5 OVERVIEW Tourism is the country s most important economic activity, and The Bahamas remains one of the world s leading travel destinations. It is also one of the world s fastest growing industries and with that growth, is increasingly competitive. The Culinary and Hospitality Management Institute (CHMI) is a centre of excellence for culinary and hospitality management studies. In response to national and international human resource needs of hospitality, tourism and allied industries, the Institute prepares individuals that are knowledgeable and highly skilled across a range of critical disciplines. The Institute also enjoys key strategic industry partnerships, which has facilitated ready access and broad exposure of our students to hotel properties, resort facilities and tourism professionals throughout the country and across national and global industry networks.

9 BSC in Tourism Management In this programme students will be exposed to a range of subject areas including: Hospitality Management Accounting, Tourism Planning and Policy Development, Tourism Marketing and Tourism Economics, Casino Management and Operations, Hospitality Law in The Bahamas, Strategic Management, Special Events, Meeting and Conventions Planning, Leadership training and more. BSc in Hospitality Management In this programme students will be exposed to a range of subject areas including: Tourism and Hospitality Marketing, Hospitality Human Resources, Hospitality Management Accounting, Hospitality Tourism Resources, Hospitality Management, Financial Accounting, Hospitality Law, Business Organisation and Management, and more. AS in Culinary Arts In this programme students will be exposed to a range of subject areas including: Advanced Patisserie, Culinary Science, Food Preparation, Baking and Pastry, Contemporary Nutritional Cuisine, Menu Planning and Nutrition, International Cuisine and more. AS in Hospitality Operations In this programme students will be exposed to a range of subject areas including: Front Office Operations, Food and Beverage Control, Customer Relations, Business Organisation and Management, Tourism Marketing and more. AS National Apprentice Cook In this programme students will be exposed to a range of subject areas including: Advanced Dining Room Service, Food Preparation, Culinary Science, Classical Cuisine, Advanced Culinary Application, International Cuisine, Purchasing and Storeroom Operations and more. Certificate programmes can range from 3 major area course programmes to up to 12 major area courses in a programme. They are designed to help students to enhance their skills in specific hospitality and culinary skill areas.

10 CAREER OPPORTUNITIES An associate or bachelor degree in either of the CHMI programmes of study will provide students with a sound foundation for a wide range of careers. CHMI graduates would have the option of entering the job market directly, entering professional certification programmes or continuing with further undergraduate or graduate study from a variety of related fields and disciplines. The Tourism industry is one of a range of very diverse careers, including the traditional front office, operational support and culinary skills areas, as well as a core of less traditional opportunities. As tourism properties around the world become more complex, offering all-inclusive services and emerging as true centres of fantasy and intrigue. They are expanding the variety of experiences created for their guests. They are increasingly eco-sensitive and more responsive to specific client needs and demands. This means a tourism industry with a need and a place for many skill sets and professions.

11 GENERAL EDUCATION PROGRAMME All degree programmes have a general education component comprising nine areas: literacy, numeracy, foreign language, humanities, social science, natural science, health and nutrition, computer literacy and student development. While courses in your major would provide you with disciplinary, technical and procedural knowledge, the General Education Programme is designed to graduate students who demonstrate critical, reflective and creative thought and who are able to convey those thoughts articulately and confidently in written and oral form.
