3 2013 TRAINING PROGRAM IN SPANISH GASTRONOMY 1. INTRODUCTION Foods and Wines from Spain: on behalf of ICEX España Exportación e Inversiones, the entity responsible for promoting the internationalization of Spanish companies and Spain s image abroad, together with the International School of Culinary Arts Fernando Pérez (EIC), we present to you a hands-on training program for future young professionals in Spanish Gastronomy. 2. GOALS AND PROGRAM DETAILS 2.1 GOALS To familiarize culinary arts students with the leading products in Spanish cuisine; raising international awareness of these products and dishes and to promote their export. To create an international network of professionals associated with Spanish gastronomy that will provide a support structure for future internationalization processes in this sector, such as restaurants abroad, technical support projects, consulting, etc. To create a support network for future worldwide promotional actions for Spanish products and cuisine in markets defined by ICEX. Specifically, to create a network of ambassadors for Spanish Gastronomy. To create, in short, preferences in using Spanish products and their subsequent use in candidate s respective home countries. To promote the incorporation of Spanish products into their repertoire and Spanish-inspired recipes in their menus. To raise awareness of the modern image of Spain without undermining the traditions of Spain s different regions. To increase the international reach of Spanish chefs, gastronomy, ingredients and beverages. To raise the media profile of the program and its participants, both in Spain and in their home countries; during and after the program, through journalists and critics. 2.2 PROGRAM DETAILS In 2013 the program offers to train ten culinary arts students in Spanish gastronomy. This program is not a work and travel program, it s an educational training program. Participants will visit internationally recognized food companies as well as other interesting firms that use artisan production processes; they will attend tastings of typical products (wines, oils, cheese, etc.) and they will visit places that, due to their nature, will contribute to their understanding of Spanish products (markets, food festivals, etc.) The program will start on June 10th and will end on November 7th

4 The total duration of the program will be 21 weeks and it will consist of the following stages: A six-week training period in Spanish language and Spanish gastronomy: - An intensive Spanish language course given by the University of Valladolid (45 hrs). - A hands-on culinary training course in Spanish gastronomy given by the International School of Culinary Arts focused on the Spanish gastronomy and products (120 hrs). - Field visits to food companies, producers and places to improve the understanding of the Spanish gastronomy. A thirteen-week internship stage in one of many renowned Spanish restaurants in order to learn and practice all techniques learned during the training program. - Culinary arts students that complete the program continue to have ties with the host restaurant and its executive chef, as well as with all the other locations with which they come into contact. A two-week field trip around Spain to achieve a deeper immersion in Spanish gastronomy, its products and culture. The program will conclude with the students' participation in the International Tapas Competition that takes place every year in Valladolid. This year, the International Tapas competition will be celebrating its fifth edition. An International jury panel of renowned chefs and experts will award prizes to the best tapa plus prizes for first and second runner-ups. 3. VALUE OF THE PROGRAM Besides the training, the program, valued at Euros (USA$25,000) includes: Advice in how to obtain a visa, if one is necessary. NOTE: the organization is not responsible for obtaining or payment of travel visas. Regular airfare round trip to Spain to the student s country of origin, excluding any additional costs derived from this travel (baggage excess, etc.). Accommodation during the program. Excursions during the six week training period. Meals during the six week training period, except days off. Transport to location, where the internship stage will take place. At least one daily meal during the 12 week stage in restaurants, except days off. Field trip transport and meals during the trip around Spain. Any other expenses are not included. Travel insurance will cover the student in relation to potential incidents arising during travel with regard to luggage, delays, etc. with accident coverage for death or permanent disability and medical or hospitalization contingencies, as well as civil liability insurance. This insurance cover will only be valid for the duration of the program.

5 4. REQUIREMENTS The candidates must fulfill the following minimum requirements to be accepted on to the program: Must be fluent in Spanish. A DELE B2 language level of the Instituto Cervantes will be considered. NOTE: After the six week language course failure to grasp a firm or acceptable knowledge of the Spanish language will result in expulsion of the program. Must not have previously participated in a program of equal or similar characteristics in terms of content and objectives, in Spain. Must be at least 18 years old at the beginning of the program. Must have at least two years of studies at a nationally accredited culinary school (last year of studies highly preferred). To be available for the entire period of the program (from 10 th June to 7 th November). 5. SELECTION OF CANDIDATES The Selection Committee will be comprised of: - Renowned Food and Beverage professionals as well as members of the press. - Representatives of ICEX. - Representatives of EIC. Selection will be strictly based on the applicants following of the aforementioned requirements and necessary documents. Only two students from any school may apply, either personally, or the school may select the applicants on their own. Knowledge of Spanish will also be assessed by the Committee. The Committee will establish a list of selected candidates and reserve candidates. The reserve candidates (4) only may benefit from the program in the event that selected candidates leave during the three first weeks of the program. The list of selected candidates will be available no later than 20th March PROCEDURES FOR CANDIDATES The registration period begins on the 5th of February and will end on the 11th of March, Applications can only be submitted by Culinary Schools. Each School may only register up to two students for consideration. Applications must be submitted via by completing in capital letters the three forms attached/linked.

6 Applications must be addressed to Applicants must include: 1) Application form, including a picture. Attached form A. 2) Authorization letter from an official representative of the school. Attached form B. 3) Evaluation form from an accredited professor, from the school, chosen by the student. This professor must also submit a recommendation letter of the student Attached form C. 4) Student must submit an essay stating the reasons for their interest in participating in this program. 5) A 100% original tapa recipe, including full ingredients, method, and a picture. Tapas will be judged based on the student s use of culinary technique, presentation, originality, a sufficient blend of both local and traditional Spanish ingredients, flavor, and size (two-three bites). STUDENTS OF THE UNITED STATES ONLY: Due to the large number of Culinary schools in the United States, all USA applicants chosen may be subject to a preliminary competition, in a US City to be determined, before being selected. DISCLAIMERS Any student participating in the program fully accepts the rules and conditions given to them by ICEX and EIC, and will fully adhere to them. Any student participating in the program fully accepts that they are a representative of their school and, consequently, of consequently, represent their country and the country where the school is located. Professional behavior must be used at all times during the program. Failure to adhere to this rule will result in immediate expulsion from the program, at the liability of the school. Any student participating in this program must submit, either personally or funded by the school, a Euros (USA$1.325) security deposit, to be returned at the end of the competition. NOTE: If the student fails to complete the program, the deposit will not be refunded, except in the extreme case of a personal or medical emergency. The organizers reserve the right to document the key moments of the program with visual and photographic material, report and publicize the event and the works done through all series of activities to raise awareness of the trade press, opinion, newspapers and TV. All recipes, photos and video, remain property of the organizing institutions.
