Welcome to Leiths Academy 3 Leiths provides a range of popular cooking courses for schools that enable your pupils to gain an important life skill whilst taking part fully in their normal school day. Leiths understands the challenges of a busy school life and will work with you to achieve a good outcome for your particular structure or curriculum schedule. Leiths School of Food and Wine has an international reputation as a first class cookery school and has trained TV chefs including Lorraine Pascale, Gizzi Erskine and Matt Tebutt, produced Michelin-star chefs including Joe Mercer-Nairn (Medlar) and Matt Christmas (Chez Bruce), well known food writers including Diana Henry, Xanthe Clay and Lulu Grimes and food producers such as Alan Rosenthal, owner of stewed! and Camilla Stephens of Higgidy Pies. Support and Training Leiths will train your teachers to teach our cooking courses using our methods, ensuring that your pupils will learn the same professional skills and techniques that have been perfected by Leiths staff over many years. We provide an initial two day training course at Leiths in London followed by annual refresher training, along with all course materials and continued behind the scenes support. Schools opting to run the 5 term Introductory Certificate in Food and Wine will receive 8 Leiths visits in total during the course. This provides us with the opportunity to get to know the students and assess their progress. We will offer advice and guidance to help each pupil achieve the best they can whilst providing support for the class teacher. Cooking teachers at participating schools are offered a special saving on any courses at Leiths as part of their in-house continued professional development.
4 Leiths Introductory Certificate in Food and Wine (5 terms) This comprehensive and exciting introduction to cooking gives your pupils a thorough understanding of culinary techniques, and the chance to explore the science behind them. With training in understanding recipes, time management, menu planning, food presentation, food safety and hygiene, pupils will gain a solid practical foundation as well as an impressive repertoire that will enable them to cook confidently, either independently or in a group. Leiths promotes a positive attitude towards food and students will be trained in healthy eating and adapting recipes for a balanced lifestyle. They will learn how to buy and store food sensibly, be taught store cupboard recipes and creative uses for leftovers, and be given an introduction to wine. As well as learning an essential toolbox of cooking skills, students will learn to cook a range of delicious recipes from around the world including Goujons of plaice with tartare sauce; Duck breasts with ginger, chilli and lime; English roast chicken with all the trimmings; Rack of lamb with mustard crust; Za atar crusted prawns with a bulghar wheat and herb salad; Summer berry pavlova and Homemade ice creams. By the end of the course, whether going on to fend for themselves at university, cook for friends and family or cook professionally, your students will have developed the skills, knowledge, confidence and enthusiasm to enjoy a lifelong love of food and cooking. SUITABLE FOR: Years 12 and 13 (5 terms) This course fulfils the requirements for the New Skill section of the Duke of Edinburgh Gold Award, and is an ideal additional skill for the UCAS Personal Statement. ASSESSMENT Continuous classroom assessment Coursework focusing on menu planning, writing timeplans and informal tests 2 ½ hour practical exam covering dishes cooked during the course - assessed by a Leiths teacher Theory exam on skills learnt and developed throughout the course - assessed by a Leiths teacher. For the most motivated students, this qualification could lead to professional employment. Pupils completing this course often find employment in the food industry during their GAP year and beyond, including catering for private clients or in a variety of seasonal jobs in the UK and abroad. For students with professional ambitions, the successful completion of the Introductory Certificate is a fast track to the Leiths Two Term Diploma, a culinary alternative to university.
cooking is an extremely useful life skill there are a lot of cross-curricular applications: you don t just learn about food, you touch upon mathematics, economics, chemistry and biology, as well as improving your own time management. 7 Leiths Cookery Toolbox (12 sessions) Consisting of twelve 1.5 hour cooking sessions, this hands-on, fun-packed course will give students, working as a pair, the opportunity to master the building blocks of cooking. Pupils will gain a range of key cooking skills including knife skills, time planning, food safety, and hygiene and healthy eating as they learn to cook tasty dishes such as Moroccan lamb tagine and herb couscous, Rosemary foccacia, Macaroni cheese, Salmon fillets with a sweet and hot crust, Roast with all the trimmings and Chocolate roulade. Pupils will complete a time plan for each lesson and a diary to illustrate their understanding of all the topics covered. In the final session pupils will cook a celebratory Middle Eastern sharing menu. Upon successful completion of the course they will receive a Leiths Certificate of Attendance. From simple meals to food for friends, your pupils will gain the skills and inspiration to keep on cooking with confidence long after the course has finished. SUITABLE FOR: Years 10 13 This course fulfils the requirements for the New Skill section of the Duke of Edinburgh Bronze Award. My daughter loves her Leiths lessons a total change from academic time at school. It does require effort on her part but fits in with an already busy schedule. She is gaining a set of skills which will last for life whatever she does in the future, cooking and a love of good food will play a major part. 8 Let s Cook! Leiths has created a series of fun and flexible cooking sessions designed to fit around your timetable. 1 or 2 hour classes, to suit your timetable Differentiated courses appropriate for junior school years 5 and 6, and senior schools year 7 and above Stand alone sessions to support the curriculum, to weekly cooking courses that run from 1 to 3 terms Courses for schools without cooking facilities or equipment, that can be taught on portable stoves anywhere with a water supply, be it art room or cricket pavilion. Students will learn a range of key cooking skills as they cook recipes such as Salmon fillets with lime crust, Rosemary chicken kebabs with sundried tomato and basil couscous; Indian spiced vegetable samosas with yoghurt, mint and cucumber dip; Millionaires shortbread; Fruit granola crumble, and Ginger lime cheesecake with glazed strawberries. 9 Short courses at Leiths, London Let s Cook! The Cookery Toolbox for Teenagers (13 years 17 years) Four days of fast-paced, hands-on cooking for budding chefs, 13-17 year olds will gain a range of key cooking skills as they learn to cook recipes including Sweetcorn fritters with chilli dipping sauce, Homemade pasta, Italian chicken with pesto potatoes and Chocolate mousse, the results of which can be taken home to impress. Young chefs will emerge from the Leiths kitchens eager to show off their new found skills. One Week Cookery Bootcamp (16 years+/18 years+) From baking the ultimate brownies to the perfect Sunday roast, this fun-packed, one week introduction to cooking is perfect for those with a passion for food and entertaining and ideal for those heading to sixth form or university. Filled with practical tips and techniques for the budding chef recipes include Ginger and chilli stir fried pork, Roast chicken with roast potatoes and Chocolate roulade. The week ends with a fun and creative cook-off as students put their new found skills to the test. I am not from the UK so everything was very new to me. 10 Teenagers one day classes at Leiths During the school holidays Leiths runs a range of cooking classes for 13-17 year olds.
