Nowadays, we are taking care of 49 acres of different grapes varieties contributing to the richness of our blends. The Aging of red wines is done in cement vats, wooden vats and French oak barrels, using around 20% new barrels every year, in order to keep a very fine progression of our wines during 9 to 18 months. Unswayed by trends and New World influences, the wines of Mas de Theyron have seductive qualities to be explored and appreciated. 16 toronto calgary VancouVer french wine connection canada 2012 17

At any time in history, each generation has to grant its contribution to the know-how of the profession. My vines are established on parcels of sand intermingled with gravel. Their orientation makes it possible to benefit from ideal sunlight. The combination of these natural elements provides an excellent maturation of the grape. I established myself in an old entirely restored Berrichonne farm. It s here, in these grounds full of history, where my major concern is to produce a great quality wine that will best reveal the nature of my domain. From its idyllic hilltop situation the estate overlooks the countryside and more specifically the village of Visan which used to be a Papal territory. Coste Chaude is an estate of 88 acres, of which 54 acres is composed of vineyards. Grenache is the main varietal which provides a rich, fleshy and rounded off taste followed by Syrah for color. Production level is voluntarily restricted. Coste Chaude is converting to organic production. Grape harvesting takes place towards the end of September. The grapes are manually sorted and the alcoholic fermentation lasts between 10 and 20 days under controlled temperature. Then, the wines are elevated either in concrete vats or in oak barrels. 1. The estate is located in the village of Cogny in South Beaujolais. This zone is known as the land of the golden stones due to the color of the omnipresent sandstone also used for the construction of the cellar itself. In 2008 the Luxembourg citizen and great wine enthusiast Bernd Bachhausen and his wife Marie bought the estate and decided to bring it back to its former fame. From bud-break to harvest the grapes are strongly influenced by the often changing weather. All vineyards are carefully tended by hand and this enables reaching full maturity and great quality throughout the different parcels. As a part of the organic viticulture practices, aiming to limit the amount of chemicals needed, the space in-between the rows of vines is covered by cover crops to ensure appropriate water and nutrient competition. The clear goal is to produce well-structured and long lived wines expressing the identity of the terroir they come from. Harvesting intact grapes enables us to obtain the best possible extraction of flavor compounds. 1. My father Robert, Paul s successor, chose to diversify the activities and became vine grower. When I took my place in the company I chose to make my own wine and that s why I built the cellar and became Wine grower in 2002. At the beginning, I was producing only AOC Vacqueyras. Today we also produce AOC Côtes-du-Rhône, AOC Côtes-du-Rhône Villages and local wines. We have got 116 acres with 15 different vintages. All these years we have been practicing reasoned agriculture but the coming year we will start producing organic wines, which is one of our main goals. 40 toronto calgary VancouVer french wine connection canada 2012 41
