1 Wholesale bread information Artisan, rustic and wholegrain breads -Traditional baguette- Description: A creamy white, irregular, delicately flavoured and moist with a thick crunchy crust. And an excellent keeper. Our traditional baguettes are made using a poolish - a batter like pre-ferment. The process involves mixing equal parts of flour and water, with a very small amount of yeast, and leaving this mix for a day. On day two the final dough is made the poolish being incorporated into it. When fresh just great with everything. A delicious bread. Ingredients: Wheat flour, water, salt, yeast. 2 -Chewy brown- Description: Our most popular bread! A rustic bread with a thick crust and a distinctive mellow rye flavour. Made by cutting loaf-size chunks from large tubs of fermented dough and loading straight into in to the oven. The Chewy Brown is also an excellent keeper. Pretty much anything! Extremely versatile but makes superb toast. Ingredients: Wheat flour, water, rye flour, fermented rye flour, salt, yeast, wheat gluten, toasted rye malt flour, burnt sugar, wheat malt flour, antioxidant: E300 (vitamin c) Possible trace: Soya and products thereof, milk and products thereof, walnuts, almonds, -Chewy white- Description: A rustic bread with a thick crust and a well-developed flavour. 3 -French wheat cob- Description: An everyday, quality white loaf made with a slow dry prove and baked in a hot oven to give a superb tasting caramelised crust and moist crumb. Ingredients: Wheat flour, water, salt, yeast, deactivated rye sourdough, wheat gluten, rye flour, emulsifier: E472, antioxidant: E300 (vitamin c) Possible trace: Soya and products thereof, milk and products thereof, walnuts, almonds, -Light rye, walnut and rye and pumpkin rye- Description: A light rye made with a mix of wheat and rye flours. Thick crunchy crust, delicate, sweet flavour, which is accentuated by walnuts or pumpkin seeds. Contains around half the gluten of a normal wheat loaf. Salads and mopping up dressings, cheeses, smoked foods Ingredients: Water, wheat flour, rye flour, salt, palm oil, rapeseed oil, emulsifiers: E471, E472; antioxidant: E300 (vitamin c). 4 -Multi-cereal- Description: A moist seeded loaf with sweet nutty flavour, this is the best-selling of the seeded breads and with good reason! Notable for the broad range of flours in its ingredients. Available as a tinned or cob loaf, also as a baguette or roll. Bread and butter bread! Great with sweet and savoury alike. Ingredients: Wheat flour, water, sunflower seeds,, rye flour, brown flax seeds, yellow flax seeds, oatmeal (coarse oat flour), barley flour, salt, yeast, wheat gluten, barley malt, wheat flour, E472, antioxidant: E300 (vitamin c), malted barley, Possible trace: eggs and products thereof, milk and products thereof, walnuts, almonds, -Rustic sungrain- Description: Made with lots of sunflower seeds. this bread has a delicious softness and sweetness of flavour. The natural oils contained within the seeds helps the loaf keep well Anything. 5 -Rye Sourdough- Description: Fairly dense, moist crumb with thick crust. Strong tangy flavour. Like spelt, rye bread is easy on the digestive system as it contains around 10% of the amount of gluten within a wheat loaf. No commercial bakers yeast is used in this bread, the prove relying entirely on the rye sourdough starter. Cured meats, hard cheeses. Very good when lightly toasted Ingredients: Water, rye flour, salt Possible trace: soya and products thereof, milk and products thereof, walnuts almonds, -Wheat sourdough- Description: Made using the French levain method this loaf has an irregular, moist crumb structure with some big holes, thick crust and lots of flavour which comes from its very slow fermentation. In summer no baker`s yeast is used to make this bread and even in the depths of winter a maximum of 2g yeast/kg flour is used. This is around 10% of normal levels. Like any white bread this is a good all-rounder and makes great breakfast toast for spreads and eggs alike. 6 Alternative cereal breads -Chia- Description: Very light, tender, pale yellow crumb containing chia and other seeds. Thin crust. Its colour comes from the maize contained in the flour. Chia seeds come from the plant Salvia Hispanica and were consumed by the Aztecs as a staple food. They are rich in omega-3 fatty acids and have an unusual, subtle flavour. Tasty and extra healthy! Jams and savoury salads sandwiches Ingredients: Wheat flour, chia seeds, extruded maize, sunflower seeds, wheat gluten, salt, tomato powder, wheat malt flour, mashed potato flakes, barley malt extract, thickener E412, emulsifiers: E471, E472; dried wheat sourdough, tapioca starch, spices, acidity regulator: E262, antioxidant: E300 (vitamin c), spice extracts Possible trace: eggs and egg products, soya and products thereof, milk and products thereof, walnuts, almonds, mustard, lupin and lupin products, -Fjord- Description: A rich, dense, dark Scandinavian style bread packed full of seeds and with added herbs and spices. We are generous with the amount of olive oil we use and this can be tasted coming through the delicate flavours of the flours themselves. 9 -Focaccia- Description: A light, irregularly crumbed, soft crusted, Italian bread made and topped with extra virgin olive oil plus various other Mediterranean ingredients Like ciabatta, focaccia are great with a steak or a burger.
