4 ALMA LOCATION ALMA has its Headquarters in the magnificent Palazzo Ducale of Colorno near Parma, equipped with the latest teaching and cooking facilities.

6 Parma is an elegant city where reigns a refined atmosphere that can only be breathed in a 'petite capitale', with its centre rich of art, parks and treasures from different ages, it is a very welcoming place

7 Yet Parma is not only the city itself, the monuments or the tradition in music and culture: Parma also includes the province, a territory of infinite funds, a varied landscape that stretches from the Po river to the Appenines' crest, with small villages rich of history and liveliness, castles, medieval parish churches and theatres spread in the countryside.

10 FACILITIES ALMA covers an area of square metres, and its classrooms are fully equipped for the training of professionals, with a great respect for the territory and for Italian culinary, pastry and sommellerie art as a common value:

11 7 TRAINING ROOMS Alma makes 7 Training Rooms available for courses, where the practical lessons take place and students can practice under the Chefs guidance. Each room features 20 individual cooking workstations complete with all necessary equipment to guarantee students enough room and autonomy in their work. All rooms are equipped with audiovisual systems.

12 2 BAKING AND PASTRY LABS Inside Alma s headquarters is a room given over entirely to Pastry-making, with 20 fully-equipped workstations arranged along a long marble work surface. This room is equipped with the very best tools used for professional pastrymaking. Each student has a complete set of tools available to follow the lesson step by step with the Chef.

13 3 DEMO ROOMS 1 AGORA Alma has 3 Demo Rooms for cookery lessons and demonstrations by lecturers: consisting of stall seating and fully-equipped kitchens, they also boast cameras connected to monitors to allow participants to follow the actions of the Chef who is teaching. Thanks to the audiovisual systems, participants in the courses can watch famous chefs at work right down to the smallest detail.

14 THE LECTURE HALL (AULA MAGNA) Inside Alma s headquarters is a lecture arranged like a theatre with 84 seats and a complete professional kitchen, for special events, demonstrations and conferences.

15 THE SOMELLERIE ROOM Contains 21 workstations created by Electrolux to a design by Alma, and boasts every kind of instrument to ensure toplevel teaching. Each workplace is equipped with a personal computer connected to Internet, a technical tasting area, a box to get rid of wine that has been tasted and individual lighting.

16 THE WINE CELLAR The wine cellar, settled in the basement of the 18th Century Reggia, includes a collection of Italian wines, and is specially conceived by ALMA to best represent wines and producers of every Italian region. It is equipped with an innovative research system, based on a peculiar use of light.

17 THE LIBRARY ALMA library is one of the most important in this field, with over volumes and a complete collection of food and beverage specialized newspapers and magazines, divided into one hundred subjects to simplify the research and to help study the lessons in depth. In support of students' cultural formation, gastronomic literature, art, cinema and theatre, history and culture, ancient people's cuisine, wines and sensory analysis flank more classical books on cuisine and gastronomy, dietetics and food education, gastronomic guides and books of recipes of the greatest Italian and International cooks. The library is furthermore provided with computers and an Internet point at students' disposal for their researches

18 2 KITCHENS RESTAURANT Two kitchens restaurant where students once a week experiment the life in a real restaurant and the pressure during service, feeding their schoolmates and ALMA Staff and guests.

19 THE RESTAURANT ALMA restaurant, where students meet daily, includes almost 200 places, and is often used as a perfect location for important National and International events.

20 Within walking distance to the School and to sport facilities, three comfortable residences, called ALMA Housing, are available, with 2, 3 or 4 bed apartments, including living room, kitchen and restrooms. 4 HOUSINGS
