2 Entry forms may be picked up or dropped off at Hotline Press, at 1116 Austin St., Hempstead, Texas General Rules and Guidelines This is to inform the cooks of the basic rules and guidelines for the Hempstead Chamber of Commerce Barbecue Cook-off. The Chamber of Commerce, their employees, volunteers, and Official persons are not responsible for theft, injuries, or damage to person or property for any participant, guest or visitor to the cook-off. This is a Texas Gulf Coast BBQ Cookers Assoc. sanctioned Bar-B-Que cook-off. All TGCBCA rules will apply. Showmanship: An area of 30x30 will be assigned to each team. No firearms of any kind will be allowed in the cook-off area. No pyrotechnics, explosives, or dunking tanks will be permitted. Violators will face disqualification, and/or removal from the grounds. Barbecue: All fires will be of natural woods or charcoal. Holes, dug pits, or open fires not in containers located less than 1 foot from the ground will not be permitted. Each team must cook on their own pit. One (1) team One (1) pit. Entries will be turned in at the following times: Margaritas Friday Night -- 7:30 p.m. Jackpot Beans 11:00 a.m. Chef s Choice 12:00 a.m. Chicken 1:00 p.m. 2-fully jointed halves (wing tips & all) Pork Spare Ribs 2:30 p.m. Brisket 4:00 p.m. There will be a Head Cook s Meeting on Saturday morning at 9:00 a.m. at the Barbecue committee s office. Drop-off areas for the entries will be announced at that time. THIS IS A MANDATORY MEETING. ALL CHIEF COOKS MUST ATTEND. Check-in time will be noon Friday, July 17 th, The Cook-off committee allows no precooking of meat prior to inspection. Seasoning and marinating will not be allowed prior to inspection. No red sauces or garnishes will be allowed in the judging container. Sauces may be used for the cooking process but may not be applied for presentation or judging. This cook-off is intended for family participation. Nudity, lewdness, profanity, or questionable practices or banned. The excessive use of alcohol shall be grounds for disqualification. Beer is sold by Festival on Festival Grounds.
3 Each team is responsible for the maintenance and cleanup of their assigned areas. All cooking sights must be cleaned before leaving grounds. Absolutely no beans, grease, or trash will be left in the cook sites. The Head Cook will be responsible for the conduct and behavior of their teammates and their guest. In the event that a member of your team is expelled, it is the Head Cooks responsibility to see that the offending member or guest is removed from the grounds. In the event the Head Cook is expelled, then his designee will ensure the person is removed. If the banned person remains in the area, the offending team may face disqualification. Amplified sound systems are to be used with moderation and consideration of others in the cook-off area and will not interfere with Festival Activities in anyway. Music with profanity is strictly prohibited. All Sound Systems will be turned off at 9:00pm. On Saturday Night, No Exceptions. Contestants will not be allowed to sell barbecue on the premises. Small samples can be given to spectators. Chef s Open: Meats other than those entered above. This category may include, but not limited to goat, mutton, fish, crustacean, wild game, or wild fowl. All Open categories must be cooked on site on BBQ pit or grill. Jackpot Beans: A minimum of 1 pound of pinto beans will be prepared on site. Only beans and their juices may be presented for judging. There will be a $10.00 entry fee. One winner 50% Pay Back. Margarita Contest: There will be a contest for those wishing to participate. Margaritas will be turned in at the designed place at 7:30pm on Friday July 17th, There will be a $10.00 entry fee. One winner 50% Pay Back. The winner will be announced at the trophy presentation. Judging: All decisions of the judging committee are final. Each entry fee is non-refundable and must be submitted by Friday, July 17 th, All entries will be submitted in original form with liability release completed. Trophies and prize money will be awarded July 18 th,2015, at approximately 5:00 p.m. for the following: Margarita: 1 st 50% Pay Back Jackpot Pinto Beans: 1 st 50% Pay Back Brisket: Chef s Open: 1 st - $ and Trophy 1st - $ and Trophy 2nd - $ and Trophy 2nd - $ and Trophy 3 rd - $ and Trophy 3rd - $ and Trophy Pork Spare Ribs: Showmanship: 1 st - $ and Trophy 1st - Trophy 2 nd - $ and Trophy 2 nd - Trophy

All areas will be barricaded off. We wish this to be a family event. Safety is the most important issue.
