The Hungarian Eclusivity Of Pálinka Before Hungary s integration into the EU, the Hungarian Goverment submitted an application for eclusive usage of the name pálinka (similar to Italian Grappa, Greek Ouzo and German Korn). After having met strict requirements, Hungarian Pálinka has been given the right of elclusivity, wich is to say, in the territory of the European Union only distillates that are made of fruits cultivated in Hungary and also produced here are allowed to bear the name of pálinka. There is only one country, Austria, that has been granted eemption and the right to use the name of barackpálinka (Apricot Pálinka) in four lands. Pálinka in Gastronomy At festivities it is usual to take liquor as an aperitif or appetizer before a meal. In Hungary this is usually distilled spirits. On the drink menu they are mostly listed as an aperitif. The distilled spirits appear again after the meal. To follow dessert or other confectioneries it is quite common to offer sweet drinks, liqueurs or aszú wine (late harvest of dried berries), or possibly sweet champagne. After a meal or to accompany coffee, liqueur, cognac or pálinka can be recommended. Pálinka should be served at a temperature of 18 C, this way the fragrance and character of the fruit becomes smoothly delightful. Contrary to everyday practice, some people believe that Pálinka should be drunk slowly and sipped. The shape of the tasting glass should narrow towards the neck, so that the fully developed concentrated aroma of the drink cannot fade. Pálinka can be added to various dishes, shakes and pastries, so the culinary masterpieces can be completed with fine, special and characteristic flavour and fragrance.
