Registration for all classes, at time of sign up, must be made by CASH, CHECK, or CREDIT CARD (over the phone). Credit cards will be charged three days before the class date. (No online sign-ups available). 2. You must cancel 3 days before class, or your fee is non-refundable. 3. You must sign up for Saturday classes by Wednesday, or they could get cancelled. 4. ALL LEVELS FREE TUESDAY 1/12/2016 6:00-9:00PM BEGINNERS CAKE DECORATING CLASS WITH VALERIE LINDSLEY Come learn the basics of cake decorating! You will start by learning the tricks on how to split, fill and successfully frost a cake. Move on to lattice work, drop flowers, leaves and borders. 3-D children s designs, transferring patterns, rice paper designs and roses will also be covered. It's a great way to start learning some easy techniques that you can use to make beautiful cakes for your family and friends! This is a hands-on class and students must purchase their own supplies after the first class; supply list will be provided. You don't need to bring anything the first week. Price includes all six weeks of lessons. (Class dates: 1/12, 1/19, 1/26, 2/2, 2/9 and 2/16) BEGINNERS $60 1

2 THURSDAY 1/14/2016 6:00-8:00PM START YOUR OWN CALIFORNIA HOMEMADE FOOD BUSINESS CLASS WITH MONIKA STOUT (San Diego County specific) Have you always wanted to cook and sell your treats from your own home? Find out how. Now that California has passed the California Homemade Food Act (AB1616) you can legally sell food from your own home kitchen. This class will take you through all of the steps to obtain your Cottage Food Operators (CFO) permit. We will review what you can sell, which type of permit you will need as well as provide you with the majority of the paperwork you will need to file in San Diego County. We will review label samples and discuss what information needs to be included on your labels. This class will cover it all. So bring a pen and paper and be ready to take notes. No supplies needed. 1/16/ :30-5:00PM ***NEW CLASS***DROID CAKE CLASS WITH VERONICA GONZALEZ Learn how to create this amazing Droid cake with Light Up Eye! Students will learn how to build a sturdy structure to hold the Droid cake. Every student will build their very own Droid Cake in Class. Handouts to reproduce this project included. All supplies included. (Focus on BB-8 Droid style cake) SOME EXPERIENCE WOULD BE HELPFUL FOR THIS CLASS. ALL LEVELS $130 1/23/ : 30-1:30PM VALENTINE COOKIE WORKSHOP WITH VERONICA GONZALEZ In this class, students will learn the basics of baking and decorating cookies for Valentines to delight family and friends. For this hands-on class all supplies will be provided by the Instructor, and each student takes home 6-7 decorated cookies and recipes. 1/30/ :30AM-2:30PM DEMYSTIFYING THE FRENCH MACARON WORKSHOP WITH VALERIE LINDSLEY You ve seen those colorful orbs everywhere! Come and discover the technique for preparing, piping, baking and filling these amazing cookies that could quite possibly be the quintessential pastry of France. We will also make two different fillings. Everything is provided for this class and you will take home a box filled with these little beauties. All supplies provided. ALL LEVELS $75 2

3 1/30/2016 2:30-5:30PM MARSHMALLOW FONDANT WORKSHOP WITH VALERIE LINDSLEY Love the look of fondant, but hate the cost. Come and learn how to make your own! In this class we will make fondant that you can use to cover your cakes, cookies, cupcakes, and more like a professional. We will make approximately 4½ lbs. of fondant and use it to cover an 8 or 10 inch round cake, or a ¼ sheet cake. Please bring the following: 2 lbs. of powdered sugar, 1 lb. bag of marshmallows (the cheaper the better!) and 1 ½ - 2 lbs. of premade fondant (any brand), a vinyl mat (available at DIWI), a bench scraper, and an 8 or 10 inch round two-layer cake, crumb coated with buttercream, on a board at least 2 inches larger than cake. ALL LEVELS FREE THURSDAY 2/4/2016 6:00PM-9:00PM THE BEST OF BUTTERCREAM WITH CHEF CHARITY Charity will demonstrate between French, American, Swiss and Italian buttercreams. Cream cheese, white and dark chocolate buttercreams will also be covered. Charity will show to split. Fill and shave a cake and frost it smooth as fondant. Hints on piping and coloring various frostings will be discussed and demonstrated. Make SURE you eat a meal before attending this class!! ALL LEVELS $55 2/6/ :30AM- 12:30PM GELATIN FLOWERS WORKSHOP WITH TAMI UTLEY Gelatin flowers on wires. Learn several different flowers in this hands on class. These flowers are pretty as glass, we ll learn the primrose, pansy, lily, fantasy flowers, leaves and anything else we have time for. Students will learn to shape, dip and color flowers and wire them together. Bring a small box to take home completed project 2/6/2016 1:00-5:00PM ORIENTAL STRINGWORK WITH TAMI UTLEY Are you ready for a challenge? Come and learn this gravity defying delicate string work technique. Oriental string work is done with a tiny tip and royal icing. In this hands on class, you will learn to do top and bottom border string work, layering, measuring, and tips and tricks. This class is for Intermediate decorators or those who are comfortable piping and want to up their skill level. Bring a 6 dummy cake covered in royal or fondant icing that is dried attached to a royal or fondant covered 10 board. Try to get a sharp edged top if covering the dummy with fondant. You will also need a tip 1 and tip 0 (PME preferred). The rest will be supplied. Bring 6 dummy cake covered in Royal Icing or fondant INTERMEDIATE $85 3

4 THURSDAY 2/11/2016 6:00-9:00PM **NEW CLASS**HEART SHAPE COOKIE BOX WITH VERONCA GONZALEZ Just in time for Valentine s Day, you will learn to bake and decorate your own heart shaped cookie gift box with a variety of decorative techniques. This class is structured for all levels of decorators. These cookies taste every bit as good as they look. Cookie and icing recipe handouts and all supplies will be provided. All students will take home a finished heart cookie gift box of their very own FRIDAY 2/12/2016 5:30-9:30PM **NEW CLASS** SUGAR GARDEN FAIRY WITH PEGGY TUCKER Yes, she looks like glass but this cute fairy is made out of Isomalt. In class you ll be learning how to use a Sugar Shacks (heat box), preparing the Isomalt, pulling, pouring and shaping techniques. The Fairy body is all hand formed with the wings, hat and face being made with molds. Her dress is made from pulled pedals. She ll be place on a pre-made base. Please bring a 6x6 box to take your Garden Fairy home in. 2/13/ :30AM-6:30PM **NEW CLASS** SUGAR BASKET AND BOWS WITH PEGGY TUCKER Gorgeous baskets made of Sugar? Oh yes, in this 8-hour class you'll be learning to work with Isomalt as I guide you through the proper techniques for pulling and shaping the hot Isomalt into baskets and bows. You'll be working with a Sugar Shack (heat box) and a basket weaver to create your stunning baskets. And of course every basket should have a bow, so then we'll turn our attention to the second part of class to creating a multicolored pulled loop bow. Most supplies are included in the cost of the classes. Please bring to class one box 10x10 and One 10in cake board to take your basket home in. Includes the basket weaver for you to take home. ALL LEVELS $150 THURSDAY 2/18/2016 6:00-8:00PM COVER YOUR BOARDS - CAKE BOARDS AND DISPLAYS WITH CHEF CHARITY NO MORE CAKE DRUMS!!!!! Just in time for the 33 rd Annual San Diego Cake Show, take your entry to the next level. A cake board and the display is an extension of your ARTWORK. Would you display the Mona Lisa in a Walmart frame?? I don t think so! Then don t display your cakes on a $3 drum either. Charity will inspire you and guide you through the ins and outs of displaying your cakes an d making your own custom cake boards and how to make it profitable. Don t miss this important class that will take your art to a new level. ALL LEVELS $45 2/20/ :30AM-1:30PM RICE PAPER FLOWERS WITH VERONICA GONZALEZ Create beautiful, dainty, and visually appealing flowers from rice paper. You will learn to make Chrysanthemums, a Lotus like flower, and a Rose out of rice paper. These flowers appear delicate yet are quite sturdy. We will use multiple methods of coloring to embellish these flowers in class. All supplies provided. 4

5 2/27/ :00AM-12:00PM BRUSH EMBROIDARY WITH TAMI UTLEY Learn brush embroidery painting with royal icing. This is a beautiful technique to get a dimensional look with your flowers and figures. Students will complete a plaque of a briar rose and leaf and learn shading techniques. Also how apply this technique to buttercream instead of royal. All materials supplied Bring an 8 box to take home completed project 2/27/2016 1:00-4:00PM COCOA PAINTING LION WITH TAMI UTLEY Learn how to paint with cocoa in this hands on class. Students will learn how to transfer a pattern, paint and shade with cocoa in this traditional method of cocoa painting Bring an 8 box to take home completed project Please note that some classes are only held once every few months.
