AMBITIOUS EXPANSION AND MODERNIZATION OF OUR VINEYARDS Project 1997 for Tommasi Viticoltori refers to a major investment program begun in 1997 and dedicated to the acquisition of lands best suited for wine grapes, particularly in the zone most representative of the historic Valpolicella. The family owns exceptionally well situated estates for the production of high quality wines in the D.O.C. regions (a total of 99 acres) of Bardolino, Custoza, Soave and Lugana. Above all else, Tommasi is principally acclaimed for its incomparable red wines of the Valpolicella Classico region (a total of 235 acres): Amarone Classico, Valpolicella Classico Superiore, and Recioto della Valpolicella, whose characteristics make them unique in the world. The most important and prestigious wine of Valpolicella is the stately Amarone, which is, without doubt, one of the great wines of the world. Tommasi has specialized in the production of this Divine Nectar for decades, and has deservedly become one of its principal ambassadors to the world. THE AGEING CELLAR
APPASSIMENTO - DRYING PROCESS ARELE, ANCIENT METHOD MODERN METHOD
amarone Tommasi Amarone is produced from the four Valpolicella grape varieties (Corvina, Rondinella, Molinara and Corvinone) which are cultivated on high hillside terraces. The traditional pergola veronese and the modern guyot methods of training the vines are used, and only the best and most mature clusters are hand selected for Amarone. The grapes are placed directly onto small open racks and taken to an open-sided building where they are dried by the cool breezes of autumn and winter until they are crushed the following January. The Tommasi Amarone ages at least three years in oak barrels and is then bottled. After bottling, the wine ages for at least another year. To produce Amarone means to embrace a labor of love which is not completed at the time of harvest but continues through the winter months. During these months the grapes are reduced in a period of active lethargy : that is, they seem to be still but changes are taking place that enrich them, giving them new aromas and a deeper flavor, a result of losing about 50% of their weight and concentrating the level of natural sugar. In managing the drying and vinification process it is essential that the winemaker has clearly in mind the wine which he seeks to create. Tommasi Amarone is a wine which can be proudly served on special occasions, particularly with roasted meat, game, and ripe cheeses. It can also be sipped after dinner, before a fireplace, or anywhere as an ideal companion to enjoyable conversation.

MAREMMA TOSCANA The POGGIO al TUFO estate (POGGIO = hill ; TUFO = tuff / volcanic soil) is located in Pitigliano, a very important Etruscan city in the Maremma Toscana area (south of Tuscany), a few miles from Sovana, Sorano and Saturnia and about one hour north of Rome. It has been owned by the Tommasi family since 1997. The estate, about 1150 feet above sea level, is 163 acres of vineyards, and has volcanic origins - meaning they are very rich in tufo. After a very meticulous analysis of the soil and climate, the estate was replanted with selected clones of indigenous and international grape varieties. The mitigating influence of the Mediterranean (15 miles away) moderates temperature variations and the vines flower and ripen early thanks to the stable, fairly warm microclimate with its extraordinary light during the final phases of ripening. The wines produced in this estate are: ALICANTE: from the Bottinello vineyard with Alicante Bouschet grapes VERMENTINO: from the Montebuono vineyard with Vermentino grapes ROMPICOLLO: from the Rompicollo vineyard with Sangiovese and Cabernet Sauvignon grapes CABERNET SAUVIGNON: from the Rompicollo vineyard with Cabernet Sauvignon grapes
