Catering and Hospitality Apprenticeships Hospitality Service This Apprenticeship is ideal for those who work in a café, small catering outlet or takeaway. The Apprenticeship covers a wide range of units including: providing a counter and takeaway service, serve food at the table, resolve customer service problems, maintain and deal with payments. Food and Beverage Service Within this Apprenticeship you will become skilled at serving food to a table, providing silver service, serving alcoholic drinks, preparing and serving cocktails, maintaining cellars and kegs, maintaining and dealing with payments. Food Service The Food Service Apprenticeship will provide opportunities to learn how to give good customer service, maintain food safety when storing, holding and serving food, how to prepare and clear areas for table service, serve food at the table, and provide a silver service. Beverage Service You will develop your skills in a number of areas including; serving alcoholic drinks, preparing soft drinks, serving wines, preparing cocktails, creating hot beverages, preparing and cleaning the bar area, delivering customer service excellence. Food Production and Cooking The Diploma in Food Production and Cooking covers a wide range of skills, including; producing basic fish, meat, poultry, or vegetable dishes, producing basic hot sauces, rice, or pasta, producing basic bread and dough products, cakes, sponges and scones, promoting new menu items, and setting up and closing a kitchen. Professional Cookery The Diploma in Professional Cookery will develop vital skills in food safety and hygiene and teamwork as well as choosing from a range of practical options - anything from cooking shellfish dishes to developing menus.

Kitchen Services The Level 2 NVQ Diploma in Kitchen Services is designed for learners working in, or who are seeking to start a career in, kitchen services. It is aimed at chefs who may be cooking and reheating food that is bought in and that requires little or no preparation. Housekeeping This Diploma in Housekeeping will cover, cleaning and making up rooms, checking equipment, collecting linen and laundry, setting up meeting/conference rooms, dealing with customer complaints. Level 3 Diploma in Professional Cookery With the Level 3 qualification you will develop technical skills and knowledge covering high level aspects such as advanced butchery, fish, game and also develop contemporary styles of presentation. Duration: 17 months Level 3 Diploma in Hospitality Supervision and Leadership The qualification covers leadership, customer service, resource control, and incudes a range of additional units including: food production, food service, drinks service, management of functions, housekeeping, portering and concierge, reception and reservations and bookings, as well as generic management responsibilities. Duration: 17 months As part of the framework, learners will also study key skills and employer rights and responsibilities and will receive further knowledge and understanding to complete their jobs effectively. Learning is flexible. Level 2 programmes require one day per week college attendance. Level 3 programmes are delivered entirely in the workplace.

Short Courses A Unique Opportunity Your employees can gain additional skills with bespoke short courses. These courses can be delivered at your premises or at our town centre training facilities. Come cook with the Professionals This course is aimed at anyone who has an interest in cookery and would like to broaden their understanding of fine dining. The course will be mainly a practical application of skills. Duration: 1 Day Food Safety in Catering Level 2 CIEH The Level 2 Food Safety qualification is designed for anyone working in a catering, manufacturing or retail environment where food is prepared, cooked and handled. Procedures and skills gained on this course will be of use in the workplace and at home. Duration: 1 day or 1 evening for 2 weeks Award for Personal Licence Holders (APLH Level 2) This qualification is compulsory for individuals who are planning to enter the licensed retail sector. The course is awarded by the BIIAB, a professional body for the licensed retail sector. Topics include: Roles, legal responsibilities and functions of licensing authorities, the application process, the content and purpose of operating schedules, the rule and duties of the designated premises supervisor, the specific prohibitions for the sale of alcohol, the strengths of alcoholic drinks. Duration: 1 Day
