13 Case study Provolone Valpadana cheese The project, financed by the Consortium Provolone Valpadana, aimed at identifying unique markers for the characterisation of Provolone Valpadana DOP Cheese A total of 600 Provolone cheese samples were collected from 8 different factories within the Consortium and other 8 distinct factories producing generic Provolone. The current study identified 2 molecular markers able to distinguish the DOP products from the generic cheese production. A blind test on 5 samples could confirm the validity of this method up to 98% of specificity.
