Dovetail Coffee Roasters began as a community coffee house in Aloha, Oregon, called The Original Coffee Brake. It was founded on the same core values we have today: serve great coffee, do right by others, care for our world and its inhabitants, and spread shameless passion for everything coffee. In 2008, I took the helm when our founder retired to ensure a bright future for the business. I very quickly fell in love with the roasted bean and my desire to share the simple pleasure of the brewed cup was ignited. TASTER S VOCABULARY Aroma (Fragrance) The smell of freshly ground dry coffee. The fragrances that float up as coffee grounds brew in hot water. The smell of a brewed coffee beverage. Flavor (Taste) Sensations that occur on the palate. For example, sweet versus bitter or sour. Note: some tastes can be attributed to the degree of roast while others to the natural characteristic of the coffee itself or its processing method. Finish and Aftertaste Sensations that generally occur in succession. Finish is often described as a brief sensation as the coffee is swallowed or spit out and aftertaste is a lingering sensation. Body and Mouthfeel Both related to weight and viscosity of the brew. Is it heavy (creamy, silky or buttery) is it light (delicate)? LET YOUR TASTING JOURNEY BEGIN... Acidity Vibrancy felt on the tongue. Often described in terms of liveliness, brightness or a citrus like sensation. Be Specific Avoid vague descriptors. Words such as strong or weak should refer to the strength of the brew concentration (ratio of coffee to water). Mild and Bold are decent descriptors, but delicate and striking are better.
