1 PRODUCT APPLICATION AND INTENDED USE D/SP/CRYGINGER - Issue 1 - Page 1/5 September Approved: TVA PRODUCT SPECIFICATION CRYSTALLISED GINGER For all Dice Sizes, Cubes, Slices, Sticks & Balls COUNTRY OF ORIGIN CHINA Food supplied as an ingredient for use in further manufacturing or processing. PRODUCT DESCRIPTION Raw ginger rhyzomes are trimmed, peeled, manually cut, graded and cooked. The ginger is exposed and cured at various sugar syrup concentration until the equilibrium is reached for preservation. The preserved ginger is drained of excess syrup and pasteurized in high brix syrup. The hot ginger is than drained, coated with caster sugar, heat dried, cooled and stored in a temperature and humidity controlled room. The crystallized ginger is then sieved to remove any excess sugar and then packed according to customer requirement. Extension to best before date can be given subject to inspection by manufacturer s representative. Shelf life after opening depends on the environment, so is not clearly definable. Recommended environment is a dry environment (but not so dry as to allow the moisture in the ginger to evaporate and allow the ginger to become hard) between 6-25 C, out of direct sunlight.
