Milk clarifiers Milk clarificatio represets a very importat step i milk processig whe aimig at high-quality dairy products. The purpose of milk clarificatio is the improvemet of milk quality through the removal of solid impurities such as dirt, straw, hair ad sad particles, somatic cells ad bacteria. The effective separatio of solid impurities is strictly related to the viscosity of the milk: the lower the viscosity the higher the separatio effect. Hece, for clarificatio purposes, warm milk is to be preferred to cold milk ad a clarificatio temperature aroud 50 C may be cosidered as the optimum temperature to achieve the maximum efficiecy. Noetheless, especially i those areas where the raw milk quality is questioable, milk clarificatio is very ofte performed o cold milk, as soo as it is received at the dairy. Specifically desiged cetrifugal separators, i.e. clarifiers, are used for milk clarificatio eve though cream separators ca be employed also; i this case the efficiecy results are remarkably lower (up to 50-60% lower) as the separatio of impurities is to be cosidered a secodary effect.
