3 DO I QUALIFY? Who May Enter Adult ages 18 and older and Youth ages 5-18 on or before July 15, H members may enter as youth until age 19. Culinary Arts Divisions are open to California residents. Entries must be made by an individual, not a group or family. All competitions are open to amateurs and professionals, entering as individuals. HOW TO ENTER the Preserved Foods Show... Important Entry Date Online Entry Deadline: Wednesday, July 6, 2016 Enter Online ocfair.fairmanager.com Entries Must be submitted under the name of the individual who prepared it. Do not use business or fictitious names. There are no team entries. Please enter using the exhibitor s name as it will appear on the display tag. Entry Confirmations You will receive an notification and confirmation immediately when entry is received. If your confirmation does not appear, check your junk/spam folder first before contacting the OC Fair at Processing Fees Adult entries are $5 per entry. Youth entries are $3 per entry. Blue Ribbon Kids are free (no cash awards.) Processing fees are payable online with a credit card (Visa, MasterCard or Amex). No refunds will be issued. Entry Limit Each adult may enter multiple Divisions with a limit of one entry per class. If two or more entries are made in the same class, only the first entry will be accepted. Subsequent entries will be deleted by the entry office and refunds will not be issued. Youth are limited to one entry total. 3

5 RULES We Need You to Read Read Competition Guidelines. Changes are made each year. Review the Rules/Guidelines below and the OC Fair Guidelines at the end of this Guide. Non-compliance will disqualify your entry. 2. Exhibitors are solely responsible for reading the competition guidelines and rules, and entering their items in the correct Divisions/Classes. Incorrect entries may result in disqualification and may not be exhibited. If you need assistance determining the Division and/or Class, please contact the Exhibits Office at (714) or Someone should contact you within 48 hours. Personal assistance is also available during Help Days, see Need Help on the bottom of this page for dates and times. 3. No refunds will be issued for items incorrectly entered by the exhibitor or for juried-out entries. 4. Food entries do not need to be baked from an original recipe, but must be handmade by the entrant from scratch and not a prepared mix. 5. An ingredient list must accompany each entry on a 3-inch by 5-inch card. List should not have your name. 6. No fresh fruit garnishes. 7. Exhibitors may not touch entries after submitting for show. 8. Food items will be discarded after each show or when they become deteriorated. TICKETS, YEA! Free OC Fair Admission Exhibitors will receive one (1) 2016 OC Fair admission ticket per competition date. One (1) ticket per exhibitor, not one per entry. Exhibitor must be present to receive ticket. Claim checks will only be redeemable for an admission ticket during the hours of competition delivery. Tickets are valid any day the Fair is open. 5

6 HOW IS MY ENTRY JUDGED? Adult Divisions Placed using the American Judging System where exhibits are ranked one against another. 1st, 2nd, 3rd Place and Honorable Mention may be awarded in each class if judges so determine. 1st Place winners will compete for Division Winner. Division Winners compete for Best of Show. Additional awards may be added at the judges request; no additional cash premiums will be awarded. Youth Divisions Placed using the Danish Judging System where each entry is judged on how well it meets a standard rather than how it compares to other entries. Entries are judged Blue (superior), Red (very good) or White (average) Award. There may be more than one Blue, Red or White Award per class. All Blue Awards will compete, using the American Judging System, to determine a Best of Class Winner who will receive a cash award. Blue Ribbon Kids Divisions All entries receive a special ribbon and are not eligible for cash awards. Judging The decision of the jurors is final. Judges and/or the Program Coordinator have the option of changing the requested category of a submitted entry. Classes or divisions may be combined to create an adequate judging pool. If an entry is disqualified after judging is completed, the judge will not change the status of awards given for other entries. Judges Qualified judges are selected by the Program Coordinator and are selected from local professionals who are experienced and highly qualified in their fields. Judges may judge different divisions from year to year. 6

7 WHAT IF I GET AN AWARD? Judging Results Results can be viewed online at ocfair.com/results. We post results online as soon as possible. Please do not call or for competition results. RIBBONS, YEA! Ribbons may be picked up on the Competition Dates listed on page 1 and on Final Pickup Day on Monday August 15, 7 am-noon. Ribbons and premiums will only be mailed to exhibitors who mailed-in their entries. AWARDS ADULT Best of Show - $100 Division Winner - $50 1 st Place - $25 2 nd Place - $15 3 rd Place - $10 YOUTH Division Winner - $50 Best of Class - $25 THE CHECK S IN THE MAIL Sweepstakes Award Checks/Premiums Will be made payable to the exhibitor whose name is indicated on the entry form and mailed within 30 days after the close of the 2016 OC Fair. Signed judging sheets will be used as evidence for payment of premiums. Ribbons and tags will not be accepted. 7

8 HOW TO PREPARE for Cakes, Cupcakes & Confections... Prepare a list of all ingredients in your recipe on a 3-inch x 5-inch card. Do not put your name on your ingredients list. Bring the list with your entry. If using a spring form pan, the bottom can be replaced with cardboard cut to size and covered in foil prior to baking. Spring form rings must be removed on delivery. BRING ENTRIES ON OR IN DISPOSABLE CONTAINERS. OC Fair is not responsible for lost baking pans. Confections should be placed on a disposable plate and contained within a re-sealable bag. Cakes and cupcakes should be brought on a disposable plate or cardboard cake circle larger than the cake for handling. Do not use any fresh fruit garnishes on the exterior of the cake. Refrigerators are not available for cakes or cupcakes. Choose a recipe that does not need refrigeration. Division 1040 Confections Submit one-half pound or 9 pieces of the same recipe. Use 7 to 9 inch disposable plates and cover with plastic wrap or slide plate into re-sealable bag Class 01: Fudge, Chocolate (with or without nuts. Class 02: Fudge with other flavors or ingredients (e.g., peanut butter, mint) Class 03: Toffee & Brittles Class 04: Marshmallow Class 05: Truffles Class 06: Caramels (e.g. Turtles or any caramel creation) Class 07: Jellies Class 08: Chocolate handmade candy Class 09: Other Confections than above 8

9 Division 1041 Single Layer Cake Division 1043 Frosted Two Layer Cakes Submit one cake between 8-inch to 10-inch round, square, loaf pan or up to 9-inch by 13-inch Cake must be made from scratch No packaged cake mix No fresh fruit garnishes Entries may be plain, frosted, iced or glazed Class 01: Class 02: Class 03: Class 04: Class 05: Class 06: Division 1042 Cupcakes Bundt any fruit flavor (blueberry, lemon, orange, etc.) Bundt any other flavor (chocolate, spice etc.) Pound Cake, all flavors Coffee Cake, non-yeast leavened Other Single-Layer Cake than above, specify Special Diet (gluten or sugar-free) Enter the class which best represents the batter which is predominantly used. Submit 4 cupcakes Standard cupcake size (no minis or jumbos) Cupcake must be made from scratch No packaged cake mix No fresh fruit garnishes Entries may be plain, frosted, iced or glazed Class 01: Fruit Flavored Class 02: Chocolate Class 03: Other Flavor Class 04: Cake Pops, any flavor (submit 4) Enter the class which best represents the batter which is predominantly used. Any frosting or filling. Submit one cake between 8-inch to 10-inch round Flavor refers to cake, not to filling Layers refer to cakes baked in separate pans then filled between cake layers and assembled. A layer can be split and filled and is still considered one layer. Class 01: Class 02: Class 03: Chocolate Cake Carrot Cake Other Cake Division 1044 Colossal Layer Cakes Enter the class which best represents the batter which is predominantly used. A minimum of three distinct layers or more. Any frosting or filling Submit one cake between 8-inch to 10-inch round Flavor refers to cake, not to filling Layers refer to cakes baked in separate pans then filled between cake layers and assembled. A layer can be split and filled and is still considered one layer. Class 01: Class 02: Class 03: Chocolate Cake Carrot Cake Other Cake 9

12 OC FAIR GUIDELINES ONLINE ENTRY Dates to Remember Please check the individual Competition Guides for entry deadlines, as well as dates and times for entry delivery and pickup. Dates and times are absolute. Late entries will not be accepted. Who May Enter Some divisions are open only to Orange County residents and some limit the number of entries and age of entrants. Check individual Competition Guides for who may enter each competition. Youth must enter the divisions and classes specified for their age group. The exhibitor s age as of July 15, 2016, determines their age group. Youth may not enter in the Adult divisions. Open Youth who turn age 19 by July 15, 2016, are considered adults. 4-H youth members in good standing may be age 19 as outlined by the 4-H Cooperative Extension Office. 4-H members who are age 19 may choose to enter as either a 4-H Young Adult or Adult - they may not enter both. This rule applies for all OC Fair 4-H Competitions. Enter Online Enter online at ocfair.fairmanager.com. Incorrect or incomplete information on online entry may disqualify the exhibit or cause delay in issuing awards. Online submission of data requires that you understand that the decision of the judge is final. You agree to abide by all rules and regulations contained in the OC Fair Competition Guides and understand that such rules and regulations are incorporated with and become a part of this agreement. You hereby release the OC Fair and the State of California from all liability of every kind and character on account of loss, damages or injury to property, which may occur on the fairgrounds. By submitting artwork I herby Grant the OC Fair & Event Center the right to reproduce accepted artwork for promotional and educational uses in both printed and electronic forms. Processing Fees OC Fair July 15-August 14 Most divisions require processing fees (check individual Competition Guides.) Fees are payable online with a credit card. No refunds will be issued. 12

13 OC FAIR GUIDELINES ENTRIES AND EXHIBITS Acceptable Entries No entries or works with copyright or licensing infringement will be accepted. If there is any reproduction of a registered trademark item or work of another artist, the OC Fair reserves the right to disqualify the entry. The OC Fair is a family-oriented event. Any entry deemed inappropriate for family viewing will be disqualified prior to judging. Articles which are objectionable, stained, soiled, broken, or not ready for hanging will not be accepted for judging and will not be displayed. You will be notified for pickup. OC Fair reserves the right to refuse, accept conditionally or to cancel any entry, disqualify exhibitors, prohibit exhibition of entries or to cancel awards, without claim for damages. OC Fair will not be liable for entries made in error and will not re-open judging to accommodate such entries. Repeat Entries No items entered in a previous year s OC Fair competition will be accepted. Exhibit Sales Sale of an exhibit or any part of an exhibit for delivery during the OC Fair will not be permitted. Entry Limit The Exhibit Supervisor and/or Program Coordinator have the right to limit entries to facilities available. Entry forms will be dated as received and entry forms received first will have priority. All entries will be accepted unless the exhibitor is otherwise notified. Protection of Exhibits All cases will be locked and will not be opened while the public is in the building. Exhibits will not be allowed to leave the OC Fair & Event Center grounds unless the Program Coordinator has approved a release slip. Reasonable precaution will be taken in protection of exhibits. The exhibitor must arrange for insurance if desired. OC Fair will not be responsible for accidents or loss that may occur to any of the exhibitors or exhibits at the show and the exhibitors shall hold the management harmless and indemnify it against any legal proceedings arising from such accident or loss. Presentation of entry form shall be deemed acceptance of this rule. OC Fair July 15-August 14 13

14 OC FAIR GUIDELINES JUDGING AND AWARDS Judges and Judging Procedures For judging purposes, the OC Fair reserves the right to combine classes or divisions to create an adequate judging pool where numbers are insufficient to ensure adequate competition. Qualified judge(s) will be selected by the Program Coordinator to judge all exhibits. Judges have the authority to disqualify or transfer to the correct class any exhibit that does not meet the requirement of the division or class in which it is entered. Adult Divisions are placed using the American Judging System (ranking exhibits one against another). 1st, 2nd, 3rd Place and Honorable Mention may be awarded in each class if judges so determine. Young Adults and Junior Divisions are placed using the Danish Judging System where each entry is judged on how well it meets a standard rather than how it compares to other entries. Premiums Signed judging sheets will be used as evidence for payment of premiums, ribbons and tags will not be accepted as evidence for payment. Checks for awards will be made payable to the exhibitor whose name is indicated on the entry form and distributed within 30 days after the close of the OC Fair. Ribbons To encourage high standards, the judge shall award 1st, 2nd and 3rd Place in each class according to merit; if without merit, the judge shall make no award under any circumstances. Ribbons and special awards must be picked-up by exhibitors at the close of the OC Fair unless otherwise noted. OC Fair July 15-August Claiming Awards and Exhibits Exhibits and/or awards left after the official release date are not the responsibility of the OC Fair and will be discarded without exception. If you are unable to pick up your items, please arrange for someone to pick them up for you. Claim check or photo ID is required for pickup. No additional phone calls or notifications will be made.
