8 Advanced Cookery and Patisserie The New Zealand Diploma in Cookery (Advanced) with strands in Cookery and Patisserie is a new programme. Focus on cookery or patisserie, preparing yourself for senior roles in industry. New Zealand Diploma in Cookery (Advanced) with strands in Cookery and Patisserie Level 5 Start: March 2016, July 2016, October 2016 Length: 34 weeks, full-time Campus: Cuba Street, Wellington Prepare yourself to manage a kitchen. Build on your culinary abilities focusing on either Cookery or Patisserie. Develop skills that will allow you to move up to a supervisory role and run a commercial kitchen. Learn from tutors who bring global experience. The course is designed for those already in industry or students wanting to develop further skills. Work in the accommodation industry. You'll develop professional reception, administration and customer service skills. You'll learn through role-plays of customer interactions. Benefit from small, friendly classes. Wear a professional uniform. See the industry in action by visiting hotels and other establishments. Check out local tourism attractions so you know about them when guests ask. Plus you'll gain transferable skills you could use in hospitality or business administration roles. New Zealand Certificate in Hotel Reception Level 4 Start: July 2016* Length: 17 weeks, full-time Campus: Cuba Street, Wellington Enter the exciting world of hotels. Work in New Zealand and overseas with an internationally-recognised qualification. This is the next step up from the Level 3 certificate and is focused on hotel reception. You'll gain specialist skills to work in hotels. Programme overview > Learn how to operate software used in the hotel industry > Complete practical work and gain real insight into working in a hotel; this includes housekeeping, portering, and reception > Learn specific arrival, departure and reservations processes for hotels Entry criteria NCEA Level 1 numeracy and literacy. Further study options New Zealand Diploma in Tourism and Travel (Level 5) Bachelor of Applied Management, majoring in Hospitality Management or Event Management (Level 7) Employment opportunities exist in the front office of hotels, and there is the opportunity to travel overseas (with an internationally recognised City and Guilds qualification). 14 WelTec chefs. World champions At only 19 years of age, two of our students took out the top prize on the world stage at the International Culinary Cooking Competition. Ryan Bloomfield and Daniel Baird spent ten weeks preparing for the competition which was held in Kansas at Johnson County Community College in June. Along with their studies and work, the students spent 15 hours each week vigorously formulating the perfect method to winning this international cooking competition. Ryan and Daniel travelled to Kansas with WelTec chef tutors Ray Morrell and Scott Campbell. They had to prepare a three course menu during a gruelling three and a half hour competition. The invitation only competition saw the young students test their skills against the best trainee chefs in the world. Ryan Bloomfield and Daniel Baird. The competition required the preparation of a three course menu which was served to an American judging panel. I was ecstatic when we won, says Daniel, It was a really great feeling after so many months of hard work to take out the top prize. When the judges read out New Zealand as the winner both Ryan and I were so surprised. The experience that the students have gained gives them the ultimate foundation for an exciting career. It s been amazing winning the competition, but I ve also made fantastic contacts in the hospitality industry from across the world. After competing I now have a lot of new options for when I ve graduated. Competing has definitely opened up so many different and new possibilities, says Ryan. Their chef tutors noted their cool and calm manner throughout the competition. Dealing with unfamiliar kitchens, equipment and new ingredients was not a daunting task for the talented duo. 14
