3 CONFISERIE DU ROY RENÉ J.C. DAVID Provençal perfection To the candy connoisseur, divinely soft Provençal nougat caramelised with honey, almonds, or crystallised fruit is the crème de la confectionery crème. Add a calisson (a traditional French sweet consisting of iced almond and fruit paste) or two and you ve the perfect way to satisfy any sugar craving. Confiserie du Roy René conjures up these authentic, gourmet Provençal treats just as they would have in 1920, when the confectioner first opened up shop. Now managed by the third generation of the family, Roy René is renowned for its all-round candy competence, from its rigorous selection of raw materials to its faithful use of ancestral recipes. No bigger smoked fish to fry Next time you re planning on cooking up a hearty chowder or perhaps a comforting kedgeree, fish out J.C. David, the Boulogne-sur-Mer-based devotee of the ancient art of smoking. The producer s generations-old technique has earned its smoked fish recognition in France as the Rolex of herring. The delicious combination of fire, smoke and salted fish is one of the oldest ways of preserving both the protein in fish and imparting its flavour, and J.C. David has mastered its craft over 40 years. Following a natural, handcrafted method, it uses genuine woodfired ovens to give its fish the most delicate taste and the smoothest texture. 4 MAISON FOSSIER THIERCELIN Smart French cookies The fact that members of 18th-century royal courts such as Louis XVI enjoyed dipping the Pink Biscuit of Reims in Champagne might seem surprising, but French gourmets of all standing have long been fans of the humble teatime accompaniment. Fortunately they ve had Maison Fossier France s oldest biscuit factory supplying them with delicious bites, incorporating fine ingredients and the know-how of master bakers passed down since the company was established in Combining the good tastes of past times with today s fanciful flavours, Fossier offers sweettoothed treats, including crunchy croquignoles, melt-in-the-mouth macaroons and buttery puff pastry palmiers. Thiercelin is the spice of life Derived from the dried stamen of a particular variety of crocus flower, saffron is the defining ingredient in some of the world s greatest dishes. It is also the most expensive spice in the world saffron stamen can only be picked by hand and 250,000 are needed to make just half a kilo. Fortunately, a little saffron goes a long way and, it has kept French spice supplier Thiercelin who set up the first laboratory for saffron quality control in business since Drawing on a host of unique saffron-infused recipes, the company has an international reputation for this much-loved golden yellow delicacy, as well as many other spices and condiments, including yuzu syrup and green apple mustard. MAISON DES SOEURS MACARONS Sweet little somethings When the French town of Nancy s Benedictine nuns hit hard times during the French Revolution they saw the light in macaroons, selling their secret recipe perfected over many years to support themselves through their shop Maison des Sœurs Macarons. Still famous for its mouthwatering macaroons, this old-world confectioner also specialises in bergamots, which are homemade, traditional hard candies that taste tantalisingly of Earl Grey tea. Both bring to life a 200-year-old Nancy heritage that attracts sweet-toothed aficionados from miles (and even countries) around.
