address of Co-organizer Grzegorz Kazubski: grzegorz.kazubski@makro.pl (Polish teams fill in the application form in Polish while foreign teams in the English language) by 30 April 2015. 2.3. Each team has the right to select two members of the jury. 2.4. Polish Barbecue Association has the right to exclude a team from the contest. 4. Contact details for booking accommodation for the competition Dolina Charlotty accepts reservation applications from the teams of the Union of the Baltic Cities (UBC). The organizer reserves the right to allot accommodation for those teams themselves. The Organiser provides baskets (boxes) with the team number on them containing identical amount of products of the same quality for each team, i.e.: 3 kg of fish 5 portions of pork ribs 2 chickens of 1,200g minimum weight each 2 whole pork shoulders with bone and skin, but without shank and neck 1 kg parsley 5 heads of lettuce 6. Regulations Food containers may not include anything apart from the products listed above and lining. The lettuce and parsley are the only type of lining allowed. Sauces are not allowed as a side dish. The arrangement of food in a dish may not reveal the origin country of the team. 6 portions should be prepared: 6 containers of food for the jury to be able to assess them objectively a. National dish - freestyle b. Fish freestyle c. Ribs a portion of ribs must contain bones! d. Chicken a portion of chicken must contain white and dark meat e. Pork shoulder the dish may be cut, pulled and mixed before serving Teams are allowed to bring with them and use any products of their choice admitted for use by a relevant institution for food safety. At least 60% of the dish must be heated in the oven or grill before serving.

Accessories such as aluminium foil, skewers, etc., are allowed but may not be placed in the dish containers. It is allowed to use own spices. 7. Criteria of assessment by the jury: There are only 4 assessment criteria: a. The dish appearance makes up for 20% of the total mark b. The taste of the main component makes up for 50% of the total mark. c. Tenderness of the main component makes up for 20% of the total mark. d. The taste of the side dishes makes up for 10% of the total mark. e. A separate scheme for dessert assessment is applied: a. Appearance 20 % b. Taste 50 % c. Creativity 20 % d. Is it really a grilled dish? 10 % Dishes accompanied by other side dishes or decorative elements from those mentioned above are excluded from assessment and receive 0 points. The jury consists of 6 unbiased jurors. The highest and the lowest out of 6 marks is disregarded. Scale 1.0 10.0: 0.1-1.0 completely tasteless 1.1 2.0 rather charred or still raw 2.1 3.0 burnt very much or really undercooked 3.1 4.0 burnt much or undercooked 4.1 5.0 satisfactory 5.1 6.0 good 6.1 7.0 very good 7.1 8.0 delicious 8.1 9.0 exquisite 9.1 10.0 outstanding Marks are graded by 0.1 point. The scale is from 0.1 to 10.0 points. Fun Cup We encourage all teams to show off their good mood, sportsmanship and present beautiful decorations of their work spaces. These criteria are also assessed by jurors appointed by Polish Barbecue Association. Barbecue equipment and accessories Only wood, charcoal and pellets are allowed in the process of grilling. All equipment must comply with the latest safety regulations, which will be checked before the competition. Equipment is provided for teams that come a long way. Tables and benches. Each team receives 2 tables and 4 benches (beer garden style).

8. Electric energy /water supply Electric energy Electrical switchboards will be provided. Teams must bring plug boards and enough electrical cords (up top 50m). Electric power will be available for all teams*. The cords must be marked with the team s name. The administrator will not be held responsible for any damage caused by wrong connection of the equipment that belongs to the team to the energy source. In order to avoid overload, each team should connect only the necessary equipment to the energy source. If a team connects equipment that exceeds the capacity of the installation (see: energy sources), they will be devoid of electric power! The above also applies to faulty equipment. *Polish Barbecue Association will make every effort to provide a permanent supply of electric power. However, Polish Barbecue Association will not be held responsible for wrong operation of the electrical grid irrelevant of the cause. Therefore, may not be brought to justice or indicted. Submitting the application form is considered as acceptance of the above condition. Water (Only cold) Water supply is provided. Each team prepares their own space to wash hands. In order to do that, a water can with a tap, liquid soap dispenser and disposable towels will be provided. Special spaces for washing up will be provided as well. 9. Safety Preparing work spaces is scheduled for Friday. In the night from Friday to Saturday and from Saturday to Sunday (12 hours), the competition area will be supervised by security guards. However, the Administrator should not be held responsible for any damage or theft. To comply with the fire regulations, each team has to bring an attested fire extinguisher (at least 4kg) or a fire blanket. 10. Competition area Each team will be allotted a competition area of 5x6 metres. In case of bigger equipment, a larger space may be allotted. We will try to cater for all the needs, however, no team has the right to take a particular or bigger area. If a team does not bring their own tent or roofing, the organiser may provide such a stall (3x4metres) for them to put it up on their own at their earlier request. It is necessary to put up a roofing. It is not allowed to park transport vehicles near or at the competition area. There is a car park for the teams nearby. The team has to fence their competition area from visitors. Each team will be provided with the necessary materials to do so. Presentation All teams will have an opportunity to present themselves to the public by treating them to small snacks and grilled delicacies to enhance the barbecue party mood. The Administrator s sponsors will provide free of charge goods which will be put in the competition area. These products should revive the premises and create a cheerful atmosphere among the competitors and visitors alike. Sale of those products is not allowed. Teams provide music on their own. 11. Control Polish Barbecue Association will appoint an auditor who will check if all the basic regulations are obeyed. Therefore, teams must enable the auditor unlimited access. Teams have to show

or open all storage spaces such as fridges, boxes, vehicles, etc. at the auditor s request. Applying for and beginning the competition is understood as acceptance of the above condition. 12. Assessment Assessment will be carried out in compliance with the regulations of PBQA (Polish Barbecue Association). Teams will be provided with containers for the dishes for tasting by the jury on the day of the competition. Other containers are not allowed. It is also not allowed to put any labels or substances in the containers that may lead to the identification of the team. In case of any violation of the regulations or this ban, the chairman of the jury will disqualify the team. It is not allowed to use any pots and pans. Candidates for jurors may sign up through the PBQA website or by sending the application form to grzegorz.kazubski@makro.pl. The jurors will be selected by PBQA. Jurors holding certificates of training and juror s licenses are preferred. 13. Titles and prizes Summary of all marks will help choose the winner of the official title of UBC BBQ Champion 2015, UBC BBQ Amateur Champion and Polish BBQ Champion 2015. Moreover, winners in each of the 5 dishes will be chosen except for the Amateur category where three teams will be chosen only in the category of national dish. Each team and each participant will receive a diploma. The winners will receive diplomas, valuable cups and prize money. Fun Cup The team that receives the highest score for the mood they create will be awarded the Fun Cup. Only one winner will be chosen by the Polish Barbecue Association. Results and certificates The list of the results and certificates will be ready to collect in the competition office after the prize awarding ceremony! Media All teams and their members transfer to the Administrator and their partners their rights to the pictures, statements and sound materials for publication of thereof in print or mass media, in particular in the form of sound transmission, television or internet transmission for information and advertisement purposes. Many teams will be accompanied by representatives of television and radio stations as well as the press, which is pursuant to the assumptions of the event. We hereby request the teams to inform us about any media representatives whose attendance has been confirmed! This will enable us to put them on our media list and accredit them. Reporters that are not accredited will not be able to broadcast any coverage from the competition premises! Please send in any enquiries to the following address grzegorz.kazubski@makro.pl 15. Team sponsoring Team sponsoring and financing by patrons is usually possible only in the competition area. Thus, the General Convention of the Polish Barbecue Association made the following decision. Team presentation Teams may represent their sponsors in the competition area free of charge according to the following rules: - An area of 1m² may be allocated for a poster presenting the team sponsors free of charge. The area is limited to 1x1m. It is not possible to allocate an area of different size. - It is allowed to put the sponsors logos of maximum 15 x 15 cm on the teams clothes (Tshirts, caps, aprons) - The details of the display are given below. Possibilities of promotion and advertisement in the competition area (for team sponsors) - 2 posters of DIN A0 maximum (300,00 euro)

- Display of products on an immobile surface (1 m² 500,00 euro). It involves the display of products e.g., ketchup bottles on the table for the visitors or the display table. - Promotion, tasting products, giving samples, etc., (800,00 euro per campaign) Each team has to inform the Polish Barbecue Association about any planned advertising not later than 4 weeks before the competition. Advertising fees must be paid before the competition. Advertising campaigns that were not paid for are not allowed. All fees are paid in favour of the Polish Barbecue Association. After the competition, the teams will get back 25% of the fees paid for sponsoring from PBA. Any advertising campaigns conducted without informing the organiser will be removed from the competition area. If the removal of thereof is not possible, they will be covered. All advertising campaigns must be approved by the Polish Barbecue Association as sponsors have exclusive rights. Thank you for your understanding. Support/the latest news Administrator stipulates the right to introduce any changes to the conditions of participation and directives for the visitors if the changes are justified. All teams will be duly informed about such changes. All changes, especially those concerning the programme of the event, will be announced at www.bbq.charlotta.pl
