Step-by-step through the alcohol fermentation process; how to avoid stuck fermentations and negative volatile sulfur compounds. Gordon will discuss malolactic bacteria selection criteria, good malolactic fermentation practices including the conditions that influence malolactic fermentation, and the considerations for when to encourage the timing of malolactic fermentation. 9:30 10:30 am Advanced Microbial Spoilage Detection Dr. Torey Arvik, Jackson Family Enterprises (Kendall Jackson), California This talk will discuss the viable non-culturable (VNC) phenomena, advanced analytical methods such as molecular probes, PCR (Scorpions) and integrated interpretation of results. 10 Guest Speakers for the 2010 Michigan Grape & Wine Conference Dr. Torey Arvik Dr. Torey Arvik is the Technical Director for Jackson Family Wines, based in Santa Rosa, California. He is responsible for evaluation of emerging wine related technologies. He is a developer of rapid genetic tests for wine spoilage and is a strong advocate for the advancement of wine microbiology methods and expanding knowledge about wine ecology. Torey is a self-proclaimed ambassador of wine who practices often with his friends and neighbors. Patty Held Patty Held of Hermann, Missouri, graduated from the California State University at Fresno with a bachelor of science degree in Enology in She was winemaker at Taylor Wine Company in New York from 1982 to 1988 before returning to her familyowned winery, Stone Hill Winery, in Hermann, Missouri, where she was director of public relations and special events from 1988 until July Currently, Patty has her own winery consulting business, Patty Held Winery Consulting. She also is sales manager for winery sales for Arton Etching and Imprinting. Patty has judged at prestigious wine competitions in California, New York and Indiana. She is currently on the Marketing committee for the Missouri Wine and Grape Board. In 2004, Patty was instrumental in forming the Hermann Wine Trail, a collaboration among six local wineries for the purpose of promoting and advertising the Hermann area wine country. She currently serves as president of that organization. Sharon Kegerreis and Lorri Hathaway Writers Sharon Kegerreis and Lorri Hathaway are passionate for Michigan wines, agriculture and destinations. In 2009, they delved into the history of Michigan s wine industry and discovered that Michigan winemakers of the 1800s share the same drive and spirit as winemakers today. Authors of the 2008 Michigan Notable Book, From the Vine: Exploring Michigan Wineries and of Sharon and Lorri are looking forward to publishing more articles and books that promote our maritime Great Lakes state. Maureen Michaels Media Planner and Public Relations Manager, Oneupweb With extensive experience in advertising, marketing and media relations, Maureen plays a key role in Oneupweb s overall communications and strategic growth. Drawing on her experience as a professional journalist and former copywriter for a leading advertising agency, she is instrumental in helping to develop both Oneupweb and client display advertising campaigns. Maureen also leads Oneupweb s social media and public relations efforts and counsels Oneupweb s clients on viral marketing. Maureen holds an MA in Creative Writing from Kingston University and a BA in Journalism from Grand Valley State University.

11 Bill Nelson President, WineAmerica After a decade of service as Vice-President of WineAmerica, the National Association of American Wineries, Bill Nelson was appointed President of WineAmerica, in September Prior to joining WineAmerica in 1994, he served as a lobbyist for the wine industry, Executive-Director of the Oregon Winegrowers Association and as a winemaking consultant for Oregon wineries for almost 20 years. Since the 1980s, Bill has been very active in the battle to provide direct shipping rights for American wineries, first working on the concept of reciprocal shipping laws during his days as lobbyist for the Oregon Winegrowers Association, and most recently in coordinating and drafting the national winery brief for the successful Supreme Court challenge. Bill has also devoted much of his career to building the research capabilities of the American wine and grape industry and serves on the board of the National Grape and Wine Initiative. Bill holds a Ph.D. in Biophysics from the University of Pennsylvania. Trent Preszler Trent Preszler is Chief Operating Officer at Bedell Cellars on Long Island and he currently serves on the Board of Directors of the New York Wine & Grape Foundation and WineAmerica. During the Clinton Administration, Trent was an intern at The White House Office of Science & Technology Policy and a research associate at the National Institutes of Health. He holds a B.S. from Iowa State University, a M.Dipl. in botany from The University of Edinburgh and Royal Botanic Gardens (U.K.), and an M.S. in agricultural economics from Cornell University. He is also a full-time Ph.D. student and instructor in the Viticulture program at Cornell University, where he teaches a course called Wine Culture and his research is related to the effects of grapevine cropload on wine flavor chemistry and economic sustainability. Vicky Scharlau Executive Director, Washington Association of Wine Grape Growers Vicky Scharlau has nearly 30 years of agricultural organization management experience and has developed a reputation as a strategist, manager and communications expert at a national level. Her skills include strategic planning, project management, meeting and process facilitation, project budgeting, marketing, and crisis communications. She has received numerous national communications awards and was instrumental in developing an international strategy for Washington s apple industry during the Alar crisis. Scharlau has held the position of Executive Director of the Washington Association of Wine Grape Growers since 1999 and holds the same position with the Washington Wine Industry Foundation. The Association advocates for the business interests of Washington wine growers. Gordon Specht Gordon Specht joined Lallemand in 1995 as the North American Area Manager for the Fermented Beverage Division. Before coming on board at Lallemand, Gordon worked in the wine industry for 11 years at Scott Laboratories doing everything from lab analysis, product research and development, quality control, cork plant manager and technical products management. Gordon obtained a B.S. in Food Science from the Pennsylvania State University with an independent study of malo-lactic bacteria under Professor Robert Beelman.
