SECURITY & CASH HANDLING Reduce the risk of handling cash, making mistakes with change and internal theft by using snack stand coupons. Sell them at a separate table to minimize confusion. Conduct background checks on the parties responsible for the snack stand. Conduct surprise audits of the snack stand operations including purchases, deposits and daily sales. Snack stands are often broken into taking everything including equipment, food and supplies. Keep inventory levels low. MENU & PRICING More is not necessarily better. Keep the menu simple, profitable and fairly priced. Charge a price that allows the Sports League organization to generate a profit. The total cost of a food item should be no more than 30% of the selling price. (Canned soda and candy sell at reduced margins). Consider Value Meal promotions to increase total sales. Vary your menu by time of day. Sell donuts, pastries, bagels, coffee, cocoa, tea and juice in the morning hours while selling hot dogs, burritos and burgers in the afternoon and evening. SNACK STAND MANAGEMENT Keep a binder of daily sales, purchases, spoils and an item cost list. Document weather conditions and peak business times since both can greatly impact sales. Consider security and spoilage factors when keeping inventory. In addition to possible theft, high temperatures adversely impact many items.
