3 2 Diploma in Hospitality Operations Supervision (Level 5) This qualification focuses on providing you with the skills required to undertake managerial and supervisory roles in the hospitality industry. In the first year of the programme you will choose between three streams: cookery and culinary arts, food and beverage service and hospitality front office. The second year focuses on the skills required of supervisors and managers in the hospitality industry. Subjects studied include: communication, organisation and management, personnel supervision, accounting, marketing and hospitality law. Programme structure STAGE ONE You will choose one of the following qualifications: Certificate in Food Preparation and Culinary Arts (Level 4) Designed to provide you with the skills to plan, prepare, cook and serve a wide range of meals in order to work as a professional chef. Incorporates the City & Guilds Certificate and Diploma in Food Preparation and Culinary Arts. Certifcate in Food and Beverage Service (Level 3 and 4) Gain expertise in all aspects of front of house, including silver service, customer care, bartending and cocktail making, wine and beverage service and barista. Start dates, duration and location Stage Two commences in March and July and runs for one year full-time at our Wellington CBD Campus. Part-time options are available. Entry requirements 50 credits at NCEA level 2, with a minimum of 12 credits in each of four subjects, including eight literacy credits (four reading, four writing) and a minimum of 14 credits at level 1 or higher in mathematics, or an equivalent qualification or experience. For applicants who have English as a second language, a minimum IELTS score of 5.5 or equivalent is required. You may apply for direct entry to the second year of the diploma if you have completed the Certificate in Hospitality Front Office (Level 3), Certificate in Food and Beverage Service (Level 3 and 4) or Certificate in Food Preparation and Culinary Arts (Level 4) or an equivalent qualification. Where will it take me? Great opportunities exist in supervisory and managerial roles across the hospitality sector, including cookery, food and beverage and front office. This programme also provides entrance to the second year of the Bachelor of Hospitality Management. Incorporates the City & Guilds Certificate and Diploma in Food and Beverage Service. Certificate in Hospitality Front Office (Level 3) Covers hotel reception, reservations and cashiering, food and beverage operations, porter service and housekeeping, to provide you with a comprehensive knowledge of the hotel sector. 4 3 WelTec graduate success story Belinda Dunn Catering Floor Supervisor, Te Papa Diploma in Hospitality Operations Supervision After completing secondary school, Belinda Dunn planned a six-month working holiday in Australia. Nine years later she returned to New Zealand after having worked in various hospitality roles in France, Ireland, England and Australia. When Belinda came back to her hometown of Whakatane she decided to move to Wellington to pursue formal hospitality training. She had worked in managerial roles while she was overseas but decided that she needed a formal qualification. With that in mind, she enrolled in a Diploma in Hospitality Operations Supervision at WelTec. She completed the one-year diploma in November last year, and had a role as a Catering Floor Supervisor at Te Papa lined up the next month. Belinda says, "I had been a manager in my previous roles, but I wanted to have a formal qualification behind me to help me move up the ladder. I enjoyed the programme at WelTec; it offered a lot of diversity and covered a broad range of areas. It built on my industry experience by providing the theoretical component that I had been missing. My tutor was great he could break things down and make it understandable for everyone. The one year diploma was perfect for me". She is grateful for her nine-year hiatus, it has given her invaluable experience and has helped her to establish where she would like to head with her career. "If you don t know then there is nothing wrong with taking some time out. It s good to get some experience first and then come back to study once you find something you are passionate about." "WelTec's programme built on my industry experience by providing the theoretical component that I had been missing." Belinda loves her role as a Catering Floor Supervisor at Te Papa. She can manage between 2-30 staff, depending on the type of event. Belinda and her team look after weddings, conferences, awards, lunches, dinners and cultural events. "Our job is to run the events and to make sure that everything is running as it should and that the guests are happy." Belinda is intending to stay put for the time being she is thoroughly enjoying being in Wellington and being part of such a vibrant and exciting industry. "The hospitality industry is mad; you have to be a little crazy to work the kind of hours we do and to deal with the stress, the pace and all the different types of people. I love the diversity my hours differ from day to day depending on what s happening. I get to meet all kinds of people with the various functions and I m learning at the same time. I find it really challenging and rewarding. I work in a national museum how amazing is that? I have an ocean view; it s more like a playground than being stuck in an office with four walls." Bachelor of Hospitality Management The Bachelor of Hospitality Management degree is designed for those who want to pursue a career in hospitality management. The programme will provide you with an in-depth understanding of business principles and practices in the hospitality industry. In the final year of the programme you will participate in a work placement, which will cement your theoretical knowledge in a work-based context. Study is built around 13 compulsory courses. You will then choose a further four courses from a range of optional courses, including food and beverage, accommodation, small business and event management. Entry requirements Entry is by way of completion of Year 13 with at least 42 credits at level 3 in relevant domains or approved subjects from the National Qualifications Framework (NQF), plus a minimum of eight literacy credits at level 2 (four in reading and four in writing) and a minimum of 14 credits at level 1 or higher in mathematics or Be 20 years of age at the start of the programme, satisfy WelTec of your commitment to the programme and demonstrate a reasonable likelihood of success 20 Where will it take me? Great opportunities exist at mid-to senior-level management in the hospitality industry. This includes conferences and events, restaurants, bars, cafes, adventure tourism, hotels and corporate traineeships. Further study options Some courses may be cross-credited from this degree to other qualifications within WelTec and to equivalent qualifications offered by other tertiary providers. In some cases, relevant life and work experience can be recognised as prior learning. Graduates of the programme have opportunities for further study through articulation agreements WelTec has with the following tertiary providers: Oxford Brookes University UK University of Delaware USA Cross-credit towards our Bachelor of Hospitality Management If you have completed a Diploma in Hospitality Management or similar, you may be able to credit it towards our Bachelor of Hospitality Management. We offer cross-credit opportunities from related diplomas awarded at other polytechnics and institutes of technology across New Zealand. If you would like further information regarding this, please call us on 0800 WelTec ( ). or Have successfully completed an approved tertiary equivalent level qualification or Have completed Year 12 with at least 72 credits at level 2 in relevant domains or approved subjects from the NQF. If you do not meet the above criteria, you may apply for provisional entrance providing you: are a New Zealand citizen or permanent resident and have received secondary schooling to at least Year 12 level or its overseas equivalent, and have achieved a minimum of 14 credits in an approved subject at level 2 towards NCEA. For applicants who have English as a second language, a minimum IELTS score of 6.0 or equivalent is required.

6 5 WelTec graduate success story Stephanie Baxter Reservations Manager, James Cook Hotel Grand Chancellor Bachelor of Hospitality Management Stephanie Baxter wasn t quite sure what direction she wanted to go in after finishing school. After three years working in various café and administrative roles, she made the decision to resume her studies. I wanted to do a degree that would lead me into something, not just be another student who has a BA (Bachelor of Arts). Stephanie made the decision to enrol in a hospitality management programme. After doing some research on the programme offered at WelTec, she decided to put the Bachelor of Hospitality Management (BHM) to the test, and contacted a number of hotels in the Wellington region to see how a WelTec degree in hospitality rates in the industry. Confident with the response, Stephanie enrolled at WelTec. Of the BHM Stephanie says, I knew my career path would focus on management and hospitality and I felt that it was applicable to what I might be doing. Asked what distinguishes the BHM from other available programmes, Stephanie says it is the practical element, knowing all the theory and knowing how it applies in the industry. It shows employers that you are passionate about hospitality. It s a well-rounded course; we learnt about hotel, food and beverage, front office and restaurants. We learnt from really great tutors who had all worked in the industry it made you believe that they knew what they were talking about. It was very different from school, a lot more interesting, more applicable to life. "I wanted to do a degree that would lead me into something, not just be another student who has a BA (Bachelor of Arts)." While still completing her studies, Stephanie was offered a reception position at The Museum Hotel, and was promoted to Acting Front Office Manager soon after. Through networks she developed in the industry she heard about a position of Reservations Manager at the James Cook Hotel, Grand Chancellor. She has now been in the role for nine months. When asked what the best part of her job is she says, You get to see so much of what goes on in a hotel, where it all starts, and you are able to interact with all the other departments. Stephanie intends to take her degree overseas at some stage and then return to Wellington with even greater experience. Stephanie is confident that her qualification will be well received abroad. Asked what the best part of completing a degree at WelTec is, she responds, You have a lot of opportunities to learn about the industry. You can feel confident that you can actually do the job when you leave. Other hospitality study options Certificate in Hospitality Front Office (Level 3) Incorporating the City & Guilds Certificate & Diploma in Reception Operations and Service. If you like the idea of working with a broad range of people in a fastpaced, dynamic industry, then hotel front office may be for you. The programme covers hotel reception, reservations and cashiering, food and beverage operations, porter service and housekeeping, to provide you with a comprehensive knowledge of the hotel sector. You will gain real-world experience through a work placement and site visits, which will assist you to gain employment on completion of the programme. Certificate in Food and Beverage Service (Level 3) Incorporating the City & Guilds Certificate in Food and Beverage Service. Designed to provide you with a broad knowledge of all front-of-house services, this programme includes a large practical component where you will work with real customers in WelTec s training restaurant Bistro 107. This programme leads into the Certificate in Food and Beverage Service (Level 4). Certificate in Food and Beverage Service (Level 4) Incorporating the City & Guilds Diploma in Food and Beverage Service and the Wine and Spirit Education Trust (WSET) Level 1 Foundation Certificate in Wine. This internationally recognised qualification has been developed to provide you with a comprehensive knowledge of all aspects of food and beverage service. You will gain real-world experience working in WelTec s training restaurant Bistro 107 during your studies, which will be invaluable in assisting you to find employment. Certificate in Food Preparation and Culinary Arts (International) (Level 4) Incorporating the City & Guilds Certificate and Diploma in Food Preparation and Culinary Arts. Taught by highly regarded and award-winning chefs with a wealth of experience in the industry, this programme combines theory with practical hands-on learning to ensure you have the skills that employers need. You will gain real-world experience through industry work placements and in WelTec s training kitchen Bistro 107. Certificate in Patisserie (International) (Level 4) Incorporating the City & Guilds International Diploma in Patisserie. Ideal for those wanting to pursue a career as a patisserie chef as well as for those wanting to further their cookery skills. This programme focuses on providing you with the skills to create a wide range of desserts, cakes and pastries.

These include: InterContinental Wellington The top student from the Bachelor of Hospitality Management will automatically be short-listed for the much sought-after InterContinental Hotel Group Management Traineeship programme. Star Performer Awards In keeping with its commitment to staff development, Hotel InterContinental Wellington has combined with WelTec to offer full-time employment for star performers in the following categories: City & Guilds International Certificate & Diploma in Reception Operations and Services City & Guilds International Certificate & Diploma in Food and Beverage Service City & Guilds International Certificate & Diploma in Food Preparation and Culinary Arts These full-time positions will be offered to the top student in each of the above categories at the end of the year. Additional information can be gained from your tutor once you have commenced study. The Rarotongan Beach Resort and Spa and the Aitutaki Lagoon Resort and Spa WelTec has partnered with these two resorts to offer work experience and job opportunities at the resorts to WelTec cookery, food and beverage and hospitality front office students. WelTec also offers specifically developed training to resort staff in all aspects of their business. Staff can gain internationally certified City & Guilds certificates and diplomas as well as be part of the New Zealand Hospitality Standards Institute's Apprenticeship programme. City and Guild Qualifications Many of our hospitality programmes include City and Guilds certificates and diplomas. These qualifications are well respected and recognised in over 140 countries around the world. This means that you will get a qualification that you can travel with. The Bay of Many Coves The Bay of Many Coves is located in the Marlborough Sounds and offers luxurious apartment-style accommodation. It is marketed as the sanctuary by the sea. Located in the heart of the wine growing area of New Zealand, it is well known for fishing, sailing, kayaking and walking. Lisa Bardebes (General Manager) and Mike Jensen offer WelTec students work experience and have industry placements available over the busy summer period.

8 7 Student exchanges To support your learning, and to encourage you to gain an international perspective of the industry, WelTec has a range of international education partnerships which include exchanges with: CESSA University, Mexico The CESSA student exchange alternates between WelTec and CESSA University in Mexico. This exchange offers students and tutors the opportunity to visit Mexico City, take classes and learn about the way people live and cook local food. It also provides students with the chance to see how the hospitality industry operates overseas. Sekolah Tinggi Pariwisata Bali (STP Bali), Bali WelTec s latest student exchange programme is with STP Bali, the leading hospitality and tourism education college in Bali. The partnership is for staff and student exchanges between the two tertiary institutions, and also provides for students from STP Bali to come to New Zealand to complete WelTec s degree programme in Hospitality Management, or international qualifications such as City & Guilds certificates and diplomas. This exchange will provide our students with the opportunity to learn about the Balinese culture, local food and Indonesian cookery techniques. General information Facilities Our hospitality programmes are taught in purpose built facilities, which include four training kitchens, a production kitchen, a latte lab, bar training room, a model hotel room and a replica hotel reception. Our training restaurant, Bistro 107, is open throughout the academic year to the public for lunches and dinners. Our Food and Beverage and Cookery and Culinary Arts students run the restaurant as part of their study. This ensures that they receive real experience working in an industry environment. 9 8 Course outlines Diploma in Hospitality Operations Supervision and Bachelor of Hospitality Management Course number HM6102 Course name Introduction to Hospitality Operations Introduces you to the hospitality industry, principles of food and beverage service and front office systems and service. A considerable focus is placed on training in kitchen, restaurant and front office areas. This will provide you with an awareness of operational requirements for food and beverage and accommodation within the industry. BM6109 BM6110 TM6101 Hospitality Services Marketing Provides you with the skills required to enable excellent decision-making for products and services marketing in the hospitality industry. Personnel Supervision Provides you with skills and knowledge in the supervision of human resources employed in general or specific roles in the hospitality industry. Principles of Tourism Provides you with an overview of the tourism industry and the factors that influence its structure and development, with specific reference and application to New Zealand. HM6103 Hospitality Law Provides you with a working knowledge of legislation that has a direct impact on the operational management of various hospitality enterprises. HM6201 Management Methods for the Hospitality Industry Learn how to understand and evaluate management control mechanisms within the hospitality and tourism industry, as well as a number of quantitative analysis methods. HM6104 BM6105 BM6106 Applied Practice Provides you with the opportunity to apply theory and learning to practical management in a hospitality industry context. Business Communication Provides an introduction to theoretical principles and practices associated with effective intrapersonal and interpersonal communication, oral and written communication and cultural identity. Accounting for Hospitality Managers Provides you with a clear understanding of financial reports, statements and their components. You will also learn how to interpret and analyse them. HM6203 HM6205 Human Resource Management for Hospitality and Tourism I Provides a context for acquiring knowledge, understanding and competence in the management of human resources in hospitality and tourism businesses. Functions and roles of human resources, needs of different organisations, staff training and industrial law are considered. Front Office Operations To provide a context for acquiring knowledge, understanding and competence related to the provision and standards of front office services that will ensure that customer needs are met through professional service Prerequisite: HM6102 BM6108 Introduction to Organisations and Management Provides you with a clear understanding of managerial processes. You will also become familiar with the application of general management theories that will provide a good basis for organisational analysis. HM6206 Food and Beverage Operations Provides you with an understanding of the operations and management of food and beverage services in the hospitality industry. Prerequisite: HM6102

10 9 HM6211 Tourism Planning Concepts HM6306 Marketing Management Covers the concepts of tourism planning. Emphasis is placed on the implications for planning processes for tourism businesses in relation to heritage and environmental issues in the context of the Pacific Region. Provides you with knowledge of managing the marketing function and the development of strategic marketing objectives. Prerequisite: BM6109 HM6212 Event Management Provides you with the skills and knowledge to undertake effective planning and production of a range of specialised events, from small exhibitions, private parties and conferences to large-scale sport and entertainment events, and to increase your understanding of the events industry in its broader business context. Specific content deals with management, logistics, legal considerations, budgeting, staging, marketing and evaluation. HM6307 HM6309 Human Resource Management for the Hospitality and Tourism Industry ll You will gain practical skills and knowledge in the strategic management of human resources in hospitality and tourism businesses. Prerequisite: HM6203 Small Enterprise Practice Provides you with an understanding of the key principles involved in the planning, operation and evaluation of small hospitality enterprises. HM6302 HM6303 Accommodation Management Provides knowledge, skills and techniques related to the management and maintenance of premises and accommodation services applicable to all types and sizes of hospitality operations. Prerequisite: HM6205 Food and Beverage Management Provides you with a clear understanding of management decisions from the perspective of an operational feasibility study for the opening of a new operation. Areas of production, service and development are evaluated in depth, with particular attention to changing customer expectations. Prerequisite: HM6206 HM6311 HM6312 Special Topic Provides you with the opportunity to research an area of special interest to enhance a particular area of completed study, or to broaden the range of areas studied. This can be achieved by undertaking and documenting a review/ evaluation of literature in a particular field of hospitality or tourism. Prerequisite: All theory modules Applied Practice Provides you with the opportunity to apply theory and learning to practical management and work-based problems in a hospitality industry context. HM6304 Financial Management Provides you with a broad overview of financial management in the hospitality industry. You will learn how to synthesise plans and strategies through the use of case studies and to understand the concepts of financial management. Prerequisite: BM6106 Co-requisite: HM6201 This paper will normally be completed in the final semester of study as it assumes prior knowledge in various areas of organisational management. You will be required to gain placement within an organisation, where you will observe processes and procedures in food and beverage and accommodation departments. Particular focus will be placed on strategic direction, human resource practices and food and beverage and accommodation operations. HM6305 Hospitality and Tourism Strategic Management Prerequisite: All theory modules Provides you with a clear understanding of strategic management, which is the management process aimed at improving organisational effectiveness through a systematic set of strategic goals, plans and actions. Prerequisite: BM6108

11 10 Student Support Services WelTec's student support services and policies are designed to make your experience with us as pleasant as possible. They include: Learning Support The Learning Support Centre provides friendly and confidential assistance through a team of specialist staff and peer tutors. Help is available with study/exam skills, time management, writing, reading, comprehension, maths and spelling. We also offer a Personal Education Planning (PEP) system, which is designed to get you on the right path to success by assessing your course choice and study goals. WelTec s Library has a wide variety of print and electronic resources to support your learning. Student Health & Counselling WelTec s Health Centre has an on-site nurse available to help with healthrelated needs and first aid treatment (based at our Petone campus). A free confidential counselling service provides support for students with problems that may impact on their learning success. A career counsellor is available to assist students to clearly define their study and career goals Disability Resource Centre The Disability Resource Coordinator is available to discuss support services, special equipment and other assistance available for students with a disability. Childcare Te Whare Ako WelTec s purpose-built Early Learning Centre provides care for children of WelTec students and staff from the age of three months to five years. Te Whare Awhina The Maori Liaison Officer supports the participation and success of Maori students at WelTec through advice, support and enrolment resources, including scholarships. Pasifiki Centre WelTec s Pacific Education Advisor is available to provide advice and assistance with study, career planning, scholarships and enrolments. Students Association The Students Association independently supports and represents all students within WelTec and provides a regular newsletter to keep you in touch with important issues. Membership of the Students Association at WelTec is compulsory. Recognition of Prior Learning General Provisions Wellington Institute of Technology recognises prior learning for skills and knowledge gained within non-formal (work and/or life experience) settings. WelTec's policies on the recognition of prior learning relate specifically to unit standards registered on the National Qualifications Framework. In general, people may seek recognition of prior learning where their application will be relevant to a WelTec programme they wish to study (a fee applies per application). WelTec's policy and procedures are set out in its Quality Management System. Information about the application process is set out in the Institute s publication Recognition of Prior Learning Information Guide. Copies of the publication are available from the main reception in A-Block (Petone Campus). Cross Credits Credit exemption and credit transfer (cross-credits) of one or more parts of a programme may apply to programmes that do not cover unit standards. Credit exemption enables a student to achieve a programme qualification or award without completing those parts from which they have been exempt. Exemptions may be awarded, for example, where a student has successfully completed more advanced study of parts of a programme. Credit transfer is a process whereby credits already achieved are recognised towards a new qualification. It is a way of recognising formal learning and can be awarded when a course passed previously is equivalent to, or a level above, a WelTec course. All applications for exemptions and credit transfer must be made to the relevant Head of Centre. Qualifications Awarded by Overseas Institutions People seeking credit towards a qualification offered by Wellington Institute of Technology on the basis of qualifications awarded by overseas institutions, or for formal study undertaken at an overseas institution, must provide an evaluation by the New Zealand Qualifications Authority of their qualifications or study. The purpose of the evaluation is to provide the best possible match between the learning undertaken overseas and its New Zealand equivalent.
