Learn some new cooking skills and techniques; discover some inspirational recipe ideas and add to your understanding of healthy food choices to help manage your diabetes.

2 Venue The Cookery School at Braxted Park is a beautiful Queen Anne house set in 500 acres of parkland in the picturesque Essex countryside. Easily accessible, Braxted Park is situated between Chelmsford and Colchester. The award-winning chefs are hand-picked to ensure you have the finest cookery experience that will inspire you to take your new-found skills into your kitchen at home. The day is suitable for everyone from complete beginners to budding chefs and an experience you will never forget. Together we will prepare and enjoy a specially selected menu of healthy dishes under the expert guidance of author and Chef, Ursula Ferrigno. With only a limited number of places available, this is a perfect gift or experience for people with Type 1 or Type 2 diabetes or your family and friends who want to learn more too. Our tutor - Ursula Ferrigno Italian Chef, Presenter, Teacher and Writer of 17 international books, Ursula Ferrigno learned to cook the traditional Italian way, helping her grandmother to prepare traditional family dishes. She regularly returns to Italy for family visits and to teach cookery. A talented chef and prolific food writer, Ursula is passionate about teaching Italian cookery to both professionals and amateurs, passing on her knowledge of regional and national dishes including freshly baked breads, including Focaccia and Ciabatta which form an essential part of any Italian meal. Ursula has taught at renowned establishments such as Leith s, Divertimenti and Caldesi in Ireland and has been a consultant to Café Nero for 15 years. She has written for a number of food magazines and appeared on numerous radio and television programmes, including BBC Radio 4 s, The Food Programme. Keen to share her love of all things Italian and edible, Ursula is the author of 17 international cookery books including Trattoria, Ursula Ferrigno s Cookery Course, the New Family Bread Book and La Dolce a book of divine desserts and sweets. As well as the above, Ursula is also teaching a variety of classes at The Cookery School at Braxted Park.

3 The day Under the expert guidance of our tutor Ursula Ferrigno and using the freshest ingredients, we will prepare a specially selected menu of healthy dishes that are bursting with flavour and an Italian twist. There will be something for all tastes and dietary requirements. The step-by-step tuition is fun and easy to follow. We will be working in pairs and as a team, so the whole day is very interactive and no one is left on their own. The cookery school team will be on hand to help throughout the day and you will learn everything you need to produce the perfect dish. The teaching kitchens are state of the art and overlook the beautiful Braxted Park estate. The day will begin at 9.15am with welcome tea and coffee and a chance to meet our fellow team members. We will be introduced to Ursula who will run through the menu, do a health and safety briefing and tell us what to expect for the rest of the day. At around 3pm, after a busy day of cooking, our efforts will be rewarded with glass of wine and a sit-down meal, so we can enjoy the fruits of our labour, relax, share hints and tips while enjoying the menu we have prepared. Everyone will go home with their own Braxted Park apron and a folder of the recipes we have prepared on the day.

4 The menus With Christmas and the winter months looming, you can be sure that plenty of hearty seasonal food and festive treats will be on offer at all those parties and family gatherings, and sparkling enticingly to us from the supermarket shelves. For those watching their waistlines or managing their diet this can be a tough time of year to deal with, but for people living with diabetes this seasonal challenge can be an especially difficult one to navigate. That s why, at this year s Cooking for Diabetes, Good Health and Wellness day we have decided to tackle some traditional Christmas dishes and seasonal recipes to see how we can make them healthier and nutritional while keeping the tasty fun factor. At the same time you will learn some new cooking skills and techniques and add to your understanding of healthy food choices to help manage your diabetes. It doesn t matter whether you attend the day by yourself or with a friend because we will be working in pairs and as a team, so the whole day is very interactive and no one is left on their own. The cookery school team will be on hand to help throughout the day and you will learn everything you need to produce the perfect festive dish. DRWF have worked closely with the team at Braxted Park, our tutor Ursula Ferrigno and Specialist Diabetes Dietitian Pamela Dyson from Oxford and Radcliff Hospitals NHS Trust and author of our new Information Standard Accredited leaflet A Healthy Diet and Diabetes to ensure the menu for the cookery day is suitable for people with diabetes. Of course, in a world of culinary delights, there are thousands of dishes we could have chosen to cook together. We hope the recipes we have picked for you will demonstrate the wonderful variety out there for people with diabetes and prove that living with the condition needn t be a barrier to experiencing an exciting and varied choice in food. We also hope the day will give you both the confidence to go home and try something new and the incentive to learn more about your dietary and nutrition requirements while improving your day-to-day diabetes management. Health and safety Everyone s welfare is paramount, so like any kitchen we will need to observe some basic health and safety rules to ensure we have a safe and enjoyable day. All participants should wear shoes with flat, non-slip soles and covered toes. Sensible clothing must also be worn i.e. not your best outfit and long hair should be tied back or covered. It s all about common sense really.

5 Other questions Who will be there? There will be a mixture of people attending the day. Most of our group will be made up of people with Type 1 and Type 2 Diabetes and even some friends and family members. Some people will be coming to the day by themselves and others will come with partners. If you haven t been to one of our events before and feel a little bit anxious about what to expect, there is no need to. Our group is always full of warm, welcoming and friendly people who all have something in common. You will be welcomed by the group and feel at home in no time at all. Can I bring a friend or partner? Of course you can, each year our events are made up of people attending on their own or with a partner, friend, husband, wife or family member. However, as mentioned above, once you arrive you will find that you are in the company of friends for the duration of your stay. Do we get breaks? Yes. We will stop for regular comfort and refreshment breaks throughout the day. This will allow us to rest our legs and enjoy a well earned cup of tea or coffee and biscuit. It will also give you a chance to have a chat with the rest of the group and ask the DRWF and Braxted Park team members about any questions you may have. How do I get there? Braxted Park is easily accessed from different directions of the A12. The Braxted Park estate is situated in Witham near Colchester. If you decide to join us, Lee at DRWF will supply you with detailed directions and a map prior to the event.

6 What about Accommodation? The team at Braxted Park has negotiated some fantastic bed and breakfast rates with several local hotels including the Best Western Hotel in nearby Marks Tey. If you decide to travel to Braxted Park the day before the event and would like a list of these hotels, please contact Lee at DRWF and he will be happy to provide you with the details How much does the day cost to attend? We have worked closely with the team at Braxted Park to put together a fantastic package for you. The full cost to attend this all-inclusive day is normally 135 per person. However DRWF is able to subsidise the cost of attendance by 25% for Diabetes Wellness Network members as part of the charity s annual educational event programme. The 25% discount reduces the cost of attending to 100 per person. What does the cost include? The cookery day is fully inclusive, so your fee for attending covers everything from the moment you park your car to the moment you go home.
