1 FRONTLINE HOSPITALITY SALARY GUIDE 2013 The Annual Frontline Hospitality Salary Guide for 2013 is dedicated to the salary information taken from our annual collection of hospitality salaries across Australia. The information collected within this survey is based on data collected from both clients who have advertised roles through Frontline Hospitality and candidates who have been placed. The salary figures are based on actual base salaries for candidates who have been placed during this time and candidates salaries in their position prior to being interviewed by Frontline Hospitality. In 2012 Frontline Hospitality posted 4032 ads on the major job boards Seek, MyCareer and CareerOne. These ads were then further distributed to other relevant job boards. This advertising resulted in Frontline Hospitality processing over 42,000 responses and subsequently interviewing over 3,500 candidates before presenting them to our clients, increasing the Frontline Hospitality database size to just under 20,000 interviewed candidates. In 2012 Frontline Hospitality listed almost 2,000 roles with 492 different clients and as a result placed candidates in 70 different hospitality job roles, the most popular roles being Head Chefs, s, Assistant s, Chef de Parties, Sous Chefs, Commis Chefs and Duty s. Frontline Hospitality clients in 2012 were formally presented with over 4,400 candidates, over 2,700 of whom were then interviewed by our clients and 532 who were subsequently placed. Importantly, 74% of these candidates were already on the Frontline database. Features of the 2013 Guide This guide investigates the changes and trends of salaries in the hospitality industry across Australia. There are many circumstances that determine the changes in salaries over the past five years, and these differ between states. The comments included by our Agency Owners and s describe the reasons for these changes specifically in their states and territories. About the guide This year the survey was conducted in Brisbane, Canberra, Melbourne, North Queensland, Perth and Sydney. 4 QUEENSLAND BRISBANE With 2012 in review, we experienced a job market full of confidence and in full swing toward the end of the year following a quick recovery from the devastating floods. According to MyCareer Employment Forecast, Australia added an impressive 140,000 jobs in the year and within the agency we saw exactly this. We experienced record job numbers, with a big focus on new clientele and ample quality candidates to match. The market displayed candidates in the driving seat where they were very cautious in moving into a new role. We found that candidates were in the position of having multiple choices of which roles to accept, which in turn saw a push on salaries and clients having to make very quick decisions. The market has not changed in It is fast becoming 'candidate driven', which means they have multiple job offers, greater negotiation power in regards to salaries and benefits and counter offers are at an all time high. For the past 5 years the job market has been dominated by the client, however times have changed and this 'candidate driven' market for highly skilled talent is due to a shortage of high performers. Clients are not hiring 'average' skill set candidates, superstars are in demand and we can expect this in the industry for the next few years. With a greater need to attract top talent, clients will be able to benefit from our growing passive candidate pool, which has been increasing over the past 2 years in our niche market. People within this pool are happy within their current employment but are open to hear about great opportunities that arise; this is the talent clients can be strategic about in this market. Pia Manwaring, Agency Owner Brisbane NORTH QUEENSLAND Our North QLD agency is based in Cairns and is responsible for 9 regions in North / remote QLD and each region displays different market trends. North QLD suffered significantly from the GFC however it was very exciting to hear that the market has rebounded and 2012 was a year of growth, with a positive outlook for There has been a recovery in Japanese tourists in the North QLD market and we can expect more international visitors with an envisaged growth for the next 3 years. Domestically Queensland welcomed more than 1 million Australian travellers in 2012, both factors in turn affecting occupancy rates within our Hotels which at a record high in Australia. With the market in growth, the outlook of 2013 is very positive and the biggest challenge that our North QLD clients will face is the very transient nature of the market, being such tourist driven markets. Like the Brisbane market, candidates will be in the driving seat shifting from the client market that we have seen. Although we have seen that salaries have not increased in this market, clients in North QLD should offer job security, progression, full time employment, and especially work / life balance to hire talent. Pia Manwaring, Agency Owner North QLD AUSTRALIAN CAPITAL TERRITORY CANBERRA The Hospitality sector in Canberra is set to explode with our Nation s Capital celebrating its 100 th birthday this year. With numerous events planned across the year, the general talk about town is that we are expecting a big year of tourism in Canberra highlighted a very clear shortage of not only Chefs but Apprentices looking to take on the trade. We have also noticed many of our local clients adding to their staffing ranks with multiple layers of management. The general consensus is that it makes sense, Canberra is a very transient marketplace and having extra levels of management provides protection against natural attrition. Many areas of Canberra faced redevelopment in 2012 and an abundance of new businesses have opened their doors. Many Quick Service Restaurant chains have their eyes on Canberra for future expansion. We are excited to have some major players make their home in our territory over the coming months. We have also been fortunate enough to have some amazing new casual and fine dining venues open their doors recently. You only have to walk down any one of Canberra s main thoroughfares to realise how much has changed.
5 With the increase of venues and the gearing up of the entire tourism sector in preparation for our Centenary, businesses are now planning on increasing staff numbers and addressing individual needs in the hope of reducing candidate mobility once onboard. But where will these staff come from when we are already experiencing such a shortage of talent in the hospitality sector? Jeff Bailey, Agency Owner Canberra NEW SOUTH WALES SYDNEY 2012 was a tumultuous year in the Sydney market. The increasing costs and competition in the leasing market, the introduction of the carbon tax and increases in casual rates have placed a massive strain on most of the segment. This has resulted in many groups downsizing, and the numerous closures of many high profile venues. This negative was counter balanced with the explosion of the Quick service segment as well as the mass openings of small bars throughout the city. The major dilemma across the entire market has been the shortage of qualified employees. This is highlighted by the frustration of many operators who are forced to pay above market for what is available. Across the board we have also witnessed an increase in salaries for all positions, which has a drastic affect on the bottom line profit of operations. However, the start of 2013 seems to be very positive for many operators, with several segments in growth stages, and larger groups actively on a buying spurt. With the economic downturn seeming well behind us, the general feeling on the market is very positive, and is showing signs of growth across the board. Stephen McGuire, Agency Sydney WESTERN AUSTRALIA PERTH The latter half of 2012 saw the Perth job market again being dominated by the mining industry with more and more skilled staff being lured by attractive salary packages, thus leaving employers frustrated, and, some succumbing to sponsorship of overseas candidates. In 2013, Perth is still continuing to experience a critical shortage of skilled workers in hospitality. The skills shortage is across the board with pubs, hotels, restaurants and small bars all looking for experienced hospitality staff good chefs being very much in demand! We have seen a number of new businesses opening, offering opportunities to those actively and passively watching the market. With the election looming, both employers and employees are holding steady awaiting the outcome. This is evident with employers still taking a cautious approach to recruit new staff while quality candidates are choosing to remain in their current employment. With the proposed relaxing of liquor licensing laws we will hopefully see an increase in small bars and restaurants which will create further employment opportunities. However this could compound the shortage of candidates in the industry. Martine Branchi, Agency Owner Perth VICTORIA MELBOURNE In Melbourne over the last 12 months the hospitality industry has been very active, with a positive feel due to the long and hot summer we have experienced. This has given the Melbourne food and beverage scene a real buzz, with plenty of people out enjoying the great weather, eating and drinking at a wide variety of restaurants, eateries and bars. On average salaries are consistent with the previous years, however a boost in the restaurant scene has seen restaurateurs willing to pay above market rate for quality staff. Still the chef shortage throughout the industry is a major issue and the best candidates are being placed quickly and work standards and environments are being discussed at interview stage, ensuring that the client and candidate agree to the terms and conditions of employment for long term placements. There is no doubt there is strong consumer confidence in the market and some very exciting new businesses and concepts in development, we are looking forward to a busy 2013 for the hospitality industry in Victoria.
