1 T HE FREE RANGE CULINARY INSTITU TE Wild Game Culinary Arts Bridging the Gap Between Field & Table For over 25 years the Free Range Culinary Institute has been following its mission of Educating and Inspiring game enthusiasts on proper field to table culinary concepts for wild game. FRCI s Founder and Master Game Chef - Denny Corriveau is a noted national authority on wild game preparation. He is the only game Chef to have created a national cooking school for wild game, and has worked with every major sporting organization in the country, as well as all major farm-raised game organizations; top culinary schools such as Johnson & Wales, national outdoor retailers such as Cabela s, and major gun manufacturers. Denny has been approached by many well-known companies such as Mossy Oak, to be a National Game Chef. The WildCheff teaches an eager crowd of game enthusiasts He has also been featured in the Boston Globe, and countless sporting publications across the country, and has gained the attention of television networks like the Food Network,

2 THE WILDCHEFF Wild Game Evangelist Discovery Channel, the Sportsman Channel and Outdoor Channel. He is the featured game chef for the weekly New England outdoor television show Wild Side, and featured as the Celebrity Game Chef for a weekly national radio show called The Sporting Life Radio Show which airs on iheart Radio. He has also had television featured segments dedicated to him and his work with wild game. The WildCheff filming a delicious moose recipe Denny is highly sought after for his wild game teaching expertise, and is additionally called on by various high-end hunting lodges and private ranches. Celebrities also have the WildCheff on speed-dial to cook his very unique specialized wild game food offerings for special events and private venues across the country. A few notable celebrities that Denny has been asked to cook for include Quarterback - Tom Brady, the New England Patriots, NFL Executives, Ted Nugent, and Duck Dynasty stars. Denny is also the featured game chef for Matt Light s Annual Celebrity Shoot-Out, where he serves up a wild game tasting and free-range lunch for over 500 people. Our full length Seminar runs for approximately 45 minutes to 1 hour, depending on audience participation, and you can optionally add a live culinary demonstration to be the feature of the tail-end of the Seminar. If you choose this option, many times samples are provided to the participating audience from the recipes that are demonstrated. 4 FRCI C ULINARY CLIN IC S FRCI Culinary Demonstrations Instrumental Field to Table Knowledge FRCI Culinary Demonstrations provide a first-hand look at fish and wild game. Clients determine which topic they want covered and a custom culinary demonstration is provided; teaching the class participants proper techniques and methodologies that can be utilized to successfully cook their fish and game. Our full length Culinary Demonstrations run for approximately 90 minutes to 3 hours depending on the depth of information you want shared, and if you desire attendees to enjoy sample sized portions of what is demonstrated. Recipes for Demo will be provided to all who attend. Students will also have the opportunity at the end of the Demonstration to visit the table display to learn more about Denny s extensive preservative-free WildCheff Product Line (and make purchases) of almost 100 products for cooking fish and game, and his cookbook series on fish and game.
