3 Food Everyone who works with food has a responsibility to ensure that the food they serve or sell is safe to eat. Food safety regulations require all food handlers to be trained (or supervised and instructed) in food hygiene matters to a suitable level. This training is also an essential part of a due diligence defence. During food hygiene visits Environmental Health Officers check that there is always someone on site with at least a level 2 (or equivalent) qualification. They also ensure all staff working with food have a basic understanding of food hygiene. Their findings can affect the national Food Hygiene Rating Scheme score which is displayed to the public. All our food safety courses can be tailored to catering, manufacturing, or retail environments, with specific course handbooks and test papers for each. 3
