1 Operational Plan for Wilibees Wines & Spirits 700 Third Street, Santa Rosa, CA Operations: Wilibees will be open from 10:00am to 10:00 pm during the week and until 11:00pm Friday and Saturday. Tastings will end two hours before store closing each day. Delivery trucks can park either in the loading zone in front of the store or in the city parking lot just East of the building where stock can be hand trucked through the alley to the back doors into stocking and storage rooms. Garbage is taken out the back to the alley where four 96- gallon bear tight lockable rolling bins will be stored. There is a minor food preparation and dishwashing room to handle caterer-prepared and served local cheese and meat plates, wine pairing and tasting, and associated beverage glasses. All food plates, linens, flatware, serving dishes, and preparation wares will be serviced by offsite caterers. There will be no paper or plastic plates, utensils, or glasses. All will be reusable and washable to ensure our trash is reduced. Staffing: There will be a maximum of 5 employees during evenings and weekends with two employees on the register, two at the tasting bar, and one restocking. At slower times there will be three employees, one at the register, one restocking, and one at the tasting bar. Security: Wilibees will have a monitored burglar alarm on all exterior doors and glazing as well as interior motion sensors. An interior video surveillance system and locked cabinets for some specialty items further ensures storewide security. Ambiance: We envision an interior that will appeal to an upscale clientele. Soft warm tones and dark wood will be used to create a comfortable and inviting atmosphere. The bar will be partially screened from the retail area and will be furnished with comfortable furniture, dark wood back bar, and a granite counter top.

Our strong community presence has earned us Petaluma s People s Choice Award in the Best Place to Buy Wine category. We are particularly dedicated to Partners for Sustainable Pollination (PSFP), to which we donate 100% of the proceeds from our wine tasting events. Because of our interests in this organization we have fashioned our name after the bees. It is our intention to expand this concept further in the Santa Rosa location. Mission Statement Sonoma County represents our home and our store will be a reflection of our pride in the community and tastes of Northern California. We want to showcase not only the best of wine country but also the Artisan aspects of our region. The Wilibees Experience: Learn more about Sonoma County Bees and Honey Meet the winemakers Learn about craft beers Taste and buy cheeses from local creameries Participate in Wine and beer education classes Buy local flowers and chocolates The retail experience will be focused on an upscale farmer s market concept. The tasting bar will serve to familiarize the community and visitors about many of the small production wines and beers in the area. We will invite the winemakers and brew masters to come in weekly to share their passions with our customers. Local artisans will feature their cheeses, flowers, chocolates, honey and other goods in the Artisan Shops. Market Plan We believe that Downtown Santa Rosa is the heartbeat of wine country. We want Wilibees to be the wine and artisan shop that gives the small producers a platform to interact with the customers from all over the USA and the world. We plan to deliver a shopping experience that is inspired by the passion of the artists creating the local goods offers a sense of the uniqueness of this region. We will focus our in the following (3) areas. Visitors: Our intent is to work with the visitor centers and the Chambers to create a first time - central stop. At our location we intend to deliver information on participating wineries, microbreweries, and creameries/farms. Specialty Items: We love to do special orders in our Petaluma store for those not so common brands. At the Santa Rosa Location we would like to continue this tradition and be wine country s shop. Because of our wine buyer relationships we can offer our regular customers special order wines and beers without the custom order upcharges. Artisans: We will continue to gauge the growth of new local products. We plan to represent high quality products and work with those artisans in developing exposure and community knowledge. Our store will provide these Artisans and small production wineries/microbreweries the retail venue they cannot create on their own.

3 Conclusion Wilibees Santa Rosa will be the first of its kind in the area that will focus not only on the wine industries but all the fledgling artisan industries sprouting in our area. It is our love for food and wine that inspires us to share the undiscovered gems of Sonoma County.
