This poster was originay presented at the MBAA 112th Anniversary Convention, Keystone, Coorado, SNTiSS Cooida stabiization of beer can be addressed in terms of removing either or both the participating components in the haze formation, i.e., haze-active proine-rich proteins and tannoids and the poypheno precursors in the formation of tannoids. It is a we-estabished practice to use siica ge with high adsorptive capacity for the remova of proteins and cross-inked poyvinypyrroidone (PVPP), Poycar@, for the remova of tannoids, favanos and monomeric and poymeric poyphenos. It is aso a common practice in breweries to use either siica ge or PVPP for cooida stabiization depending upon the beer matrix. This composite of Xeroge and PVPP, Poycaf, produced synergy in the remova of both proteins and poyphenos and produced beer with an enhanced shef ife. This resut was evident in the P ant scae trias wi th a Germ an Pisner and an American Lager from a microbrewery. Combination treatment aso showed considerabe improvement in transferabiity of the adsorbents, and beer fitration was observed to be more efficient. Experimenta resuts of these tria.s wi be provided. A working mode to expain the advantages of the combined treatment and the source of synergy wi 1 aso be discussed. Se encontro que aunque parecian incompatibes, e xeroge de ata absorcion y e PVPP, Poycar@, pueden ser usados en combination, ya sea secuenciamente o concurrentemente para producir cerveza con una estabiizacion cooida superior. Este compuesto de xeroge y PVPP, Poycar@, produjo sinergia en a eimination de tanto proteinas, coma poifenoes y produjo una cerveza con una vida de estante mejorada. Este resutado fue evidente en prueba.s que se evaron a cabo en pantas con una Pisner Aemana y una Lager Americana provenientes de una micro cerveceria. E tratamiento de combination tambien mostro una mejoria considerabe en a capacidad de transferencia de 10s absorbentes y se observe que a fitration de a cerveza fue mas eficiente. Se proveer& 10s resutados experimentaes de estas pruebas. Tambien se discutirh un modeo de trabajo para expicar as ventajas de1 tratamiento combinado y a fuente de energia. NTRDUCTN Mustafa Rehmanji has over 20 years experience in the mating and brewing industries. He is a Senior Research Chemist with Internationa Speciaty Products. His current interests are in the areas of beer stabiization and technica service for commercia treatment of beverages. Mustafa started his brewing career with Kenya Breweries. Later he moved to Canada and was Director of Technica Service with Prairie Mat Ltd. Mustafa has a BSc. in Chemistry, a Business degree, and a Dipoma in Brewing Technoogy. It is found that the seemingy incompatibe xeroge and PVPP (PoycaF) can be used as a composite to produce beer with superior cooida stabiization. The composite of seected xeroge and micronized PVPP gave synergy in the adsorption of both proteins and poyphenos and

2 produced beer with an enhanced shef ife. In addition, it showed improved transferabiity of the adsorbent to the beer and exhibited an efficiency in the fiter runs in the brewery. These arger partices do not compact easiy. This non-compaction gave improved fiter runs in the brewery. At the same time, the adsorption of poypheno or protein was not affected.
