2 ABOUT US Foro de Debate, S.L. (the company that organises madridfusión) was founded in It was created with the aim of bringing together the latest culinary trends with chefs and professionals from the world of international cuisine, as well as to create a forum for learning, knowledge and exchange at all levels. madridfusión was created with this underlying purpose, garnering increasingly more international recognition year after year by promoting Spanish cuisine worldwide while encouraging exchange among different cultures at the same time.
3 MADRID FUSIÓN, INTERNATIONAL GASTRONOMY SUMMIT After 13 years of successful events, madridfusión has cemented its position as the leading international showcase for global cuisine. The summit aims to showcase avant-garde cuisine, bring together world cuisines, encourage debate and reflection on gastronomy and its many related fields (oenology, the food industry, technical innovation, scientific research and new business models) with live culinary demos from leading chefs on the international stage, exciting presentations of the most revolutionary techniques, debates, etc. More than 500 chefs from five continents have graced its stage, including: Grant Achatz, Gastón Acurio, Ferran Adrià, Juan Mari Arzak, Alex Atala, Nobu Matsuhisa, Heston Blumenthal, Michel Brass, Paul Bocuse, Quique Dacosta, Alain Ducasse, Pierre Gagnaire, Dani García, Thomas Keller, Andoni Luis Adúriz, Patricia Quintana, René Redzepi, Jöel Robuchon, Joan and Jordi Roca, Michel Troisgros and many more. A range of other activities are offered as well, including master workshops, tastings and seminars, competitions, food tastings, tributes, auctions, as well as a space for exhibitors. Once a year, Madrid becomes the culinary capital of the world when madridfusión opens its doors.

14 R+D+G (RESEARCH, DEVELOPMENT AND GASTRONOMY) Zaragoza, 30 June 2008 In the Spanish Pavilion at Expo Zaragoza 2008, madridfusión, together with the Spanish Society for International Fairs or SEEI, organised a Food and Science conference at the Spanish Pavilion at the Expo Zaragoza MADRID DULCE FUSIÓN Madrid, 10 to 13 March 2007 As part of INTERSICOP at IFEMA, madridfusión organised a series of conferences about the world of pastries and baking. SPAIN S 10 AVANT-GARDE FOOD FESTIVAL 12 to14 October 2006, New York, USA Held at the International Culinary Center, in collaboration with ICEX and the James Beard Foundation, madridfusión brought 2006 to a close with the most important international culinary event of the year. Ten highly regarded chefs, numerous wineries and two Spanish regions were present at the unique conferences.

Spain As part of the VI Food Fair at IFEMA, madridfusión organised a space to feature food demos and different spaces where visitors could kick back and enjoy proposals based mainly on water, oil and coffee as well as a small exhibition area for gourmet products. CUTTING-EDGE CUISINE IN SPAIN As a preview and in preparation for the 2005 Aichi World Fair, the Spanish culinary elite travelled to the prestigious Hattori Cooking School to unveil their secrets and the keys to preparing their famous dishes. Over three days, fifteen chefs the cutting-edge of Spanish cuisine gave live demos, lectures about the most commonly consumed fish in both Japan and Spain, and presented regional cuisine and creativity, technique and imagination at the service of taste and the pleasures of dining.
