This salary survey helps clients to work with us to optimise attraction and retention strategies. It includes in-depth analysis of market conditions to help undertake the increasingly difficult task of recruiting great candidates and benchmarking existing employees. Hotels General Managers command the highest average salary. London leads with the highest average of 85,000 for this role, with the South East and South West following with an average of 50,000. The Midlands and the North both offer the lowest average pay of 58,000 for this role. The highest noted maximum salary in this section was offered for the position of General Manager, 200,000 in London. This role in London, also offers the widest range of earnings from 50,000 to 200,000. Operations Managers in London are offered the highest average salary of 50,000. The minimum pay for this job in London is 30,000, whereas all other regions have minimum salaries that start in the 20,000s. The highest maximum wage noted for this role is 85,000 and is also located in London. London unsurprisingly offers the highest average salary for all twenty-one roles. The North offers the lowest minimum pay across the regions for the following roles; Operations Manager 23,000, HR/Training Manager 20,000, C&B Manager 20,000, Food & Beverage Manager 20,000, Front Office Manager 18,000, Reservations Manager 16,000, Restaurant Manager 18,000, Head Housekeeper 16,000. The South West, and the Midlands share a number of the lowest earnings offered. It is worth noting that the salaries are based on all types of hotels therefore the higher salaries are usually for five* luxury hotels and large occupancy, with smaller independents and lower star rating hotels offering lower salary levels. All salaries are basic salaries and do not include additional benefits which are usually given to senior roles, benefits may include, profit related bonus, share scheme, private pension & medical and car etc.

Restaurants The role of an Area/Operations Manager has the highest average salaries in London ( 50,000) and the South East ( 45,000). This is to be expected of these experienced roles. The highest noted maximum salary occurs in London and the South East where an Area/ Operations Manager receives 100,000. Area/Operations Managers in the South East experience the widest range of salaries from a minimum of 32,000 to a maximum of 100,000, a difference of 68,000. This reflects the wide range of establishments in this region, from branded restaurants through to luxury fine dining. Unsurprisingly overall, London offer the highest average salary for five of the roles featured apart from the role of Bar Manager ( 25,000); with the Midlands offering 26,000. The lowest paid position is the role of Supervisor/Head Waiter, which pays 13,000 as a minimum in the North, with slightly more in the South West ( 15,000) and 16,000 in the South East, London and the Midlands. The lowest average salaries for each role are split across the North and South West regions, with each area offering a mixture of the worst pay for roles. In the North the following roles offer the lowest salaries across the survey; Area/Operations Manager ( 30,000), Pastry Chef ( 15,000), Commis Chef ( 14,000), and Supervisor/Head Waiter ( 13,000). The lowest average salary for a HR/Training Manager is 28,000, and it is offered in the North. It is worth noting that across the survey branded restaurants tended to offer salaries at the lower end of the scale.

The maximum offered for this role is 85,000 in London, which is 5,000 more than the lowest maximum wage noted as 80,000 in all other 4 regions. The lowest minimum wage offered for this role is 60,000 in all other four regions. The next highest paid role is Area Operations Manager and Executive Chef ( 65,000) and is offered in London. The highest average pay ( 50,000), the highest maximum ( 65,000) and the lowest minimum wage ( 33,000) for the role of Area Operations Manager is also offered in London. Unsurprisingly London offers the highest average salary for all the roles in this section. The North and the South West offer the same lowest average wages for five of the nine roles; Catering Manager ( 25,000), Executive Chef ( 35,000), Head Chef ( 27,000), Sous Chef ( 18,00) and Commis Chef ( 15,000). London offers the lowest average salary for the Area Operations Manager ( 33,000) whereas the North offers the lowest average wage for the General Manager role ( 25,000). The Midlands, the South West and the North provide the lowest paid average for the role of Chef Manager ( 24,000). The North and the South West also offers the lowest minimum wages for four out of the nine roles; Catering Manager ( 20,000), Executive Chef ( 28,000), Sous Chef ( 17,000) and Commis Chef ( 14,000), with the North offering the lowest minimum salary for Chef Manager ( 18,000). The lowest paid role in this section is for Commis Chef, which offers an average of 17,000 in London, 16,000 in the South East and 15,000 in all other regions. All five regions are offering 18,000 for the highest average pay for this role. The next lowest paid role is Chef De Partie, which offers 19,000 on average in London.

It also has the largest range between minimum and maximum earnings ( 35,000-75,000), a range of 40,000. The next highest average wage for this role is offered in the South East, 45,000. The minimum salary for this role is offered in the South West, the Midlands and the North at 30,000 per year. The highest average earnings for a Pub Manager are offered in London, 31,000. With the Midlands and the North a little behind with 30,000. The lowest average pub manager salary is in the South West at 27,000. The highest maximum salary noted for this role is 50,000 and based in London, with the South East following with 46,000. Senior The highest average salary role in this section is for a HR Director, 87,000 in London. With a maximum salary of 120,000, noted lowest minimum and highest maximum for the role across the regions. It is worth noting that the HR Director role has a large salary can also have international duties within large corporates. The next highest paid role is for a Finance Director, with the highest average earnings of 85,000 in London. London reports the highest maximum salary for this role, of 150,000. The lowest minimum earnings recorded for this role are 63,000 and noted in the South West and the North. The next highest average paid roles are all Director positions; Marketing Director, Finance Director, Property & Facilities Director, Sales Director. These jobs pay an average of over 67,000 and are based in London. ( 72,000), PR Manager ( 38,500), Marketing Manager ( 39,750), Finance Director ( 85,000), IT Director ( 60,000), IT Manager ( 48,000), Property & Facilities Director ( 71,000), Property & Facilities Manager ( 52,000), Sales Director ( 67,000), Sales Manager ( 43,000) and Revenue Manager ( 46,000). London, the South East and the Midlands share the highest average wages for Financial Controller ( 66,000) and Credit Manager ( 39,500). paying 17,000 less for this senior position than the London based role. The lowest average paid role is Marketing Manager, which pays 30,000 in the South West and the North. The North and the South only the lowest in the Midlands and the South West, the position of Finance Director which is only the lowest in the North and the job of Payroll Manager which has the same average earnings across all regions.
