The West Coast Academy of Hospitality and Tourism is the Institute s Academy of Exceence training students to the highest industry standards in the areas of hospitality, culinary arts and tourism. Since its inception in 2005, the Academy has become the premier training facility in Western Australia with students and staff winning a number of prestigious awards in cookery and restaurant service disciplines. The Academy has engaged with and continue to work in coaboration with industry to ensure that our training is industry led and relevant to individuals, enterprise and the community - positioning us the provider of choice. 4 ABOUT THE ACADEMY The West Coast Academy of Hospitality and Tourism provides students with a set of training environments enabling them to develop world class skis. A state-of-the-art facility, the Academy is at the leading-edge of hospitality, culinary arts and tourism training throughout Australia and the rest of the world. It is led by internationay respected Executive Director, Patrick O Brien, and proactively seeks guidance from a key group of industry leaders through a Council of Industry Partners. The Academy s strengths have been recognised with staff and students winning more than 150 awards for exceence. Recent awards include: Oceanafest (Gold); the Restaurant and Catering Awards for Exceence; Australian Culinary Federation s WA Apprentice of the Year and recognition by the World Association of Chef Societies (WACS). equipment such as a fridge, hotplates, oven and utensils, and aows lecturers to provide a personalised one-on-one training environment making it ideal for apprentices to hone their culinary skis. Pavilion Restaurant A contemporary à la carte restaurant located on campus, the Pavilion uses fresh local produce to offer three-course fine dining to 120 patrons a day. Here future chefs, wait staff, floor managers, food and beverage and front-of-house staff extend their skis to maximise their efficiency in a areas of hospitality service. Designed and built to the specifications of one of Australia s leading brewers, two training bars within the restaurant enable students to learn a aspects of bar management and beverage service. Skis kitchens The Academy is unique in having four fuy equipped skis kitchens including a multi-miion doar pastry and baking kitchen which is the first of its kind in the northern corridor; a production kitchen and a demonstration kitchen with video links to three classrooms. These kitchens are of such a high standard, they are used for every major cooking competition and pastry and baking competition in Western Australia. We equipped individual work stations enable students to work autonomously with their own 4
5 Functions on the Boardwalk Theory classrooms by day and function rooms at night, Functions on the Boardwalk is a modern function centre that provides an environment for our events management students to cultivate their skis in the planning, set up and running of events. Students host several gala dinners and charity events for up to 200 guests at a time as part of their training throughout the year. Equipped with a training bar, the facility enables food and beverage students to gain in-depth knowledge about the preparation and responsible service of alcohol. Workplace Training The Academy has a dedicated team that travels to enterprises to deliver on-the-job training for the responsible service of alcohol and traineeship programs. Online Training Components of our courses utilise online training, aowing the students to learn and complete assessments from anywhere, anytime, at their own pace. These lessons are supplemented with online communication direct with the lecturer and tutorials at the coege. Baytree Deli The Baytree Deli enables students to learn customer service and product knowledge in an informal environment. Students benefit from being exposed to the ever changing pace of the hospitality industry; especiay during the lunch period. This facility gives students the opportunity to experience another area of the hospitality industry that differs from hotels and restaurants. Barista facility A purpose built barista training room containing individual workstations enables students to perfect the art of coffee making. The room is also available to local businesses for continued professional development and up-skiing in the fast-paced espresso coffee industry. 5
6 COUNCIL OF INDUSTRY PARTNERS Working in close coaboration with a Council of Industry Partners (CoIP) to meet industry needs, the Academy has created a range of courses that prepares graduates for the tourism and hospitality hot spots within the state and around the world. Chaired by Chris Taylor, owner and executive chef of Fraser s Restaurant, the CoIP comprises of industry leaders in hospitality and tourism and has been the Academy s voice of industry providing strategic advice on training development, delivery methodology and current industry trends. With the input from the CoIP, the Academy s students receive the best quality training through initiatives such as master classes, run by the most celebrated and renowned chefs and hospitality managers; work experience in Western Australia s best restaurants, hospitality and tourism venues; and have the best facilities and equipment to support their learning. The Academy is also active in creating innovative new pathways for students to enter the hospitality and tourism workforce embedding best practice training methodology that enables it to operate with confidence in knowing that its training is relevant, up-to-date and industry required. The CoIP has been instrumental in raising the profile of the West Coast Academy of Hospitality and Tourism as an employers training provider of choice for a of their staff developmental needs. 8 COURSE INFORMATION The reputation for exceence that the Academy enjoys, opens doors for students and apprentices in many of Western Australia s most popular tourism related businesses, and has created opportunities for the delivery of training internationay, with Academy staff providing training and assessment for students as far afield as China. Working with employers and industry leaders as we as other institutions that deliver the elite Le Cordon Bleu program, the Academy provides first class training and education in: Cake Decoration Cookery Food and Beverage Hospitality Operations and Supervision Meetings and Events Management Retail Baking School Canteen Management Tourism and Travel The Academy ensures that students can continue learning after completing their initial qualification, with pathways to management, entry to Advanced Diploma courses, and articulation to Edith Cowan University with entry at second year level. EVENTS Event planning involves liaising with the client to identify their objectives and target audience, devising the event concept, planning the logistics and coordinating the technical aspects before actuay executing the proposed event. Post-event analysis and ensuring a return on investment have also become significant drivers for the event industry. Graduates can benefit from employment in hotels, restaurants and function centres; event management companies; local shires; charities; sporting arenas and stadiums; cruise liners and community groups. 9 HOSPITALITY Hospitality is undoubtedly the growth area of the future offering the ultimate lifestyle job in areas as diverse as mine sites, hotels, cruise ships, restaurants, resorts, retirement viages and everywhere there are food and beverages to be enjoyed. Whether it be back of the house or in front service positions, the opportunities are growing constantly. World traveers take note that Hospitality graduates wi have doors opened around the globe as skis learnt in this field of study are easily transferable. In fact Hospitality skis have become a marketable commodity both overseas and here in Australia. Hospitality is not a 9 to 5 predictable career choice. It is a lifestyle job suiting those who enjoy a fast paced work environment where high standards must be maintained and stimulating and diverse opportunities are on offer every day. 11 Louise Gotch, Certificate III & Diploma of Events Working in the field of hospitality, Louise decided to put her attention to detail to new heights and study a Certificate III and Diploma of Events. Work experience opportunities have seen her assist with a careers expo, staff development day and grand awards evening dinner. Once qualified, Louise plans to work in the hotel/convention centre industry as an event coordinator or wedding planner. I love watching an event come together from start to finish and making sure a the sma things are taken care of to ensure its smooth running and success, said Louise. My training at West Coast has been great. At uni they te you what it s like to do something but here, you actuay do it and find out for yourself how it wi a work out. Cameron Wetton, Certificate III in Commercial Cookery Cooking with his grandma and work experience at school ignited Cameron s passion for a career in cookery. Now a fuy qualified chef at Perth Convention Exhibition Centre, Cameron has been named WA Apprentice of the Year and has a burning desire to use his skis overseas one day. My training at West Coast has been an amazing experience. I have competed in and won a number of industry competitions and awards and I ve met some first class chefs along the way, said Cameron who has competed internationay in Chile. Passion is what give you the appetite to be a great chef and if you have this combined with the right training and skis, you can push yourself to get better and better every step of the way. 11
