2 WelTec s Hospitality Programmes WelTec is the leading provider of hospitality training in the Wellington Region. Our tutors work closely with industry to ensure that our programmes are up to date with the latest industry demands. We have relationships with a number of international education providers in Asia, Australia, Europe, South America, the USA and the UK. We also have a good reputation in placing our students in high profile roles in industry with employers such as the InterContinental Wellington, Accor Hotel Group, Restaurant Brands, MCK Hotels and the Duxton Hotel. You will learn in an environment that is as close to the real world as it gets and gain valuable experience working in WelTec s training restaurant Bistro 107. The Bistro, which is open to the public, operates throughout the academic year for lunches and a la carte dinners. Many of our programmes include City & Guilds qualifications, which are recognised in over 140 countries around the world, providing graduates with the opportunity to travel with their qualification. Your study pathways This diagram details your hospitality study options with WelTec. You can start with a certificate and build on your qualifications moving into higher-level certificate, diploma or degree level study. For example, if you do not meet the entry requirements to enter directly into the Bachelor of Hospitality Management, you may gain entry by completing the Diploma in Hospitality Operations Supervision. The first year of the Diploma in Hospitality Operations Supervision consists of either Food Preparation and Culinary Arts, Food and Beverage Service or Hospitality Front Office. Level 3 Level 4 Level 5 Level 7 Patisserie Food Preparation and Culinary Arts Diploma in Hospitality Operations Supervision (year two) Bachelor of Hospitality Management Food and Beverage Service Food and Beverage Service Shading indicates programme has a pre-requisite Hospitality Front Office Entry into the Food and Beverage Service (Level 4) is through completion of the Level 3 certificate Entry into the Patisserie is through completion of the Food Preparation and Culinary Arts Successful completion of this diploma may provide entry into the second year of the Bachelor of Hospitality Management You are able to cross-credit related diplomas towards this degree

3 Hospitality Front Office (Level 3) Incorporating the City & Guilds Certificate & Diploma in Reception Operations and Services. If you like the idea of working with a broad range of people in a fast paced, dynamic industry, then hospitality front office may be for you. The programme covers hotel reception, reservations and cashiering, food and beverage operations, porter service and housekeeping to provide you with a comprehensive knowledge of the hotel sector. You will gain real-world experience through a work placement and site visits, which will assist you to gain employment on completion of the programme. Hotel reception procedures Advanced reservation procedures Front office procedures Selling and marketing techniques Accommodation services Customer service for international and domestic visitors You can combine this qualification with the Service (International) or the Diploma in Hospitality Operations Supervision (Level 5) to enhance your career prospects. Commences in March and runs for 36 weeks full-time at our Petone campus. The programme consists of 31 weeks classroom tuition and three weeks work experience. 12 NCEA level 1 credits in English or an equivalent qualification. For applicants who have English as a second language, a minimum IELTS score of 5.5 or equivalent is required. Great opportunities exist in hotel reception, reservation services and accommodation and concierge services in New Zealand and around the world. You can also progress into the second year of the Diploma in Hospitality Operations Supervision (Level 5). Service (Level 3) Incorporating the City & Guilds Service. Designed to provide you with a broad knowledge of front of house services to gain employment in entry-level positions in restaurants, hotels and cafés. This programme includes a large practical component where you will work with real customers in WelTec s training restaurant Bistro 107. Foundation work safety Personal skills Cashiering Restaurant skills Customer care in the hospitality industry NZ as a holiday destination Security and safe working practices Word processing Three day educational trip Menu knowledge Table service Beverage service Combine this programme with the Travel to enhance your employment prospects in airlines and cruise ships. You can also continue your study with the Service (Level 4) to further develop your skills and knowledge in food and beverage and gain employment in a supervisory role. The Service (Level 3) combined with the (Level 4) make up the Food and Beverage Service (International) (Level 4) as illustrated in the following table. Therefore if you complete both of these certificates, you will also be awarded the Service (International) (Level 4). Service (Level 3) Start dates, duration and location Commences in March and July and runs for 17 weeks full-time at our Petone campus. 8 NCEA level 1 credits in both literacy and numeracy or an equivalent qualification. For applicants who have English as a second language, a minimum IELTS score of 5.5 or equivalent is required. Opportunities exist in New Zealand and overseas working in cafes, restaurants, bistros, bars and hotels. You can also progress onto the Service (Level 4). Service (Level 4) Incorporating the City & Guilds Diploma in Food and Beverage Service and the Wine and Spirit Education Trust (WSET) Level 1 Foundation Wine. This internationally recognised qualification has been developed to provide you with a comprehensive knowledge of food and beverage service. You will gain real world experience working in WelTec s training restaurant Bistro 107 during your studies, which will be invaluable in assisting you to find employment. Commences in March and July and runs for 17 weeks full-time at our Petone campus. Successful completion of WelTec s Service (Level 3) or the City and Guilds Service or an equivalent qualification. Applicants currently working in the industry with a minimum of six months experience are welcome to apply. For applicants who have English as a second language, a minimum IELTS score of 5.5 or equivalent is required. Fantastic opportunities exist in New Zealand and overseas in hotels, restaurants, bistros and bars in a wide range of front of house and supervisory roles. You may also progress into the second year of the Diploma in Hospitality Operations Supervision (Level 5).

4 Food Preparation and Culinary Arts (International) (Level 4) Incorporating the City & Guilds Certificate and Diploma in Food Preparation and Culinary Arts. Taught by highly regarded and award winning chefs with a wealth of experience in the industry, this programme combines theory with practical hands-on learning to ensure that you have the skills that employers need. You will gain real world experience through industry work placements and working in WelTec s training restaurant Bistro 107. Food preparation methods Cost control Cookery methods Pastry techniques Kitchen maintenance and design Cold food preparation Asian and Pacific rim cooking styles Nutrition and dietetics Menu planning Food art Safe working practices Commences in February and July and runs for one year full-time at our Petone campus. Four literacy and two numeracy credits at NCEA level 1. For applicants who have English as a second language, a minimum IELTS score of 6.0 or equivalent is required. There is a wealth of job opportunities for graduates in hotel kitchens, restaurants, cafes and catering companies. You may also progress into the Patisserie (International) (Level 4) or the second year of the Diploma in Hospitality Operations Supervision (Level 5). Patisserie (International) (Level 4) Incorporating the City & Guilds International Diploma in Patisserie. Diploma in Hospitality Operations with Supervision the skills to create a (Level wide range 5) of desserts, cakes and pastries. Ideal for those wanting to pursue a career as a patisserie chef as well as those wanting to further their cookery skills, this programme focuses on providing you Cakes, sponges and pastry products Creams, fillings and glazes Food art and presentation Fermented and chemically aerated products Costing, budgets and control Fruit and meringue based desserts Decorative cakes and celebration cakes Kitchen maintenance and design Gelatine and egg desserts Diploma in Hospitality Operations Supervision (Level 5) This qualification focuses on providing you with the skills to undertake managerial and supervisory roles within the hospitality industry. In the first year of the programme, you will choose between three streams: cookery and culinary arts; food and beverage service; or hospitality front office. The second year focuses on the skills required of supervisors and managers in the hospitality industry. Subjects studied include communications, organisation and management, personnel supervision, accounting, marketing and hospitality law. You may apply for direct entry to the second year of the diploma if you have completed the Hospitality Front Office, Service (International) or Food Preparation and Culinary Arts. Bachelor of Hospitality Management This three-year degree is ideal for those wishing to pursue a career in hospitality management. The programme is designed to provide you with an in-depth understanding and practical application of business principles and practices in the hospitality industry. For further information on the Diploma in Hospitality Operations Supervision and Bachelor of Hospitality Management, please refer to our Hospitality Management Programme Guide or visit Part-time courses Becoming a Barista Designed to provide those wishing to enter the café sector with a thorough grounding in the art of making and serving coffee. This will be invaluable in assisting you to find employment as a barista. Safe Food Production Learn the procedures and practices to transport, handle, prepare, store and serve food safely. Successful completion of the City & Guilds Food Preparation and Culinary Arts or NZQA 752 National Cookery (Level 3) or an equivalent qualification or experience. There are many fantastic opportunities in restaurants and catering companies. You may find employment as a patisserie chef or other related roles.

City & Guilds Certificate & Diploma in Reception Operations & Services City & Guilds Certificate & Diploma in Food & Beverage Service City & Guilds Certificate & Diploma in Food Preparation & Culinary Arts WelTec students from the three-year Bachelor of Hospitality Management programme have the opportunity to apply for the much sought after InterContinental Hotels Group Corporate Management Development Programme. Your tutor will be able to give you further information about these opportunities during the programme. Students will be short listed at the end of the year before a final interview with the InterContinental Hotels Group. The Conran WelTec Partnership London, Paris, New York - exciting cities to work in; Quaglinos, le Pont de la Tour, Alcazar and Gustavinos - just four of the dynamic and unique restaurants, which are part of the Conran collection. WelTec has teamed up with the diverse and individual businesses, known as Conran Restaurants, to offer our food and beverage, hospitality front office and food preparation and culinary arts graduates with job opportunities at Conran Restaurants. Every year (since 2004), 20 of WelTec s best hospitality students are offered, on graduating, the opportunity to join this exciting restaurant group in one of their London restaurants. Sir Terence Conran, world-renowned designer, believes that exceptional food and exceptional design go hand in hand and has ensured that each restaurant has its own distinctive style and personality. Each business creates a unique experience only unified in the simplicity of the elegance of both food and design. The Rarotongan Beach Resort and Spa and the Aitutaki Lagoon Resort and Spa - Cook Islands WelTec has partnered up with these two resorts to offer work experience and job opportunities at the resorts to WelTec cookery, food and beverage and hotel front office students. WelTec also offers specifically developed training to resort staff in all aspects of their business. Staff can gain internationally certified City & Guilds international certificates and diplomas as well as be part of the New Zealand Hospitality Standards Institutes Apprenticeship programme. The Bay of Many Coves The Bay of Many Coves is located in the Marlborough Sounds and offers luxurious apartment style accommodation. It is marketed as the sanctuary by the sea. Located in the heart of the wine growing area of New Zealand, it is well known for fishing, sailing, kayaking and walking. Lisa Bardebes (General Manager) and Mike Jensen offer WelTec students work experience and have industry placements available over the busy summer period. 6 Student exchanges To support our students in their learning and to encourage them to gain an international perspective of the industry, WelTec has a range of international education partnerships, including Les Sorbets in France, CESSA in Mexico and Sekolah Tinggi Pariwisata Bali. Students have the opportunity to apply for these and other exchanges during their studies. Graduate Profile Les Sorbets, France WelTec has partnered up with a French school in La Roche Sur Yon called Les Sorbet to offer student and tutor exchanges for a seven-week period. The purpose of this exchange is primarily for students to gain work experience in the industry and knowledge from the school in French cuisine. CESSA University, Mexico The CESSA student exchange alternates between WelTec and CESSA University in Mexico, offering students and tutors the opportunity to visit Mexico City, take classes and learn about the way people live and cook local food. It also provides students with the chance to see how the hospitality industry operates overseas. Sekolah Tinggi Pariwisata Bali (STP Bali), Bali WelTec s latest student exchange programme is with STP Bali, the leading hospitality and tourism education college in Bali. The partnership is for staff and student exchanges between the two tertiary institutions and also provides for students from STP Bali to come to New Zealand to complete WelTec s degree programme in Hospitality Management or international qualifications such as City and Guilds certificates and diplomas. This exchange will provide our students with the opportunity to learn about the Balinese culture, local food and Indonesian cookery techniques. Facilities As a hospitality student, you will learn in purpose built facilities, which include four training kitchens, a production kitchen, a latte lab, bar training room, training restaurant, a model hotel room and replica hotel reception. One of WelTec s four training kitchens Bistro 107 Replica hotel reception Our training restaurant, Bistro 107, is open throughout the academic year to the public for lunches and dinners. Our food and beverage and cookery and culinary arts students run the restaurant as part of their study. This ensures that they receive real experience working in an industry environment. The restaurant is fully licensed and offers competitive prices. Michael Kennedy Cooking and Culinary Arts Chef de Partie, Wharekauhau Lodge Guests pay up to $3,000 for a weekend at Wharekauhau, WelTec cookery graduate Michael Kennedy lives in this luxurious environment and works as a Chef de Partie. He loves everything about it. I love the atmosphere, working with the food, the pressure, the other staff, says Michael. The lifestyle is good. We re right on the coast. We can enjoy the beach and use the quad bikes if the guests aren t using them. The staff quarters are great and I can easily go back home to Wellington when I m not working. Michael, who won the prestigious title of Outstanding Chef Newcomer at the 2006 New Zealand Culinary Fare is no stranger to competitions. As a hospitality student at WelTec he was encouraged to compete in competitions while studying. The tutors give us all the groundwork the hygiene, the ways of working, and they help with the dish concepts, says Michael. From the start of secondary school I always liked cooking and thought I would get into it. WelTec is close (to where I live) and one of the best places to go to in Wellington. While Michael would like to eventually get experience overseas, made easier as his qualifications are recognised by City and Guilds, he expects he will end up back in New Zealand. I like the atmosphere, the produce what is available and grown here gets better every year. I think I made the right career decision. I don t see it changing any time soon, says Michael.
