The project was entitled Guide to Teaching High Enrollment Courses and outlined suggested ways to evaluate and present material to courses with enrollment higher than 100 students. Food Sanitation primary lecturer - Primary lecturer and am required to prepare lectures and create and grade assessments and any assignments given within the course. - Additionally, I am expected to record and monitor grades as well as provide weekly office hours and tutor students as necessary. My current research focuses on analysis of current and new intervention strategies to aid in the reduction of E. coli O157:H7, non-o157 STECs, and Salmonella in live cattle and beef, while maintaining research efforts in pathogen reduction strategies in the produce industry. Additionally, I have worked extensively within the poultry industry to establish new food safety intervention strategies against Salmonella and Campylobacter jejuni and with the swine industry with Salmonella interventions. My newest research endeavor is working with local wound care clinics, nursing homes and sports facility to establish a new intervention strategy against MRSA.
