2 ABOUT US PASSION We are passionate about bread, pastries and cakes and strive to preserve the culture and tradition of artisan baking. We love to share our passion for great products and are keen to build partnerships and innovate together with our customers. Our heritage of working with Michelin-starred chefs has given us a strong understanding of customer needs. We want to be the best that we can and are happy to work with you on development projects, just let us know. CRAFT All our products are handmade by our skilled bakers, fresh each day. We source ethically and locally, where possible, to make sure we use the best ingredients we can from fresh rosemary and thyme in our sourdough loaves, to freerange eggs and the best British and French butter in our cakes and pastries. SERVICE We want to offer the best level of service to our customers. Our drivers deliver 365 days a year and our customer care team is here to help seven days a week. We know how important food safety is and are proud to hold a Grade A BRC accreditation. CARE We hate to see our products go to waste so we operate a just-in-time production, keeping our wastage below 0.1%. Anything we do have left we give to charity and all our leftover dough is baked off and sent to a local farmer as feed for his pigs. RECOGNITION We have received many awards recognising our company and products. In 2015, we were awarded 13 Gold Stars at The Guild of Fine Food s Great Taste Awards, building on the 12 we received in At the Tiptree World Bread Awards we won the overall sourdough category and were runners-up in the glutenfree and flatbread categories, while also taking home five Gold, eight Silver and seven Bronze awards. We are also proud to have won The Growth Business Award by The Food and Drink Federation and to have been finalists in The Customer Focus and Growth Business categories at The National Business Awards. This brochure contains a selection of our favourite breads, pastries and cakes but we have more products to meet your needs. 3 OUR SIGNATURE LOAVES CLASSIC LOAVES Most of our signature breads are sourdoughs. Sourdough breads use natural yeast to make the bread rise. The natural yeast cultures, also known as starters, mothers or levains, can be kept alive indefinitely with a portion being removed to make each new batch of bread. We nurture seven starters and periodically create new ones to give each of our breads their own characteristics. Sourdough breads take longer to prove (rise) and develop complex structures and flavours. Some of our loaves prove over two days so we need 48 hours notice when ordering. These products are all marked in this brochure with 48hr *. In these breads, we don t use any preservatives or additives. We don t have much need for them as this traditional method makes the bread naturally last longer. We have a large selection of these breads, which are divided here into classic, rye, seeded, flavoured and fruit breads. *Our cut-off time for orders is 2.30pm Monday-Friday. Where the ordering time is 24 hours this means next day, where the ordering time is 48 hours this means we need your orders two days in advance. WHITE LEVAIN The essential white sourdough, with a subtle tangy flavour. 500g long/round, 1000g long SANETRA SOURDOUGH A light, modern sourdough made with our white levain starter and 10% rye flour for added flavour and texture. Shaped in a banneton to give it beautiful, distinctive lines. Winner of a gold star at The Great Taste Awards. 400g long BOULE DE MEULE Our signature sourdough, made from white and wholemeal flour. The starter for this loaf was created back in 1993, giving it a beautiful hearty flavour. Winner of two gold stars at The Great Taste Awards. 500g long/round, 1000g long/round SAN FRANCISCO SOURDOUGH A rustic, tangy sourdough with an open texture. Made with organic yoghurt and strong Canadian flour. Winner of two gold stars at The Great Taste Awards and overall winner at The World Bread Awards. 500g long/round, 1000g long

4 CLASSIC LOAVES RYE BREADS CAMPAGNE SOURDOUGH The Campagne uses a variety of flours (originally peasants would grow, harvest and grind different grains together). Ours contains white, wholemeal and rye flour. 500g long, 1000g long CAMPAILLOU A rustic French loaf made with white and rye flour. This bread has a beautiful crust and a light, open texture with a slight malty flavour. Winner of a gold star at The Great Taste Awards. 400g square, 800g square RUSSIAN RYE A dense Eastern European bread containing rye and wheat flour, with a marked sourdough tang. Winner of a gold star at The Great Taste Awards. 500g square 100% RYE BLOOMER Rye flour has less gluten than wheat flour meaning pure rye breads are quite dense. This style of bread is a favourite in Eastern Europe. Winner of a gold star at The Great Taste Awards. 800g long PUGLIESE An Italian classic made from white flour and semolina. Extra virgin olive oil is added for a soft texture and Mediterranean flavour. 400g round, 800g long TIGER TOP PAIN DE MIE This soft bread is made with white flour and enriched with butter and milk. The tiger top appearance is created by coating the loaves with a rice cone mixture before baking. Winner of two gold stars at The Great Taste Awards. 400g long RYE, SULTANA AND CARAWAY SOURDOUGH Made with white and rye flour and filled with sweet sultanas and caraway seeds for an aromatic flavour. Winner of two gold stars at The Great Taste Awards. 400g long AMERICAN PUMPERNICKEL A twist on the classic pumpernickel, made with cocoa powder and molasses, and packed with dried fruit for a rich appearance and taste. 5 SEEDED LOAVES SEEDED LOAVES MULTISEED SOURDOUGH This loaf is packed with linseeds, sunflower seeds, millet seeds, poppy seeds and pumpkin seeds. Winner of a gold star at The Great Taste Awards and winner of the Wholegrain Category at The World Bread Awards. 400g round/long, 800g long MALTED GRAIN SUNFLOWER SOURDOUGH This loaf is made with wheat, rye, and wholemeal flour, bran and malt. It is filled with oats, brown linseeds, golden linseeds and sunflower seeds. 400g long, 800g long POPPY AND LINSEED CAMPAGNE A mix of rye, wholemeal and white flour packed with poppy seeds, then topped with linseeds. Winner of a gold star at The Great Taste Awards. 500g square POPPY AND RYE SOURDOUGH Our white levain loaf, packed generously with poppy seeds and then garnished with sesame seeds, black sesame seeds, pumpkin seeds, sunflower seeds and brown linseeds. This loaf is the perfect shape for a bread basket. 500g extra long MICHE POPPY This bread is made with a light white baguette dough and topped with poppy seeds. 400g long SPELT FARMHOUSE TIN Spelt is an ancient grain which has an earthy flavour. This pure spelt loaf with sunflower seeds throughout is available topped with a mixture of fennel, nigella, poppy and sesame seeds, or with just sunflower seeds. Winner of three gold stars at The Great Taste Awards. 400g tin topped with sunflower seeds 400g tin topped with mixed seeds QUINOA SOURDOUGH This loaf is made with white and soya flour then filled with quinoa and soy beans. It is one of our longest proving breads. 500g long NORWEGIAN BLOOMER This Scandinavian style sourdough has a nutty flavour from the sunflower and linseeds. Made with white, wholemeal and rye flour, and finished with oats. Winner of a gold star at The Great Taste Awards. 400g long

A great shape for a cheese board. 360g baton SULTANA & FENNEL SOURDOUGH Made with white flour, juicy sultanas and fennel seeds, this loaf is coated with semolina for extra crunch. 8 FRUIT BREADS THE SCHOOL OF ARTISAN FOOD HAZELNUT AND RAISIN SOURDOUGH This loaf is made with white and wholemeal flour and filled with whole hazelnuts and raisins. It is then finished with a sugar wash crust. Winner of a gold star at The Great Taste Awards. 500g round/long, 1000g long APRICOT AND HAZELNUT SOURDOUGH A small fruit loaf perfect for a cheese board. Made with white and rye flour, this bread is filled with hazelnuts, dried apricots and currants. Finished with a sugar wash crust. Winner of a gold star at The Great Taste Awards. 250g round We re passionate about artisan baking and it s important to us to preserve our craft. We are therefore very excited to be collaborating with The School of Artisan Food. The School runs an Advanced Diploma in Bakery training a new generation of artisan bakers. We challenged the students to come up with a new and exciting sourdough to add to our range. They delivered and we are delighted to introduce the MALTED RAISIN AND PECAN SOURDOUGH. And as a thank you we will be giving money from every loaf sold to support the School s bursary fund to help train the bakers of tomorrow. MALTED RAISIN AND PECAN SOURDOUGH Created by Shona Ball Long overnight fermentation and the addition of malt to the dough add a lovely depth of flavour. A great bread to eat with cheese. 9 BAGUETTES The baguette is a simple stick-shaped bread inextricably linked to French cuisine. It became ubiquitous in the early 1900s when Governmental bills restricted the hours bakers could work. This made it difficult for bakers to make longerproving breads, like sourdough, so baguettes gained popularity. We use a variety of flours and techniques in our baguettes to create a range of styles and shapes. FLUTE Classic white baguette 80g mini, 125g demi, 280g ARTISANAL This white baguette is folded three times (rather than the traditional one or two) and ferments for much longer than other baguettes, giving it a deeper flavour. 80g sandwich roll, 120g demi, 280g PAYSANNE (PICTURED) Made with white, wholemeal and rye flour. This sourdough baguette is baked on the stone floor of our ovens for a great crust. 125g demi, 280g SOURDOUGH Made with white flour and natural yeast for a subtle tangy flavour. 120g demi, 350g COMPLET Made with white and wholemeal flour. 130g demi, 300g FICELLE A slimmer version of the baguette, ideal for making canapé bases. 150g

10 CIABATTA From the Italian word for slipper (describing its shape), the ciabatta takes on a variety of styles. Ours have a light crumb with a robust crust for good bite. It was the inspiration for our modern day pizzas. Our focaccia have a moist interior and smooth texture. ROSEMARY FOCACCIA Rectangle a smaller version of our sheet with a rustic shape. CHERRY TOMATO FOCACCIA Tray rounded rectangle topped with whole cherry tomatoes for a rustic appearance. Tray (pictured) rounded rectangle topped with sprigs of fresh rosemary for a rustic look. Sheet straight-edged rectangle ideal for slicing and using for sandwiches.

11 BLOOMERS Our bloomers are great for toast or a more rustic sandwich. These are available sliced in medium, thick and doorstep, for traditional pub-style sandwiches. WHITE Made with 100% English flour. 12 SANDWICH TINS We use the best ingredients to bring flavour and texture to a sandwich. Our wide range allows for creativity in taste and colour. Available in a regular or lateral slice, for finger sandwiches. WHITE Made with 100% English flour. BROWN Made with English wholemeal flour. GRANARY Made with 100% English granary flour. CARAWAY Made with fine white flour and caraway seeds. WALNUT Made with 100% English white flour and walnuts for added crunch. 800g PAIN DE MIE A sweeter flavoured tin enriched with butter, sugar and milk. 800g ONION Made with 100% English white flour and onions for a lovely savoury flavour. BASIL Made using English flour and Italian basil. Light green in colour. MEDITERRANEAN Made using white flour with tomato, onion and mixed herbs. Light red colour. BLACK RYE A mix of rye and white flour with caraway seeds. Molasses and cocoa give the bread its rich colour. 800g CRANBERRY Made with 100% English white flour, cranberry juice and dried cranberries. BEETROOT Made with 100% English white flour and beetroot for a striking red colour. PANE CON NOCI Made with fine white flour, walnuts and juicy sultanas. CARROT Made with 100% English white flour and carrots for a delightfully sweet flavour. ENGLISH FARMHOUSE Made with 100% English white flour, this bread rises out of the tin for a rustic appearance. 400g, 600g POTATO & ROSEMARY SOURDOUGH Made with potatoes, roasted in our bread ovens and rosemary handpicked on site. 1kg. 13 FINE DINING ROLLS FINE DINING ROLLS We make mini versions of a variety of our breads, ideal accompaniments for soups and salads. The rolls can be ordered fully or part-baked in bags of 25. The part-baked version can be kept in the fridge for up to five days and then baked in the oven for approximately six minutes before service. WHITE: BROWN: SEEDED: FLAVOURED: CANTINA SQUARE FLOURED The above dough is shaped into a square and floured for a rustic appearance. WHOLEMEAL A soft wholemeal roll, lightly floured for a rustic appearance. SEEDED CAMPAGRAIN A multigrain roll topped with sesame seeds, millet seeds and poppy seeds. SULTANA & FENNEL SOURDOUGH This roll is made with white flour, juicy sultanas and fennel seeds. STONE-BAKED CANTINA A white semi sourdough roll, baked on the stone floor of our ovens until just done to ensure softness. COMPLET This roll is made with a mixture of white and wholemeal flour. CAMPAGNE POPPY SEED This roll is made with white, wholemeal and rye flour and topped with poppy seeds. OLIVE COMPLET This roll is made with a mixture of white and wholemeal flour and filled with black olives. SEMOLINA MONT BLANC A white roll shaped into a peak to add height to your bread basket. PAIN DE MIE A soft white roll enriched with butter, sugar and milk. BLANC BAGUETTINI A white roll with a long, thin shape to add variety to your bread basket. STONE-BAKED CAMPAGRAIN A multigrain roll, baked on the stone floor of our ovens until just done to ensure softness. RUSSIAN RYE SOURDOUGH A dense Eastern European style roll with a hearty flavour, shaped into a square. SESAME AND CARAWAY BAGUETTINI A white roll with a long, thin shape, coated in sesame and caraway seeds for an aromatic flavour. 14 BURGER RANGE SANDWICH RANGE Our award-winning burger buns have the perfect texture to support a juicy patty. Many of our buns are enriched with milk, cream or butter to give a sweetness which beautifully complements strong meaty flavours and melted cheese. CHOLLA SESAME ROLLS A soft, sweet knotted roll topped with sesame seeds. BAGELS Available x5, Mini x10 Plain, Cinnamon and raisin, Multiseed, Poppyseed, Sesame seed. Available: Tues-Sat We have had so many requests from our customers to provide great gluten-free bread and we ve been on a quest to deliver it. When we were introduced to Tom Thexton (of the award-winning Wild Thexton bakery) by one of our Michelin-starred chefs, we knew he d be the ideal person to help. We were impressed by Tom s like-minded values and we d never tasted such delicious gluten-free bread. We decided to build our own gluten-free bakery with Tom and are now excited to offer an extensive range of handmade breads. OUR PRODUCTS All our breads are handmade without the use of preservatives. We don t use hydroxypropyl methylcellulose (HPMC) either, an additive present in most glutenfree bread making ours a more natural option. From sandwich tins and individual loaves, to dinner rolls and burger buns, we have a whole host of products to suit your needs. ORDERING Our gluten-free breads are available for delivery from Tuesday to Saturday. All products need to be ordered two days in advance. Orders must be in by 2.30pm.
