3 Hot Stuff Everyone s interested in food, travel and recreation but if you want to develop the skills to work in those areas, consider one of Fanshawe College s many Tourism and Hospitality programs. Diversity Our programs can get you onto a cruise ship, into the kitchen, even onto the golf course. A new Golf and Recreation Club Management two-year diploma program with an optional co-op component is tailor-made for people who want to work in the recreational club industries such as golf, skiing and tennis. If you re interested in cooking, we offer a unique Culinary Management Apprenticeship program that doesn t require you to be sponsored by an employer until you have graduated. Go Places Every one of the following programs is designed to set you on a career path that could take you anywhere in the world.

4 Careers in Tourism and Hospitality Culinary Management - Apprentice a two-year Ontario College Diploma/ Apprenticeship program that does not require that you be employed during your studies. This program is a complete package with managerial courses combined with basic cooking instruction as well as international cooking, baking and garde-manger. Students are also recognized as apprentices and during their placements can continue to attain the practical skills required to write their Certificate of Qualification with the Ministry of Training, Colleges and Universities. Graduates can expect to work in all areas of a professional kitchen, as food and beverage managers, purchasing agents, catering and sales representatives and banquet managers. Cook II a two-year apprenticeship program requiring a sponsor/employer. Your sponsor/employer must register with the Ministry of Training, Colleges and Universities Apprenticeship/ Client Services, 217 York St., Suite 201, London, Ontario, N6A 5P9, Students must work under a Red Seal certified cook and attend two days of classes per week. The program prepares the student to write their Red Seal Certificate of Qualification. The interprovincial Red Seal designation is recognized across Canada. Culinary Management Upon successful completion of the Culinary Skills - Chef Training Certificate students may work towards completion of this Ontario College Diploma program. Culinary Management combines the managerial courses required to run a professional kitchen with cooking instruction, everything from basic knife skills to international cooking, baking and garde-manger. This program boasts an externship placement which has seen graduates work in amazing locales with renowned chefs. Graduates can expect to work in all areas of a professional kitchen as food and beverage supervisors, purchasing agents, catering and sales representatives and banquet managers. Culinary Skills - Chef Training this one-year Ontario College Certificate program is a stepping stone into the Culinary Management Diploma program. It introduces students to the basic methods and techniques of food preparation such as knife skills, stocks and soups, roasting, braising and grilling. Look forward to employment in a range of entry-level positions from prep cook, line cook, counter service, assistant cook, breakfast cook to assistant baker. Golf and Recreational Club Management a two-year Ontario College Diploma program with a co-op option. Students will study human resources, membership management and accounting functions. They will also learn about equipment and landscape issues related to recreational facilities. Career opportunities include membership manager, pro-shop operator, food and beverage supervisors, turf and greens sales, and assistant facilities and groundskeeper.

5 Hospitality Management - Food and Beverage a two-year Ontario College Diploma program with a co-op option in which students, along with their academic studies, are actively involved in the day-today operation of a formal restaurant and deli. Their studies will expose them to the challenges of operating a restaurant, event planning, banquets and even catering. Graduates can look forward to careers ranging from food service in hotels to fast food outlets as supervisors, department heads and management trainees. Hospitality Management - Hotel a two-year Ontario College Diploma and co-op education program. Students will explore the multifaceted career opportunities available in the hotel industry. Along with both manual and computerized front office systems, students will also have an opportunity to refine their food service skills in our on-campus restaurants and kitchens as well as study accounting, housekeeping, human resource management, financial management, event convention planning. Graduates will find themselves suited to a multitude of positions in food service, rooms division or as management trainees. Tourism and Travel a two-year Ontario College Diploma and co-op education program offered in only three academic levels and two co-op terms. Customer sales and service, tariffs and ticketing, group tours, package holidays, accommodation and airline service and reservations are among the exciting career-related courses a student will explore. Graduates of this well-respected program go on to work in retail travel agencies, with airline or tour companies, resorts and hotels, tourist attractions, visitor and convention centres or government tourism offices. Graduate Certificate Program Concierge Services - Guest Relations Specialist a one-year Ontario College Graduate Certificate program designed for work in the multifaceted premium service sector of the tourism and hospitality industry. Graduates who exhibit outstanding critical thinking, multi-tasking and problem-solving skills, with heightened degrees of global knowledge, sophistication and confidence are prized by all tourism and hospitality employers. Career opportunities exist as concierges, cruise/tour directors, customer service trainers, and in supervisory/management roles with internationally recognized leisure and corporate service providers.

6 Admission Requirements *The minimum requirement for admission to all post-secondary programs is an Ontario Secondary School Diploma with courses from the College (C), University (U), University/College (U/C) or Open (O) stream or equivalent or mature student with the stated academic requirements.
