1 Italy Made in Italy - Food Tour 2012 FTDA Foreign Trade Development Agency - in partnership with Alberta Pork and ALMA, is organizing a Trade Mission in Italy. The focus of the mission is to learn best practices from Italian Charcuterie manufacturers, producers and schools. Currently, Alberta s technical schools are development charcuterie programs and Alberta companies are producing more artisanal processed products. This program will bring the technical schools together with Alberta companies to: learn about Italy s training for Charcuterie professionals, tour Italian companies producing artisanal products and establish an exchange of instructors between Italy and Alberta to ensure future training and growth of the cured meats industry in Alberta. The delegation will have the privilege to experience first hand the insights of the Italian food industry by visiting small local producers with replicable supply chains, world-renowned producers and manufacturers and technical schools. During these educational days, you will not only learn how to taste and analyze cured meats but also develop a profound knowledge of local Italian and Mediterranean Cuisine.! 1

2 Tuesday, May 8th Departure Wednesday, May 9th Arrival Thursday, May 10th Cibus 2012 During the day... Transfer to Cibus International Food Exhibition. Meeting with the Industrial Association for Meat and Charcuterie. Meeting with Trade Show organizers. In the afternoon Visit to Companies producing meat processing machinery. Free time in Parma. Friday, May 11th Consortium Prosciutto di Parma Meeting with Representatives of Consortium Prosciutto di Parma and visit of one of the producers. ALMA - International Culinary School ALMA is the world s leading international educational and training centre for Italian Cuisine. ALMA has its Headquarters in the magnificent Palazzo Ducale of Colorno near Parma, equipped with the latest teaching and cooking facilities. In the evening (optional) Dinner at Corte Pallavicina Farm & guided tour of Culatello salami production. Dinner prepared by Michelin Star Chef Massimo Spigaroli.! 2

3 Saturday, May 12th Eno-gastronomic Experience in Umbria In the morning Transfer to Torgiano, check in at 5* hotel. Guided tour of Lungarotti winery. Tickets for free admission to the Wine Museum and the Olive and Oil Museum Five courses chef s tasting dinner with wine pairing prepared by Chef Mirco Nocchetti. Sunday, May 13th Culinary courses in Umbria Meeting with representatives of ALMA Culinary school in Umbria. Roundtable on professional courses. Free time. (Possibility to visit Perugia or Assisi) Monday, May 14th University of Flavours Meeting with University of Flavours in Perugia and roundtable session on courses and programs. Visit of Salumi producer in Subasio Area and tasting lunch at the farm. Transfer to Norcia. Visit of the Prosciutto manufacturing facilities and production farm. Check in at the Hotel. Tasting dinner at Palazzo Seneca - Ristorante Vespasia (optional) Tuesday, May 15th Fattoria Fausti! 3

4 Guided tour of Fattoria Fausti, the farm that raises wild pigs in a way that is unique in the world. The tour will include the visit of the farm, their manufacturing facilities and a tasting light lunch featuring their products. Meeting with Consortium of Norcia - Prosciutto production. Free time in the evening. Wednesday, May 16th Rome Transfer to Rome. Check in at the Hotel and free evening. Free time in Rome. Thursday, May 17th Citta del Gusto Meeting with Citta del Gusto - City of Taste - the culinary academy of Gambero Rosso, icon of Italian Cuisine. Friday, May 18th Departure *Note: the cost has been subsidized by ALMA and it does not include your flight to Italy. The unsubsidized cost is $5,725. Program dates may be subject to change.
