Prior to the shift, the associate calculates what is prereserved and establishes the additional service goal and retail goal For Example: $490 pre-reserved, Goal = $550 Additional Service Goal = $60 Retail Goal = $104 (guest count x $per level goal) At the end of the shift, the associate tip income is calculated based on the goals.
