SECURITY & CASH HANDLING Reduce the risk of handling cash, making mistakes with change and internal theft by using snack stand coupons. Sell them at a separate table to minimize confusion. Conduct background checks on the parties responsible for the snack stand. Conduct surprise audits of the snack stand operations including purchases, deposits and daily sales. Snack stands are often broken into taking everything including equipment, food and supplies. Keep inventory levels low. MENU & PRICING More is not necessarily better. SNACK STAND MANAGEMENT Keep a binder of daily sales, purchases, spoils and an item cost list. Document weather conditions and peak business times since both can greatly impact sales. Consider security and spoilage factors when keeping inventory. In addition to possible theft, high temperatures adversely impact many items.
