Enderun Hospitality Management The Leadership Team Tricia Tensuan Sales and Marketing Ms. Tricia Tensuan is the vice-president for admissions and external relations of Enderun Colleges. She has over to 14 years work experience in the hospitality industry, gaining expertise in both operations and marketing of hotels. She worked with Mandarin Oriental Manila in the food and beverage department, and was also part of the pre-opening team of EDSA Shangri-la Hotel where she honed her front office skills. She worked her way up to guest relations manager, then later moved to the sales department. As sales manager, she consistently brought in the highest contribution to the hotel's total room revenue. She became part of the pre-opening team of Discovery Suites where she continued to be the top sales manager. In 2003, she was promoted to director of sales and marketing where she motivated the team to surpass all revenue and quality service goals. Ruth von Siebenthal Hung Housekeeping and Facilities Management Swiss-British Ms. Hung is a principal lecturer in International Hospitality Management. A Certified Hospitality Educator obtained from Cornell University, she has extensive experience in education and in the hospitality industry. She has completed her diploma in Kitchen Service and Administration from Ecole Hotelière de Lausanne in Switzerland, and was conferred the title Certified Hospitality Educator by Cornell University. She also holds the title of Certified Teacher from Hong Kong Polytechnic University and the School of Professional and Continuing Education (SPACE) of Hong Kong University. Ms. Hung has held senior management positions in Hong Kong with the Peninsula Group, Royal Hong Kong Yacht Club, Furama Hotel Intercontinental, Kempinski and Holiday Inn Golden Mile. Her professional expertise lies on housekeeping, food and beverage management and catering. A former catering director at Hotel Furama Intercontinental which later became Furama Kempinski, she pursued teaching at the Hong Kong Technical College where she became a founding faculty member its Department of Hotel and Tourism Management. Her teaching scope included Housekeeping, Food and Beverage Service and Front Office Operations. Thomas Wenger Food and Beverage Operations Chef Thomas Wenger is senior culinary academic consultant at Enderun. His industry experience spans over 25 years, including posts as executive Sous chef at The Oriental Singapore and Makati Shangri-La, and executive chef posts at Royal Hong Kong Jockey Club, Le Royal Meridien Bangkok, Le Meridien President Bangkok, and prior to Enderun, at Mandarin Oriental Manila. This Swiss chef was also trained at Ecole Hoteliere de Lausanne in Switzerland and The Royal Institute of Public Health in London. Our Services Getting to know the Property When we take on a property we make an initial property visit during which our goal is to gain a complete understanding of the physical facilities, their condition, the market environment, operating procedures, and existing management personnel. From this point, we are able to formulate and begin to implement the changes that will be necessary to operate the hotel more efficiently and maximize revenues. Cash Flow Maximization In addition to maximizing revenues and managing expenses appropriately, this includes regular cash flow forecasting, weekly cash sweeps to concentrating accounts with excess funds automatically invested. We will monitor and help challenge real estate taxes and insurance costs. We will make debt service and other payments for the owner and assist in debt renegotiation. Business Planning Proper planning and information is required for a hotel to best reach its operating potential. Enderun Hospitality Management & Consultancy sees to it that a Business Plan is prepared annually for each hotel that we manage. The plan includes details on the hotel's market, capital improvement needs, and operating history. The preparation of the plan involves the use of activity calendars for planning and future monitoring. The information provided will work to support the hotel's marketing plan and operating budget. Property Visits Visits to the property occur on both a regularly scheduled and unscheduled follow-up basis for the purpose of inspection, consultations with management personnel, and ongoing operations and marketing reviews. Our quality control process also includes regular visits by anonymous shoppers who use report formats tied to our operating standards. This allows us to see our hotels through a customer experience. Weekly Reports We provide weekly reports to owners depending on their needs, such as weekly reports detailing month-to-date revenues, occupancy and Average Daily Rate (ADR) for the current month.
