Italy Made in Italy - Food Tour 2012 FTDA Foreign Trade Development Agency - in partnership with Alberta Pork and ALMA, is organizing a Trade Mission in Italy. The focus of the mission is to learn best practices from Italian Charcuterie manufacturers, producers and schools. Currently, Alberta s technical schools are development charcuterie programs and Alberta companies are producing more artisanal processed products. This program will bring the technical schools together with Alberta companies to: learn about Italy s training for Charcuterie professionals, tour Italian companies producing artisanal products and establish an exchange of instructors between Italy and Alberta to ensure future training and growth of the cured meats industry in Alberta. The delegation will have the privilege to experience first hand the insights of the Italian food industry by visiting small local producers with replicable supply chains, world-renowned producers and manufacturers and technical schools. During these educational days, you will not only learn how to taste and analyze cured meats but also develop a profound knowledge of local Italian and Mediterranean Cuisine.! 1

Friday, May 11th Consortium Prosciutto di Parma Meeting with Representatives of Consortium Prosciutto di Parma and visit of one of the producers. ALMA - International Culinary School ALMA is the world s leading international educational and training centre for Italian Cuisine. ALMA has its Headquarters in the magnificent Palazzo Ducale of Colorno near Parma, equipped with the latest teaching and cooking facilities. Sunday, May 13th Culinary courses in Umbria Meeting with representatives of ALMA Culinary school in Umbria. Roundtable on professional courses. Free time. Guided tour of Fattoria Fausti, the farm that raises wild pigs in a way that is unique in the world.
