WELCOME We consider good nutrition and hydration an important part of our patients recovery. At mealtimes we try to limit the interruptions and non-essential activities on our wards so that our patients have dedicated time to enjoy their meals. Our staff and volunteers provide help to patients who need assistance at mealtimes (8am, 12 and 5pm). We encourage carers to stay on the ward and support patients at mealtimes. We work closely with local farms and suppliers to ensure our patients and visitors get the freshest seasonal produce and the Trust receives value for money from our suppliers. Many patients in hospital do not feel like eating, so we try to ensure that some high calorie comfort food is available on the menu. However for patients wishing to eat healthier diet we endeavour to ensure that we offer healthy balanced meals which provides the opportunity to eat 5 portions of fruit and vegetable per day. The majority of our meals are prepared from fresh ingredients sourced from local suppliers and cooked in our Central Production Unit on the City Campus. Our main meals have been awarded a Gold Award from the Soil Association Dr Peter Homa Chief Executive Carillion are working in partnership with Nottingham University Hospitals to provide all of our patients with an excellent food and beverage service. The majority of our dishes are freshly prepared in our Central Production Unit and where possible we source our ingredients from local suppliers. We endeavour to meet the dietary needs and preferences of our patients with our main and special diet menus and have a team of Food Service Assistants who support nursing staff to deliver essential mealtime care. If you have any queries about our food and food services please ask to speak to a member of the Carillion team. Mike Hobbs Managing Director for Carillion Health

INFORMATION This is our main hospital menu which is covered under the food for life gold catering mark. At the back of this booklet you will find our multicultural and vegan menus (which are not covered under the food for life catering mark) should you wish to choose from these menus. You will be asked for your choice of meal before lunch and supper arrives each day. There are a number of other menus available for those who have special dietary needs. These are: No nut ingredients menu Lower fibre menu No milk ingredients menu Extra choice menu Renal menu No gluten ingredients menu Modified texture menus Special diet menus A selection of cultural meals Please speak to a member of the ward team if you wish to see or order from the above menus. Many of our puddings are suitable for people with diabetes as part of a balanced diet. Those puddings high in sugar and therefore less suitable are marked with an X. Please choose the most appropriate meals for you depending on your usual diet. A member of the nursing team can help you with this if you have any queries. We cannot guarantee that our meals are free from traces if nuts. If you have a nut allergy, or any other food allergy please speak to a member of our nursing team. We are able to provide information about the allergen contents of our meals. Fresh fruit and vegetables are available at both the lunch and supper service. If you would like an additional piece of fresh fruit please ask a member of the nursing team or your Food Service Assistant who will be happy to help you with this. We have information available for all 14 food allergens as required by the European Union Food Regulations. This information is available for all our meals. Please ask a member of the ward staff if you require any information.

We are aware that everyone has individual food and dietary needs, and we offer a choice of meals to suit those differing needs. Many of our dishes are prepared with fresh ingredients in our on-site Catering Production Unit. If you are well and have a good appetite, you may want to follow a healthy diet in hospital and we have provided you with some hints and tips across the page which may help you with this. If your appetite is poor however, comfort food may be more appropriate for you, so we have added some tips below that may help you if you don t feel like eating. What should I eat if my appetite is poor? If you are feeling unwell in hospital and have a poor appetite, often the most important thing is that you eat something from the menu that you can manage and enjoy, even if it is only a small amount. The following tips may help you: Ask about our full range of meals and accompaniments on offer to see if there is something that can tempt you i.e. try part of a meal like roast meat with some bread if you cannot manage a full hot meal. Ask about other menus that are available as there are different choices on these that might tempt you. The ward kitchen has stocks of soup, baked beans and bread, so ask for these if you would prefer something lighter. Ask for a portion size of food that is right for you, i.e. a small portion might be easier to manage. If you cannot manage a main course, try a pudding instead; the hot puddings with custard are filled with energy supplying ingredients. Ask for small snacks between your meals if you find it easier to eat small amounts and often throughout the day. Please ask the ward staff and mealtime volunteers for help with your meal if you need it. They will be happy to help with this. If you are concerned about your appetite or what food is right for you please speak to a member of the nursing team. They will be able to help you decide what the right choices of food are for you during your stay in hospital.

Healthy eating in hospital The eatwell plate above sets out the proportions of different food groups we should eat to follow a balanced diet when we are fit and well and have a good appetite. TIP If you want to follow a healthy eating diet whilst in hospital: At breakfast time: Our selection of cereals and toast can be chosen as part of a balanced breakfast. Most wards use semi skimmed organic milk for cereals and beverages. We also offer polyunsaturated spread as an alternative to butter for toast if you prefer a polyunsaturated spread. Many wards will have a bowl of fruit in the kitchen. Please ask for a piece of fruit at breakfast time if you would like one. Orange juice is also available at breakfast time and will count as one of your 5 a day. At lunch and supper time: Choose the lower fat plain roast meat like roast chicken or roast pork rather than the dishes containing minced meat i.e. shepherd s pie, beef lasagne as these tend to be higher in fat. Choose the mashed potato rather than the roast or sauté potatoes which are cooked with added fat. Ensure you have vegetables with your meal and ask for extra if you would like them. We do not add salt to any of our vegetables when they are cooking. For dessert: Try to choose a lighter dessert and avoid pies, sponges, cakes and crumbles which are higher in fat and sugar. Our ice cream, fresh fruit, tinned fruit and yogurts would count as a lighter dessert. Remember to ask for an extra piece of fresh fruit if you would like one!
