1 Morning Cleaning The following start-up procedures MUST be completed before using the oven. The procedures may be completed at night after the oven has completed the clean cycle, or in the morning BEFORE turning the oven on. Failure to complete morning cleaning procedures could cause the oven to not operate correctly! Remove Parts, Clean Vent and Debris Make sure the oven was completely cleaned the previous night. Timer Display will show Clean Complete. Turn Oven Off. Wipe Clean.. Turn power switch OFF. Display will show OFF. Make sure oven is OFF. Never remove parts or touch the fan unless the oven is OFF. Remove drain hose and store in mop sink area or in dry storage area away from food and packaging items. At least once each week, take drain hose to sink and run hot tap water through it. This will make sure there are no clogs in the hose. Clean Drain Remove tray guides and baffle. Take to sink and clean off any black residue. Remove front and back drip trays. Take to sink and clean using the 5-step cleaning method. Wipe vent deflectors. Use a long-handled brush to clean vent located in upper left corner of oven, behind heating elements. A clogged or restricted vent will not allow the smoke to exit the oven in the rear and will force it out around the door. Remove any remaining residue or debris from inside of the oven using a scraper. DO NOT scrape into oven drain! This can block the drain, causing the oven to fill with water and the clean cycle to shut down the next time the clean cycle is started. This will result in a service call. Remove strainer. Press drain button on oven controller (top center key) to open drain. Use long handled brush to clean drain. Reinstall strainer. Re-attach drain cap on oven drain. Failure to reinstall strainer could result in large pieces of debris clogging the drain during the clean cycle.

2 Wipe Oven Interior Surfaces Wipe interior surfaces of oven with clean, sanitized blue towel, including the ceiling of the oven and the area behind the baffle. DO NOT bend or damage oven probe while cleaning! Wipe gasket with clean, sanitized blue towel. Clean inside surface of oven door. Pay special attention to edges where gasket meets the door. This improves the seal and increases the life of the door gasket. Install Baffle Make sure the blower wheel thumb screw is tight. Failure to do so will cause the wheel to come loose and damage the pins which will require the hub to be replaced! Install baffle in left side of oven by aligning the pins in the back tabs and closing baffle to lock front pin. Install back baffle pins first and use as a hinge while rotating baffle to the left. Install Tray Guides and Drip Trays Install tray guides. Make sure they slide completely into the slots. Replace the front and back drip trays. Close oven door.

3 During the Day Make sure the vent is cleaned daily. A clogged or restricted vent will not allow the smoke to exit the oven in the rear and forces it out around the door. When loading the oven, make sure that no products come off the rack and fall into the blower wheel. This can damage the blower wheel and/or the temperature probe. Between cook cycles, wipe the door gasket and inside the door where the gasket meets the door with a clean, blue sanitized towel. This will make the gasket last longer. Between cook cycles, wipe the door switch in the upper left hand corner of the door with a clean, blue sanitized towel. This will prevent the switch the switch from sticking. If necessary work the switch in and out after cleaning. Nightly Cleaning Introduction Overview The following procedures MUST be completed nightly! Failure to clean the oven nightly could cause the oven to not operate correctly! Standards Connect Drain Hose Connect drain hose to oven. Make sure it is routed behind the oven stand cross bar and there are no kinks in the hose. If the drain hose is routed in front of the cross bar or over oven cleaner bottle it will create a kink, causing the oven to fill with water and the clean cycle to shut down. This will result in a service call. Place open end of hose at floor drain or in mop sink. Position the end of the drain hose OVER the drain. DO NOT remove the drain cover! DO NOT force the end of the hose into the drain! The drain hose can become blocked, causing the oven to fill with water and the clean cycle to shut down. This will result in a service call.

4 Check Supply of Oven Cleaner Check supply of oven cleaner. If the level is below the bottom of the label, there is not enough to clean the oven. If the oven is not cleaned properly on a daily basis, large chunks of debris could come off and cause a drain clog the next time it is cleaned. If needed, replace with new bottle. Make sure you reset the bottle counter when starting the clean cycle on the computer. One bottle should last about 5 days. Wear disposable gloves when changing bottle of cleaner. Nightly Cleaning Make sure the oven cleaner cap is connected tightly by pressing down on the cap while turning. Make sure the oven cleaner tube has no kinks in the line. If the oven cleaner tube is kinked or the cap is not tight, cleaner cannot be pumped into the oven. No pink cleaner in the tube is a sign that the cap is not installed correctly. Set Up Clean Cycle Before starting the clean cycle, make sure the water supply to the oven is on. The oven will not clean without water! Press CLEAN button on timer (bottom center key). Display will show Select Type. Use left and right arrow keys to select Clean cycle. Clean is used for nightly cleaning. Delime is used when deliming the oven. Refer to the Deliming Oven section of this procedure. Reset Bottle tracks the amount of Kay Auto-Dispensed Oven Cleaner used. Select this when changing the bottle of Kay Auto-Dispensed Oven Cleaner. Exit returns the oven to normal operation. Press P button to select they cycle. Display will show Oven is Empty? Remove Foreign Items. Make sure oven is empty. Using tongs/putty knife, remove any food items, debris or other foreign material from oven. DO NOT scrape into oven drain! Debris or pieces of chicken can block the drain and create a clog, causing the oven to fill with water and the clean cycle to shut down. This will result in a service call. DO NOT remove strainer from inside the oven! The strainer prevents black residue from going down the oven drain, and helps prevent clogs in the drain hose. To prevent serious burns, always wear insulated grill gloves when removing food items or debris from interior of oven.

5 Press P to confirm oven is empty. Display may show Check Bottle. Make sure enough oven cleaner is in bottle. Press P to confirm enough oven cleaner is available. Display will show Connect Drain Hose. Make sure drain hose is connected. Nightly Cleaning Start Clean Cycle Deliming the Oven Press P on top keypad to start the clean cycle. Oven door will lock. Clean cycle begins with steam cycle. This cools down the oven. Timer begins to countdown after steam cycle completes. When cycle completes, display will show Clean Complete. Turn Oven Off. Wipe Clean. Complete morning cleaning procedures before using the oven. Refer to the morning cleaning section of this procedure for details. Introduction Overview Standards Delime the interior of the oven monthly or as needed. The oven MUST be clean and cool before deliming. Connect Drain Hose Connect drain hose to oven. Make sure it is routed behind the oven stand cross bar and there are no kinks in the hose. If the drain hose is routed in front of the cross bar or over oven cleaner bottle it will create a kink, causing the oven to fill with water and the clean cycle to shut down. This will result in a service call.

Set Up Deliming Cycle Press CLEAN button on timer (bottom center key). Display will show Select Type. Use left and right arrow keys to select Delime cycle. Display will show Oven is Empty? Remove Foreign Items. Make sure oven is empty and clean. DO NOT remove strainer from inside the oven! The strainer prevents black residue from going down the oven drain, and helps prevent clogs in the drain hose. Press P to confirm oven is empty. Display will show Connect Drain Hose. Make sure drain hose is connected. Press P key to confirm hose is connected. Display will show Add Delimer. Start Deliming Cycle Open the oven door and sprinkle 2 packets of Kay Neutralizer and Delimer into the bottom of oven. Close the oven door. Press P on top keypad to start the deliming cycle. Oven door will lock. Delime cycle begins. Timer begins to count down. When cycle completes, display will show Delime Complete. Turn Oven Off. Wipe Clean. Complete morning cleaning procedure before using the oven. Manual Drain Control Introduction Overview Standards If water is left in the oven after cleaning, the drain can be opened manually. Start Manual Drain Function Open oven door. Drain will not open if door is closed or if oven temperature is above 150 F. Press Drain button on timer (top center key) to open drain. Drain water from oven. Press Drain button on timer (top center key) to close drain. or close the door. The drain will close if oven door is closed.
