Oak Knoll Arabians was known for producing some of the top halter horses in the nation. Her path led her to Willow Oaks Farm in Columbus, NC where the Davis family was breeding Thoroughbreds for the International Hunter Futurity. It was there she began honing her skills in all aspects of farm management and developed her interests in live cover, a.i. and as an equine midwife - delivering foals and raising young horses. She then started managing a large boarding operation which gave her an opportunity to begin foxhunting with Tryon Hounds. A member of that organization for 20 years, she has served several terms on the board of directors and currently participates as the recording secretary. In the 1990 s Anita began working as an ambulatory technician for Dr. Bibi Freer. When the large animal hospital was completed around 2000, Anita added the role of scrub nurse handling all aspects of emergency care to her duties as ambulatory technician. Of that time, Anita shares, I am so grateful to have learned from the BEST Drs. Freer, Hay and Baskett. Despite a busy schedule, Anita has always been very active in the community. She served as a former Rotary Group Study Exchange Team member to Brazil in the mid 90 s and as past president of the Green Creek Little League. And she uses her training to assist in the emergency rescue of horses from difficult situations (such as trapped in mud or swimming pools) in her capacity as head of the PEER (Polk Equine Emergency Rescue) Equine ambulance team. You might catch her singing the National Anthem as she s done in the area at such venues as Tryon International Equestrian Center, the Columbus Fourth of July celebration and numerous local horse shows. Anita embodies the Do What You Love philosophy. You can t manage the kind of schedule she does, and keep a smile on your face, without having a passion for the work you do! Due to her parents aging issues Anita started freelancing with Alphamare, her own business providing daily and specialized care for horses, which she continues today. She is also one of four lead instructors with Isothermal Community College s Groom Elite program. Check out page 11 for details on the program and on upcoming classes. Anita fills her spare time singing in the 4-piece rock band, Nightshades. Ingredients in your children s cereal and infant formula have GMOs. So does pet food, vitamins, corn oil, candy bars and 80% of the packaged products at your local grocery store. GMO is the acronym for genetically modified organism. But don t look for it on the label, cause it s not there. Companies that make GMOs don t want them labeled, even though sixty nations do label GMOs. Companies utilizing GMO ingredients or creating GMO seeds claim they are perfectly safe. After all, forcing genes from one species is simply natural, right? We re told that famers that use GMO seeds will use less pesticide and get more yields. They also proclaim that GMOs are the only way to feed the world. Is this true? A growing number of physicians, soil scientists, plant pathologists, farmers, mothers and health care professionals say GMOs could be linked to health risks, like allergies, gastro intestinal disorders, auto-immune disorders, inflammation and more. There are also questions about a loss of seed biodiversity, genetic contamination, farmer s rights and corporate control of food through patenting. You re probably been eating genetically engineered food since 1996 and didn t know it. Why do they exist? How is it done? What are the controversies? Can you avoid GMOs? Come to this three hour class for a lively discussion on the how and why of GMOs, with Ms. Samm Simpson, a local writer, speaker and GMO educator. # Wednesday, 2 3:30 PM, June 15 Rutherford Learning Center, Room Maple St., Rutherfordton, $20 # Monday, 7 8:30 PM, July 11 Rutherford Learning Center, Room Maple St., Rutherfordton, $20 # Thursday, 2 3:30 PM, August 11 Rutherford Learning Center, Room Maple St., Rutherfordton, $20 Continuing Education Schedule of Classes 15
