This is the image Tuscany wants to communicate to the world, in occasion of Expo Starting off from the main theme of Expo 2015, Feeding the Planet, Energy for Life, Tuscany will tell, throughout 2015, its story made of research and innovation, applied to every field and sector of its life and economy. Research and Innovation make this region one of the most desired and yearned for places in the world. A land of Good Living but also of Know How, careful of community relationships, ready to invest in human capital, and to appraise its ancient know how through a constant and contemporary reinterpretation. This is why Good Living and Know How are so strongly tied together here, like two sides of the same medal, giving space to that natural, civil and financial richness which has always been the fundamental feature of Tuscany s heritage and culture. These skills will be the nucleus of the rich programme of events and meetings that the Region is organizing to create a connection between the venue of Expo 2015 in Milan, and Tuscany, with the aim of attracting to our territory some of the visitors to the event in Milan.
3 Tuscany in Milan: - from May 1st to 28th, 2015: with an exhibition space of 200 square metres in the Italian Pavilion, where the concept of Tuscan Good Living and Regional excellence related to the main theme of Expo will be exhibited; - for the whole duration of Expo 2015: with an office within the Italian pavilion, a constant point of reference for meetings with the nations participating in the events and Tuscany s entrepreneurial and institutional realities; - for the whole duration of Expo 2015: with an institutional space within the City of Milan, animated for the whole 6 months by various events and initiatives, a point of reference in the city for the foreign delegations and for locals, too; - for the whole duration of Expo 2015: with a series of events and initiatives which will be inserted into the schedule of the events of the Italian Pavilion and, in September, with a leading role on the theme creativity and preservation. Travelling Expo Tuscany For Expo, on Regional territory Tuscany of Good Living and Know How tells the story of its products, its prestigious traditions, the strong aptitude for innovation, always leading towards the future through business itineraries which touch all sectors where the productive skills of the region are excellent: agro-alimentary, forestry, fashion, interior design, nautical sciences, mechanics, technologies for cultural heritage and high technology. These itineraries are journeys for discovering Tuscany, organized for the financial delegations attending Expo 2015 to create the occasion for developing new and prosperous financial and commercial relationships. These itineraries may be personalized according to the specific fields and needs of each delegation.

6 SECTOR OVERVIEW Tuscany is famous worldwide for its excellent products, and is one the most specialized regions of Europe in the agricultural and food industry. Its strong points are: A wide range of high quality supplies A strong connection between tradition and territory High standards of quality and security A wide range of certified products: DOP-IGP (DOC-DOCG-IGT) Agricultural and food products The several certifications obtained, thanks to a wide range of local agricultural and food products are a guarantee, empowered by the legal protection of the European Union, which allows consumers to know the origins and characteristics of the food supplied, rigorously produced respecting strict rules. Denominazione di Origine Protetta (DOP): POD protected designation of origin): this is the certification given to agricultural and alimentary products for which production, transformation and elaboration take place in an ascribed geographical area, with qualities and characteristics strictly connected to the geographical environment, including its natural and human elements. Lamb from Central Italy IGP Traditional Tuscan products Although wine and extra-virgin olive oil have always been Tuscan products known worldwide, other foods belonging to different categories of agro-alimentary products are now gaining more and more importance as testimonials for this territory. There are over 460 traditional Tuscan products registered by the region. Tasting traditional agro-alimentary products is like taking a trip through the knowledge and the history of this region. There are things to discover, such as the mocetta from Carrara, the grande vecchio of Montefollonico, the berlingozzo, the buccellato, the panigaccio, the testarolo, the Chianti Tuna Chianti and the Bastard Lasagne, and to appreciate the differences of the several Tuscan Mortadellas: Prato, Camaiore, Garfagnana, the nostrale of Cardoso or that from the Alpi Apuane. Alimentary Industry and Craftsmanship Besides the historical products of the agro-alimentary culture, Tuscany has developed a web of small and medium sized enterprises specialized in the production of foods which unite the traditional regional cuisine with high quality raw materials. These characteristics give life to gourmet products, exported and appreciated by the most famous chefs and foodies world wide. The sectors of major specialization in the Tuscan alimentary industry are: handmade pasta, sauces and gravies, cold cuts, cheeses, appetizers (pickles and marinated vegetables), truffles and products based on truffles, cakes and baked products, cereals and flour, chocolate, extra-virgin olive oil, coffee, and spices. Next to small local companies, big industrial groups are situated here, too.
9 Wine In Tuscany, there are different areas of wine production, from which come different prestigious wines. Chianti and Chianti classico are amongst the bestknown Italian wines in the world. The name Chianti, first quoted around the XIVth century, comes from the homonymous production area, although the wine as we know it, San Giovese enriched by Canaiolo and Trebbiano, was classified in the XIXth century by the Barone Ricasoli. There is often a tendency to confuse Chianti and Chianti classico: the production area of Chianti includes Florence and its surroundings, the hills of Chianti and the Val d Elsa countryside, whilst Chianti Classico is obtained by a particular vinification method, in a territory extending over 9 districts: Castellina in Chianti, Gaiole in Chianti, Greve in Chianti, Radda in Chianti, Barberino Val d Elsa, Castelnuovo Berardenga, Poggibonsi, S. Casciano in Val di Pesa, and Tavarnelle Val di Pesa. In these territories the Vin Santo del Chianti DOC and the Vin Santo del Chianti Classico DOC are produced. Each Chianti, although having its own personality, maintains some common characteristics that distinguish it from other wines: the beautiful ruby colour and its particular vinous scent recalling sweet violets. Alongside DOCG Chianti Classico today we have the DOCG Chianti with eight sub-designations, one for each area: Chianti superiore, Chianti Colli Fiorentini, Chianti Rufina, Chianti Montalbano, Chianti Colline Pisane, Chianti Colli Senesi, Chianti Montespertoli and Chianti Colli Aretini. Brunello di Montalcino; its area of production extends around the medieval village of Montalcino. Obtained from the Sangiovese vine variety, which is locally called Brunello, it represents the top quality of local production. The excellence of this wine is mainly given by the favourable climatic and territory conditions, but an important contribution is also given by the great and prestigious work done in the cellar, which includes a long aging process in invaluable wooden barrels, and the techniques for
10 this are passed on from one generation to the next. In recent years, the Brunello di Montalcino has become a synonym of exclusive quality, an ambassador for Italian oenology in the world. Vino Nobile di Montepulciano, another oenological pearl of the region, the area of its production is around the medieval village of Montepulciano, of Etruscan origins with Renaissance aspects. It is obtained from the Sangiovese vine variety, to which a percentage of Canaiolo Nero and other vine varieties are added. There is then the Vin santo di Montepulciano DOC: Vin Santo di Montepulciano, Vin Santo di Montepulciano Riserva, Vin Santo di Montepulciano Occhio di Pernice. Vernaccia di San Gimignano, produced in the area of San Gimignano, a medieval jewel situated on the path of the pilgrims heading towards Rome. This is the first Italian wine to receive the DOC designation, and also the only white wine to be the proud holder of the Excellency of the DOCG designation. Morellino di Scansano, another DOCG wine coming from the hilly vineyards stretching along the rivers Ombrone and Albenga, near Scansano. To the designation DOC (Controlled Designation of Origin) belong the wines for which the grapes are collected in a particular delimited area, as required by the rules of production. According with EU legislation in force, this is included in the wider range of the V.Q.P.R.D. (Quality Wines Produced in Specified Regions). The disciplinary board gives a list of strict rules for each DOC wine, standards for production and characteristics, such as: - the geographical area of production - vine varieties - the typology of the soil where the grapes are cultivated - the grape yield per vine (to avoid excessive exploitation of the vine) - methods of production and aging - the characteristics of the final products (acidity, dry extract, minimum alcoholic strength, organoleptic features) - the possible qualification for commercialization Some DOC wines may quote on their label some additional information, for example: - classico for those wines produced in the most antique traditional areas (within the borders accepted by the disciplinary board) - riserva for those wines which are aged for a longer period than the standard one - superiore for those wines with better characteristics (thanks to the favourable seasonal conditions of the year which created a major concentration of sugar, therefore a higher alcoholic strength). The designation DOCG (Guaranteed and Controlled Designation of Origin) is given to those wines, which already have the DOC designation, and which besides

12 their special organoleptic features, they also became famous. According to the EU legislation in force, this designation is included in the wide range of V.Q.P.R.D. (Quality Wines Produced in Specified Regions). This is the highest warranty possible, and besides fulfilling all the established parameters of the disciplinary rules for DOC, the DOCG wines have to pass a second examination by oenologists and wine-experts during the bottling process (whilst for the DOC designation supervisions are done every year). Once the test is passed, special filigree seals, printed by the National Polygraph Institute and released by the Chamber of Commerce or by the Producers Association, in a limited number according to the amount of hectolitres of wine produced, are given to the producers to put on each bottle. The rigidity of the disciplinary rules has induced some companies to change the relationship between the quality perceived and the intrinsic quality of their wines. Some producers thus moved towards the IG (Typical Geographic Indication) designation that, although maintaining a connection to the territory, allows producers wider freedom during production. The producers able to support large investments have begun experiments, both in the vineyard and the cellars, to reach an even higher quality than the highest quality already produced. This search has introduced the concept of Supertuscans, representing the choices of some producers to not follow strictly the rules of the disciplinary board of production, but working according to their own rules, leaving the DOC area and going back to table wines. The first Supertuscan was Tignanello, produced with 80% Sangiovese and 20% Cabernet Sauvignon. Another famous one by Antinori, still IGT, is a wonderful wine called Solaia. And not to be left aside, the Sassicaia by Tenuta S.Guido which was the first wine ever to be aged in prestigious barrels. Bolgheri Sassicaia is a sub-area of the DOC Bolgheri, delimited on purpose for this wine. Oil The Oil cultivation of the area has been documented since the mid VIIth century BC, and is now a characteristic of the whole Tuscan territory, where oil production is a relevant part of the agricultural economy and is an important element related to the traditions, land and culture of the people. The olive tree is one of the particular characteristics of the hilly Tuscan landscape, and along with the vineyards is able to validate areas of special productions. The typical features of Tuscan extra-virgin olive oil are Hot and Bitter, characteristics given by the high concentration of polyphenols and peroxides, i.e. the presence of oxidant agents, which increase when the picking is anticipated to the onset of ripening, mostly in hilly areas with a good temperature excursion between day and night. Tuscany may be proud of its 3 D.O.P. (POD protected designation of origin): Olio extravergine di oliva Chianti Classico, DOP Olio extravergine di oliva Luc-
13 ca, Olio extravergine di oliva Terre di Siena. It is also the only European region to have an IGP designation for oil (IGP Toscano). This oil has to have certain characteristics, listed by the disciplinary board of production, which besides the standard characteristics and quality of the oil, requires that all the different steps of production from picking to bottling have to be done within the Tuscan territory. The extra-virgin olive oil is produced with olives coming from the regional autochthon varieties of the olive germplasm. Other varieties may be used, up to a maximum of 5%. This oil has a greenish-yellow colour, which changes with time, a scent recalling almonds, artichokes, or ripe fruit, and a strong fruity taste. The maximum acidity accepted is around 0.6%
14 DISCOVERING TUSCANY Tuscan Olive Oil Supply Chain This is aimed at making the extra-virgin Tuscan oil famous worldwide, with a visit to the olive groves and then to a modern oil mill to discover the healthy qualities and the unique taste of the green gold of Tuscany. This is an educational experience, following all the steps of oil production, from the tradition of ancient times to the technology of the modern oil mills. The Sweet Excellence of Tuscany Prestigious producers contributed to the fame of Tuscan Sweets in the world. Leaving from Prato, homeland of the famous Cantuccini, passing by Siena and Florence, the tour ends up in luxury chocolate in Pisa and Pistoia. Street Food Tour Discover the city through its best street foods, visiting historical beautiful squares where local excellence products may be found and tasted. Truffles A demonstrational Tour of the excavation of the Tuber Magnatum Pico (White Truffle) from the hills of San Miniato. This may be organized for the end of September, during the Truffle season. Certified Quality: organic, biodynamic, D.O.P., I.G.P. An itinerary leading through the guaranteed and certified excellence of the agro-alimentary and wine production of Tuscany, to discover productive realities respecting the spirit of EXPO 2015, i.e. enhancing the planet without renouncing quality, health and the environment. There are more than 3,500 producers of wine and alimentary goods certified as organic or biodynamic,in Tuscany, to which must be added those producing according to the strict DOP and IGP discipline of production, (for example: pecorino toscano, extra-virgin olive oil, etc.). Tuscan mills In Tuscany there are several mills, some forgotten and no longer used, others renovated for new exigencies and activities. Among these are the Mulino delle Pile a Chiusdino (Siena), famous as the symbol of the Mulino Bianco brand and the Mulini ad acqua in Mugello. Wine Tourism Discovering the rich and varied wines and tourism offered by the region. All in all Tuscany has more than 90 top deluxe resorts, supplying excellent wine along with an exclusive typology, sophisticated and personalized. When wine producers and their receptive skills are added to this offer, more than 300 wine companies have developed hospitality as the core of their business. The majority of the wine-tourist structures is able to integrate their offer with exclusive local services such as health spa, beauty centre, golf course, horse riding, cooking classes, etc.
15 Tuscan wine varieties According to specific interests, it will be possible to organize itineraries and meetings B2B within the 11 areas of DOCG wine production, and the 39 areas of DOC wine production, passing through well-known and prestigious wines - like Chianti Classico and Brunello to reach hidden wine pearls like Ansonica, Orcia and many others. This, to appreciate the high quality guaranteed by the disciplinary rules of production and, at the same time, appreciate the several bio-diversities and particularities which make the wine supply of the region so outstanding. Supertuscan Discovering the famous super table wines of Tuscany, born from an extraordinary innovative ability and high professionalism of oenologists, agronomists, cellar men and producers. These are wines coming from the maximum exploitation of the territory s particularities, working on the vineyard to obtain the lowest yield per hectare, using different barrels different to the traditional ones, and most of all using freely all the vine varieties not admitted by the DOC and the DOCG warranties, but which have proven to give good results when planted in territories with particular pedological and climatic features. Thanks to these experiments, during the past years and still going on today, great wines have been obtained and become famous, although they could be simply addressed as table wines, they managed to
16 reach the top of worldwide oenology, i.e. Super Tuscans. Innovative cellars These are cellars aiming at the automation of the process, not only for the bottling phase but along the whole productive process, exploiting innovations such as gravity filtration. These are products which managed to accept and incorporate the challenge of technology in the production process without giving up on the excellent quality of the product. Creative Cellars Wine Architecture The Creative Cellars are real temples of architecture and wine, spread out over the beauty of the territory, from thechianti area to the coast. In collaboration with the Federazione Strade del Vino (Wine Roads Union) and the Associazione Città del Vino (City of Wine Association), the Tuscan region has organized the appeal of these excellent and famous companies into a proper system, not only for the wine production, but also for their architecture connected to innovation, sustainability and passion for contemporary art. There are 25 cellars united by the project New Art & Wine in Tuscany combining wine, design, art and architecture. Castle Wine This is a unique occasion to visit the wine companies which are established in ancient castles, in order to admire the combination of technological innovation and ancient traditions particular to these wine companies i.e. manual phases of the productive line in ancient environments with noble charm managed with respect for the environment, history and traditions. Grape Harvest During September and October it will be possible to see, and why not also participate in some cases, the delicate and fascinating process of the grape harvest, to understand and grasp the complexity of a process which is still mainly manual. Wine Melody The international Festival includes concerts of classical music in the most fascinating wineries of the area. Each soirée is preceded by a wine tasting, where a selection of wines chosen by the company is presented along with appetizers, strictly local products, and Tuscan bread. Luxury Focusing on the theme of luxury, according to specific interests, this tour may concentrate on one sector or it may extend to more than one productive compartment: from fashion to yachts, from restaurants to wine excellence.
