2 The Tagus River is one of the main Portuguese rivers, which passes through the region of Lisbon and Ribatejo. It is a source of prosperity because of fishing, boat access to Lisbon, rich soils and abundant water for agriculture. This led the culture of the people in the surroundings of the river, to undergo a strong influence out of this factors, visible in the rich and varied gastronomy. We suggest a trip to follow the wealth of the Tagus river, through the Intangible Heritage of Humanity, which is the Mediterranean cuisine. Discover in the table, traditional dishes of these regions, meet their wines, their cultural, and the connection with the history, nature and agriculture. 3 Day 1 - Lisbon Welcomes * * Tagus Flavours 3

4 Day 2 - At the Table in Leziria Breakfast at the hotel and check out. Travel to the south of the Tagus river, to learn more about the river's connection with nature that is a fundamental part of the local cuisine, through a safari to the Tagus Estuary Natural Reserve, with a local expert. In the morning we will also see the iconic elements of the region, the brave bulls and Lusitano Horses, in their natural environment. After we ll have lunch in Vila Franca de Xira town to taste some typical dishes. Check-in at Companhia das Lezírias, which is the largest agricultural and forest exploration of Portugal, dedicated mainly to the production of rice, wine, oil and cattle and horses. The accommodation is in bungalows situated in a quiet area of the homestead, placed around the pool. Before dinner we will visit the estate Winery and do a wine tasting. The estate produces 65% of red grapes and 35% of white. The prominent varieties are Alicante-Bouschet which is the majority, followed by Castelão, Trincadeira, Aragonez, Touriga-Nacional, Cabernet Sauvignon, Syrah, Merlot, Touriga-Franca, Tinta Barroca e Tinto Cão. The white varieties are Fernão Pires, Trincadeira das Pratas, Arinto, Roupeiro, Tália, Verdelho e Vital. Dinner will be served by the estate restaurant "A Coudelaria". Tagus Flavours 4

5 Day 3 - Route of the Avieiros Breakfast in the estate and check out. After breakfast, we will go up the Tagus river by boat and know the history of the river and the nomadic culture Avieira. Lunch is served in the typical village of Escaroupim where overlooking the river we can taste different dishes of fish from the river. During the afternoon we will know the Royal Falconry, where you can watch a demonstration of the flight and hunting of birds of prey. Before leaving this village we will taste some typical sweets. 6 Day 4 - Regional Tapas Breakfast in the hotel. In the morning we discover the secrets of cheese production and regional sausages, very present in the Portuguese cuisine, closely related to the strong livestock production that has always existed in the region. Lunch is in the town of Cartaxo, national capital of wine in Portugal, for some more typical dishes. In the afternoon the theme is wine, a key element for confection of the dishes, and to accompany them. We will visit the magnificent Rural Museum and the Wine and Cartaxo Cooperative Winery, one of the biggest industrial complex of wine production in the country. The red wines represent 70% of the production and their main grapes are Touriga Nacional, Tinta Roriz, Castela o, Trincadeira, Syrah e Alicante Bouschet. Tagus Flavours 6

7 Day 5 - Legends at the Table Free morning to learn more of the city of Santarém. Lunch is in Almeirim to taste one of the most popular soups in the country, the famous "Stone Soup, this dish has associated a legend where a friar only with a stone in his pocket made a rich soup. In the afternoon we will visit one of the houses with more history of the region to make a carriage ride around the estate, visit a Lusitano stud farm and taste their extraordinary wines and olive oil. This wines are produce in one of the best terroirs of the country, called Leziria and knowed for the abundance of water from the Tagus River. The main grapes are Touriga Nacional, Alfrocheiro, Tinta-Roriz, Cabernet Sauvignon, Shyrah, Tannat e Castelão for the reds and Sauvignon Blanc, Alvarinho, Arinto, Fernão Pires, Verdelho, Chardonnay for the whites. 8 Day 6 - Spiced farewell Breakfast at the hotel and check out. Salt is one of the main culinary spices and in Portugal there is some of the best salt in the world, in the morning we will know why. We leave Santarém towards Rio Maior, to visit one of the main natural treasures of the region, the Rio Maior s Salt Marsh. There are records of these salinas being explored since 1177, but is believed to have been mainly used by the Romans and Arabs. The architecture and construction of the picturesque houses of support all in wood, makes it a unique place. Transfer to Lisbon Airport. Tagus Flavours 8
