3 MEET OUR EXECUTIVE CHEF: ADAM RAFTERY When you re born and raised in a place as lovely as Vermont, it s hard to stay away for long. Executive Chef Adam Raftery began his career at the luxurious Winnetu Oceanside Resort in Martha s Vineyard, honing his culinary prowess under the direction of Chef Roy Bremen. His next stop was St. John in the U.S. Virgin Islands, where he helped open Tage Restaurant before becoming executive chef of Paradiso restaurant. While we re grateful that his travels inspired Chef Raftery s love for cooking with local ingredients, we re really glad he came back to Vermont. In 2011, he debuted The Wooden Spoon Bistro and St. Paul Street Gastro Pub, both in partnership with his sister and both up the road in Burlington, which embraced the two restaurants with gusto. I ve been lucky enough to have spent my life tasting and experimenting with the best of our state s ingredients, flavors, and produce. I m excited to bring my life experiences into our kitchen to produce a true Vermont dining experience. Adam Raftery, Executive Chef Chef Raftery brings the same hometown spirit to Taconic and The Copper Grouse, forming relationships with Vermont purveyors to celebrate seasonal bounty with Manchester locals and guests of Taconic.

TRILLIUM TERRACE : An outdoor half-moon shaped terrace, serving as an extension of the Ballroom, North facing with mountain views. THE LIBRARY : A open-format yet intimate space adjacent to our Ballroom, ideal for casual gatherings, registration or a quiet dinner in a non-traditional setting. THE SOLARIUM : South facing and sun-filled pre function corridor adjacent to our Trillium Ballroom. THE GREEN : Expansive event lawn, adjacent to the Trillium Terrace, with sweeping mountain views, and can host up to 400 guests.

12 THE COPPER GROUSE Our restaurant at Taconic Celebrating the bounty of Vermont s four seasons, the Copper Grouse serves regionally-inspired, soulful dishes of American comfort food from Vermont native Chef Adam Raftery. The elevated beverage program complements the cooking, incorporating classic cocktails, artisanal spirits and a wide selection of Vermont craft beers. An exhibitionstyle kitchen and chef s table offer guests a front row seat to the culinary action, while thoughtful touches like a warm fireplace and wrap-around porch create a welcoming gathering place.

Think of this as one big vacation home, filled with your favorite people. For peak weekends, a minimum length of stay may be required. Discounted group rates are subject to a 10% lodging tax at the time of stay and $20.00 Resort Fee.

21 FREQUENTLY ASKED QUESTIONS What is the deposit to secure Taconic as our venue? A $2,500 non-refundable deposit is required. The remainder of your deposits scheduled will be outlined on your Catering Agreement. What is the site fee? Our site fees range from $2,500-$7,500 and vary seasonally. The site fee covers your tables, house ivory floor length linen, china, glassware, silverware, dance floor and allows you exclusivity of the banquet space. Our staff will set up and break down the tables and chairs. Do you offer on site ceremonies? Yes! We can do ceremonies outside on The Green or inside in the Trillium Ballroom. We can offer flexibly of our space, as your wedding will be the only wedding on site. You may also tent The Green for your ceremony and reception through one of our preferred vendors. Do you allow outside catering? No, we provide all of our catering on-site, with the creative talent of Executive Chef Adam Raftery. What is the capacity of the Trillium Ballroom? We can comfortably serve up to 230 guests. What is the Manchester Village noise ordinance policy? At 11:00pm, the DJ or Band must end their set outside on The Green. Is there parking on site? Yes we offer valet and self parking, complimentary. What are the additional fees? We charge a combined 22% gratuity and administrative fee, 10% Vermont state tax on food and 11% Vermont state tax on liquor. Who will be our point person the day of the wedding? Our Catering Sales Manager will be your day of coordinator, along with our Banquet Manager and Banquet Captain. You will be introduced to the points of contact, prior to your wedding day. Who will set up our wedding décor? Taconic staff will set up your card box, cake knives, champagne flutes, guest book, etc. How late can our reception go? 12:00am in the Trillium Ballroom. Can we have an after party? Yes! You may hold your after party at the Copper Grouse until 2:00am for an additional fee.
