Caruso & Minini is today a solid company thanks to the continuous collaboration of two men that share the same passion and devotion towards wine even though they are geographically apart. Day after day this perfect combination produces original and surprising products. The two vineyards, Giummarella and Cutaja, are the priceless legacy belonging to the Caruso family for three generations: a total of 120 hectares lying on a group of hills between Salemi and Marsala, a few kilometers from the cellar. It is located in the heart of an area that has an undeniable vocation to produce suitable grapes to make excellent wines. Since 2004 both Stefano Caruso & Mario Minini focused their experience and enthusiasm in creating elegant wines with a unique character; wines that come to live inside the walls of an old baglio in the heart of the traditional wine-cellar area of Marsala. 5 Syrah Rosato Terre Siciliane Indicazione Geografica Protetta Vinification in white with maceration of the skin for 12 hours, the grapes are later soft pressed and vinified at a controlled temperature of for 15 days. 4 months in stainless steel, bottle fining for 2 months follows. Cherry-colored with an intense fruity bouquet that comes from our best Syrah. Notes of strawberry, cherry, raspberry and pomegranate. In one s mouth the wine is fresh with a good acidity and balanced tannins. It s certainly not a wine for undecided palates. 6 Nero d Avola Merlot Terre Siciliane Indicazione Geografica Protetta The grapes are vinified in stainless steel for 12 days with skin contact at a temperature of C. After malolactic fermentation, the wine matures for about 4 months in stainless steel tanks. Bottle fining for at least 2 more months follows. It s what we can perfectly define as the everyday-wine. Deep ruby and crystal clear it offers a wide variety of aromas highlighted by liquorice and raspberry. Can easily climb the Food Pyramid having a preference for vegetables, legumes and white meat. Elegance and freshness are the main characteristics of the Grecanico produced in our vineyards of Terre di Giumara. Grapes are hand picked and then gently crushed. Intense and fine. Only one third of the wine is aged in tonneaux for 4 months, just the needed time to build some structure without compromising the freshness. The wine strikes with its density and its violet tonalities. In one s nose is rich of scents, deep and pure. Mature red fruits merged with herbs and prunes. Expresses excellent varietal character, and exhibits smooth, velvety tannins and incredibly harmonious balance. For decades the Perricone, or the so-called pignatello, had been the undisputed leader of the red grapes in western Sicily. A careful vinification has transformed the prickly character into a incomparable personality: a one of a kind wine. Rich with red fruits, mixed with notes of liquorice, a typical expression of the relationship between the variety and its land. Final ageing in bottle for 3-6 months. The vineyards are situated in the surroundings of Mazara del Vallo, past the gravel bank of the river. This testifies to the presence of the typical water-rounded stones called Cuti. Thus, the name of this wine is derived from the originality of its soil which makes it both unique and special. Complex and intense. Mature red fruits like currant and prune merged perfectly with herbs and scents of cocoa. It s spicy, silky and persistent. Malolactic fermentation in stainless steel tanks. 24 months in French tonneaux of 500 liters. Final ageing in bottle for 6 months. It shouldn t be a surprise that our top red is made of a non-indigenous variety; Syrah is the best-known black grape in the western Sicilian soil. Two years of ageing in 5 tonneax have give it the Riserva Apellation. A combination of power and smoothness is supplemented by a touch of fruitiness and notes of florals and are made intriguing by a thin vein of oak. The harmonious roundness found in one s mouth does not affect the fragrance of the fruit. A strong wine that plays a main role at any table where it s served. 21 TAGÒS Terre Siciliane Indicazione Geografica Protetta Careful selection of the grapes, picked by hand after being dried on the plant, de-stemmed by hand and maceration with the skin at a low temperature. After being soft pressed, the must is fermented in tonneaux, already used for Timpune. Once the desired alcohol level is reached, the temperature is lowered to stop fermentation. 4 months in tonneaux where fermentation took place followed by a short stop in stainless steel before bottling. The lovely result of a long wait. Bright colour with intense golden reflections, balanced bouquet with scents of fruits and flowers, notes of honey and cinnamon follow. The wine is pleasurable on the palate due to its sweetness, sapidity and softness. Great structure. It s a perfect dessert wine. It calls either for cheeses or sweets. Alcohol 13% vol. WINEMAKER S NOTE The fragrance of the grapes and the use of a traditional method brings to life an harmonious and exciting product that wraps all your senses. Shiny Light yellow color with a perlage of interesting finesse. Delicate nose; shades of herbal and floral. Notes of apple, citrus and white peach; a hint of light toasted bread and almonds completes the bouquet. In the mouth is tasty, fresh and balanced; beautiful texture, dynamic and crispy.
